The crisp tortillas underneath also held up really well to each bite; I'm so used to tostadas shattering upon first taste but the structural integrity of Hugo's were super impressive. For our main we split the fish of the day, which was seared Hokkaido scallop atop a bed of corn risotto. This also came pre-split into two bowls so we didn't have to do it ourselves, which was a super nice touch. The scallops were cooked to perfection, super soft and tender with an incredible crust, and the corn risotto was super creamy and savory.
