How does one even begin? I started by googling food trucks and catering and blasting everyone near me with emails. Mary was the first to respond, and she was faaaast. I told her our needs and budget and she was well within my parameters. I had a couple of other truck operators call while I was speaking with her, but between her friendliness and responsiveness - the fact that they had a vegetarian sandwich they could offer (beyond lettuce on a bun like most food trucks), and the reviews, I quickly decided to book them. My expectations weren't super high because I have been disappointed in the past, but they showed up on time, prepped, and were ready to rock at "go time." Their setup was fantastic. Service was organized and they were popping out meals left and right. Most importantly, though - the food was freaking fantastic! So good, in fact, that I want to find them in the wild so I can try their other menu items. ( our company footed the bill so we had limited options.). If you need a food truck for a party, company event, or gathering - do not hesitate to call them. If you see them set up somewhere, give them a try. You will NOT regret it. I would give them 10 stars if I could. And I'm saving their number in case we get the chance to use them again!

It was good to see another Yelp Elite member mentioned how amazing the tacos are. Tacos Pachuco is the real deal. We ordered a pastor taco, asada taco, and an asada quesadilla. The corn tortillas for the tacos were warm and perfect, both meats were so tasty (really loved the flavor of the pastor), the grilled onions and jalapeno was the perfect touch, and bonus points for two salsas that pack just enough heat. The quesadilla had some amazing gooey cheese, plenty of asada, and also came with the two great salsas. Can't wait to go back to try more tacos and the torta too. Cheaper than chipotle and as big as your face, all wrapped in a FRESH tortilla with grilled cheese. I've ordered both Steak and Birria Burritos. Although I didn't care for the quality of the steak, I did prefer the ratio of ingredients with the steak as opposed to the birria. Birria had better flavor but the quantity of meat (also a plus) overpowered the rest of the delicious ingredients. That said, I'd choose the steak again next time. Just ate it yesterday and already craving another! Thank you, Ana, for your delicious food and wonderful hospitality!
