We also got the raw oyster platter with a few from different coasts, and Matt gave us the full rundown of where each one could be traced to and what the differences were generally. I didn't have a huge appetite so after the appetizer, I decided to have another appetizer as my meal. He recommended the halibut cheek, mentioning it was a more tender cut, and boy This was the highlight dish of my month. Not only was the fish so fresh and tender and delicious but the sauce it came in was so unique and breathtaking. It was creamy, but not too much so and had the perfect balance of flavors.
