This was such an unexpectedly good Thai restaurant to find in a small town. Everything was so fresh and made so well. The fried shrimp was light as it was fried in wonton wrappers instead of breading-absolutely delicious! It's a walk up counter with friendly staff waiting to greet you. They don't have a wide variety of sauces but their spicy sauce was delicious. We ordered a fried rice and some appetizers and wolfed them down. Honestly, the fried tofu was done SO perfectly. I'm used to it being a bit dry or rubbery but this melted in my mouth! Be prepared to walk in and grab a menu and your own glass of water and utensils, a waiter will bring you any specialty drinks. I had a couple of hours for lunch so I went to check out the farmer's market, which was small and I didn't see anything, so walking back, I stopped in here to pick up lunch. Cute little place and Thai food is one of my comfort foods when I'm in San Diego, and the reviews were good. I ordered my favorites. The fresh spring rolls with shrimp were perfect! Loved the peanut sauce! I've started eating panang curry with beef instead of chicken and the one here is really good! And of course, I had to have my pad thai with chicken...sooooo good! The portions are great and I was able to eat the rest for dinner later that day....it was that good! I think the owner helped me, and he was very friendly and I got a smile from I think the chef. My mom and I came here on a whim since we were craving Thai food -- service did not disappoint! I will say it was fairly busy around 4:30pm, but we decided to dine in because we parked pretty far away. It was loud so I would recommend take out, but the noise wasn't unbearable! Pad Thai was great, no complaints. The yellow curry was also great, but I will say it's just a little soupy / not as spicy as I thought it would be. They have a spicy sauce to use at their tables though! I would still definitely order it again. We waited about 10-15 mins for our food, but I do think it would've been a sliiightly longer wait for takeout just from the sheer amount of calls they received. I think I'll be back at some point! Just had lunch at this little spot and wanted to warn others that the food was very mediocre. You never know about a place until you try it....well I would never again. Started with a Thai Tea and the Tom Kha Gai soup. The flavor profile was OK but the broth was really thin, not enough coconut milk was added and there were just a few mushrooms and tomato pieces floating in the soup. The chicken was rubbery as well. Next was an order of Pad Thai. Again the dish was served with very few ingredients. The bean sprouts and carrots were placed on the side of the noodles as were the peanuts. This is traditionally how the dish is presented but honestly I was shocked at the tiny portions of these ingredients. They were barely noticeable! I ordered pork as the protein and regretted it immediately. The texture and taste was off, so I tried to make the most of it by pushing all the meat to the side of the plate. I suspect this spot might be having a hard go of it as even the side sauces, which are normally thick at every Thai place I have ever eaten at were thin and runny. On a positive note the two ladies running the place very sweet. Oh, and did I mention my lunch was $32.00! Yeah, kind of expected more. read more

We were very Happy with Mam's Thai! For "to go" especially, this is our new favorite Thai food in town. We ate in the limited seating area. Staff was very friendly. The Mam's Special Pineapple Fried Rice was incredibly tasty; slightly sweet but with a good umami base flavor. We also enjoyed fried shrimp, pumpkin curry, and pad Thai, which were all delicious and devoured rapidly. It is nice to have some more affordable options downtown (like this place), which is a good change of pace from the other more common and more formal table service dining options. As a local, I really do want to support our local restaurants. But, my first dining experience at Happy Thai Express was truly disappointing. My chicken Pad Thai was downright awful. It was over-sauced, and the sauce was extremely thick - as if thickened by corn starch. Hardly any chicken in it, and there was even tofu mixed in. I ordered it medium spicy, and it was almost too spicy to eat. Had I not been in a rush, I would have had them remake it. Yuan Yuan's (Chinese restaurant near Shop N Kart) Pad Thai is so much better than Happy Thai Express's dish. I upped my rating from 1 to 2 stars, as the food took less than 10 minutes to prepare and the order taker was very nice. read more

First, an ode to the forever shuttered House of Thai. They served us some amazing food over many years. We will miss them. But losing them caused us cast our net wider, and in so doing we've happily found Mam's Happy Thai Express. The Pad Thai was amazingly flavorful and the portion was perfectly sized. I didn't leave a crumb or a drop of sauce on the plate, and found myself completely sated when we finished. My dinner partner had the Pad See Ew. She was just as impressed as I was. Ate dinner here with the family while stopping in Ashland on the way to Portland. We ordered green curry, panang curry, basil stir fry, and sticky rice with pineapple (mangos were not available). Overall, pleasant experience, main course dishes were tasty and flavorful. Dessert was decent but sticky rice was somewhat firm and undercooked. The main reason for downgrading a star was that the portions were small for the price. The curries are priced at around $15 per bowl but the portion size is about what I would expect to pay $12 for in other comparable Thai restaurants and that was not well communicated by the staff when I asked the question about portion size before ordering. How can I explain how wonderful Mam's Happy Thai is? Well, the food is AMAZING. The service is friendly and warm. The place is soooo clean. It is our favorite eatery in Ashland. We eat there at least once a week. The prices are really reasonable. The main cook is Mam. She is assisted by her husband Peter and daughter and mother. It is really a family affair. I am gluten free and shrimp free. I do wish they had more gluten free fried goodness. They gladly accommodate recipes for me. We usually get the Drunken Noodles and the Cashew Chicken. All conversation subsides as every bite is delicious pleasure. You can tell the food is attended to with love and care. You can taste the integrity and intention. I trust their attention to detail. The atmosphere is friendly and super welcoming and clean. It is small, so sometimes we order then walk around downtown for 15 minutes while a table clears. It is so worth it. This is the best Thai food anywhere! I drive 2 hrs and 20 mins one way just to get the pad Thai. So many things on the menu are delicious! The owner is very nice and she is a fantastic chef. Anytime I have visitors in Redding we drive all the way here to get the best Thai food. We arrived in Ashland on our roadtrip just before 9pm and rushed in just before they were closing to do takeout. Despite it being so late, they were extremely polite and welcoming, even telling us we were welcome to eat our takeout food in their seating area. We ordered the chicken satay, crispy tofu, and pumpkin wild salmon curry. The food came out quickly, and everything was so thoughtfully packed and presented well despite being takeout.
