Holy cow! Caught their truck randomly around lunch time in Costa Mesa and I was not disappointed. I ordered the pork belly pancake, spicy dumplings, and a cookie. This was the best lunch I've had in awhile. The guy working was beyond nice. If anywhere Mad Dumplings goes I will follow.
I had the longanisa dumplings and it didn't have the toppings (shishito peppers) as advertised. I'm not sure If they changed the recipe of the longanisa because the filling was more of a tannish color and not the bright red like it should be. It also tasted more bland The rice was very oily and had very little meat. $10 for the rice and $10 for 6 dumplings. It was overpriced and the quality did not make up for it. I also got the pork belly rice and it was flavorless, it just tasted like it was boiled in tap water. The service was alright though.
Had the truck at Downtown Disney. Would give it like a 3.75 -- super inventive so points for that but kind of mixed execution. Still yummy!! Fried chicken dumpling was SO GOOD!!!!! It was cheesy, chicken-y, and dough-y thanks to the dumpling wrapper. Longanisa was ??, it had a too-chewy wrapper and I didn't taste the jalapeños? but it was red inside, bonus points Overall not bad but other great Asian options exist in the area! But also for the price....great
In January, we enjoyed the vintage dumplings and the pork belly rice bowl from the truck. Now, the bowl from the truck tastes like the bowl from the restaurant, in a more Chinese style.

The " soy sauce " he gave me for dipping just taste like oil. The meat inside had no Flavor at all. One side was very crispy but the other side was gummy and not dumpling gummy like under cooked gummy. The bulgogi bowl wasn't much better. They put a spicy mayo on top which completely ruined the bowl. It doesn't taste good with the mayo on it. The meat itself was over cooked and under seasoned. Some parts of the meat was so over cooked it was crispy. The rice was probably the best tasting thing. It had a nice little flavor to it, but the rest was a big no no. Sorry not sorry I don't think I would be returning to this place. Updated: they tried to remove this remove. Listen the dumplings are not good at all.
Went to Radiant Brewery in Anaheim, got to try the Mad Dumplings food truck. The Longaniza dumplings were perfect, juicy and sweet. The vintage dumplings lived up to its name but with a modern twist. Would definitely get these dumplings again. Their service was A +.
Overall- really impressive. From food to menu to service. Ordering- ordered at kiosk outside the food truck. It was okay, but I'm old school and enjoy the person to person ordering process. Service- picking up was a little harder than the guac n roll since we have to wait at the window. So this could be improved perhaps with a buzzer. HOWEVER, the nice girl gave us a free bulgogi over rice because of some confusion so we walked away SUPER HAPPY! :D Food: 3.5/5 Fried Chicken dumplings- it's super awesome, crunchy outside, juicy chicken inside. The only improvement I would suggest is the sauce is a little bland and the Mac with chicken is also low flavor so a more flavorful sauce with some citrus, and maybe spice. The original dumplings- 6/5 so SO good. Hand folded to order, juicy and fresh steaming hot. Sauce is perfect. Super recommended.

I got to order their fried chicken dumpling and bulgogi waffle fries. My goodness! These choices were DELICIOUS! Food was a bit heavy because it was mostly deep-fried. Nonetheless, saucing and marination of bulgogi were on point! If you ever see this food truck in your area, please try !
Food truck that sets up at two different spots in Santa Ana each week. Dinner hours only, which isn't ideal. Supposedly 10% off if you order through Yelp, but we didn't do that because they advertised 33% off their dumplings on their insta story. Look for a code every Thursday there! They forgot to list a code yesterday and we ended up paying full price, but the business gave us a partial refund after I pointed out the error. We tried the fried chicken dumplings, longanisa dumplings (pork) and bulgogi waffle fries. Everything was good, but they forgot the sauce to go with the longanisa dumplings, so that was a let down. What we got was enough to fill my wife and I, but we weren't stuffed by any means. It was around $38 at full price, but it's pretty typical for food trucks to charge an arm and a leg, so we knew what we were getting into there.

I've actually had this food truck a while back at a nearby food truck meet. I was curious about the longanisa dumplings that were supposedly Andrew zimmermans favorite. And I remember being wowed by the unique tastiness. Fast forward a few years and I got to try it again at a work event. Longanisa dumplings were as good as I remember. It was missing the pork belly slices that usually comes with it but maybe it's because it was a work event thing. I got to try something new: the fried chicken dumplings. I didn't know what to expect, but it's literally fried like chicken lol. Comes with lime and a creamy aioli like dipping sauce. It tastes like Costco chicken bake and I mean that in a good way! It is heavy though so it's very filling. The combo came with a choice of rice bowl and I chose the bulgogi one. It was good but nothing special. I think it makes a great lunch. Can't go wrong with dumplings!
Found Mad Dumplings at the OC great park farmers market (you can order and eat in your car so it's still social distancing PLUS you can support your local food trucks) FUSION dumplings and more! If you order the combos you get half servings so you can try more items ---fried chicken dumplings: wow crispy corn flake crust! The chicken was super juicy ---mac n cheese dumplings: also nice crispy outer skin, goes great with hot sauce ---longanisa dumplings: a little savory and sweet! ---vintage dumplings: probably the closest to the traditional Chinese dumpling, Nice to have classics mixed in ---bulgogi waffle fries: meat had a good flavor and went well with the waffle fries and jalapenos ---pork belly rice: not too fatty! I went to Brewery X this past weekend and the wait was 1.5 hours to get seated. I was ready to just call it a night and go home cause it was freezing and I did not want to wait 1.5 hours. The saving grace? My friend saw Mad Dumplings was there and has been dying to try it...so we waited. As soon as we got seated at our table, we ran over to Mad Dumplings. It was 9:00 p.m. and they were scheduled to be there until 11:30 p.m. that night. We were one of the last parties to get served, because they ran out of food. I suppose that is a good sign? We ordered the Combo Deal - select any 2 menu items (can select the same item twice) for $12. We got the Longanisa dumplings and the fried chicken dumplings. The Longanisa dumpling was filled with pork sausage and it came with a hot sauce. It was delicious! The fried chicken dumpling included pepperjack cheese and was a tasty American twist to dumplings. We also got the bulgogi rice bowl for $11, which was reasonable given the portion size. I would definitely eat at Mad Dumplings again. Would I wait another 1.5 hours next time? Probably, but I will most likely bring a blanket. Also, their food is made fresh to order so it does take some time for your order to be prepared.

Saw this food truck while at the rose parade floatfest. Although I forgot to take a photo of the food I ordered, it came out fairly quickly after ordering and was quite good. I ordered the Hottie and a bulgogi rice bowl. My kid enjoyed the rice bowl as well! read more
Very popular but mildly disappointed. Decent vegetarian option. Filled with fried tofu, cucumbers, and cilantro, and served with a soy/Ponzu? Sauce. It was fresh but overall Basic flavors and was hoping for more taste. Wish they had the beyond dumpling in stock or at least another veggie friendly option. read more

Yum! This food truck was an option at Brewery X this weekend and did not disappoint! They had the longest line there and you could see why after trying their food! I got the combo for $12, which was perfectly priced considering what the other trucks were serving and their portions. Quick service! Great food! And very efficient with COVID going on! Give them a try :) read more
Finally, I got to try them in Irvine's location for lunch. It was a long line there but moved really fast. We ordered the dumplings and bulgogi waffle fries, Omg... Everything tastes so good!! The huge portion at a reasonable price and great customer service left us a great experience. I definitely will back to try the other items on their menu. Also, I really like their combined concept of Asian fusion food and American food! Pretty cool!! read more

On this particular trip to Disneyland, my friend had scouted out Mad Dumplings as a place she wanted to try after seeing some amazing Instagram posts! Since it was a food truck parked at Downtown Disney, had to try it before the truck moved somewhere else. I ordered the Longanisa dumplings and bulgogi waffle fries, which my friends ordered The Mac dumplings and their own bulgogi waffle fries. It's been a LONG time since I've had longanisa and I wasn't really sure what to expect with it fused as a dumpling...but it simply WORKS. I can see why this is the most popular dumpling and an award winner! They do not skimp on the food at all, and that goes for both the dumplings and fries. I was pretty satisfied with my food here. It also helps that the food is significantly cheaper than anything I could've found at the theme parks or Downtown Disney. Service here was great! Food came out quickly after we ordered. No complains on my end. Another nice thing about their location at Downtown Disney...it's right next to the monorail which takes you right to Tomorrowland. So you don't even have to walk that far to get here if you're already at Disneyland! Kinda wish Mad Dumplings were always here since the food at Disneyland is generally overpriced and unfulfilling. Next time, I don't think I would order both dumplings and fries at the same time...food coma was definitely difficult to deal with! read more
One of my favorite food trucks in Orange County! They have had quite a stint at Downtown Disney, but recently I found them at Brewery X. This is the perfect food to pair with some delicious beers. They are known for their dumplings, so you have to try these when you come here! They have 4 different kinds, Longanisa, Fried Chicken, Turkey and Mac & Cheese, My favorite is the Longanisa and Turkey dumplings. They also have loaded waffle fries and delicious rice combo bowls. Their combo bowls are definitely the way to go if you want value, they come with the bowl and dumplings of your choice (4pcs). I can't decide if I like the bulgogi or pork belly bowl more, so I usually get one of each. Everything is super affordable and filling so it's a great stop for some delicious food. Will definitely be back! read more

Yummmy dumplings! Everything was fantastic and they were super nice about my allergy concerns (vintage is dairy free and waffle fries shares fryer w other things that have dairy). Thought I ordered fried chicken and Longaniza combo but got vintage and longaniza so sadly I didn't get to try the fried chicken dumpling which looks amazing. The longaniza dumpling is truly amazing and if you like longaniza you will love it. The vintage is solid. Waffle fries are amazing. I'll def go back to get the fried chicken and Mac and cheese and some of the rice bowls. read more

I got their bulgogi tots during the 626 night market in Anaheim! Large portion for the price (about $10). Food came out quickly and tasted great. Only critique is that their bulgogi was cut a little too thin and kind of fell apart. read more

Such excellent array of crispy dumplings ranging from very crispy fried chicken dumplings, crispy mac n cheese dumplings, to longanisa dumplings, and Korean bulgogi over flavored rice! Everything was so unique and delicious! If i wasn't on some sort of diet, I'd grab the entire menu to pig out on. The customer service wad great. The crew was helpful in explaining their menu and brought the food out promptly after cooking. Cook time was pretty quick. Everything is made & cooked fresh to order. I will be back again! read more
Tried the vintage dumplings as a benchmark, but perhaps it isn't the right approach for a food truck as there a few other unique looking options. The vintage dumplings were standard issue, a little dry, and too oily. It's tough to compete with some of the "standard" dumplings served up around the OC. The other unique ones may be better, but didn't get around to trying them. read more
OMG!!!! some of the best dumplings I've ever had. Be patient because they make each order fresh to order. I tried the fried chicken dumplings and it was an amazing combination of juicy chicken and melty cheese in a crispy fried shell; also comes with a zesty dipping sauce. Will be back to try other flavors! read more
Located conveniently at the end of downtown Disney near the old ESPN center and diagonally across from earl of sandwich. I have to say, their menu looks amazing--from pork belly waffle fries to fried Mac n cheese, it's definitely a treat yo self after walking 6 miles at Disneyland!! We decided to get the pork belly fries and helped ourselves to some hot sauce located on the side. The guy who took our order was super nice (& don't forget to use their yelp check in for 10% off)! The food came out fairly quickly and it was a good amount considering inflated Disney/food truck prices. I was really hungry and couldn't even finish 50% of it. Everything is really heavy. I wasn't so keen on the cilantro mayo they had on there and the fries were a little too oily, but overall it was a unique take on loaded fries. I low key thought the pork belly would be like chashu shaped (so more like cubes) but these were like gyros so that surprised me a bit--it was also a little dry so lots of hot sauce! TLDR: food was average, servers were really nice. Great concept, and definitely better tasting with hot sauce! read more
The only reason why this place isn't getting a five stars is because of the price, $10 for 6 dumplings is a little pricey. But it was so worth it! The longanisa dumplings were better than the fried chicken in my opinion! Both are great choices. You can buy two orders of dumplings to validate your parking - the only reason why we wanted to try this place ha. Service is fast and there was no line when we got there so the food came out pretty fast. read more

I was so excited to try this food truck. I was disappointed in the customer service. I asked for recommendations and about the sauces. The employee who helped me was less than enthusiastic to answer my questions. When I was waiting for my number, I asked the same employee if my number had been called since I did not hear them calling out numbers and other people waiting for their food didn't hear numbers being called either, the employee answered they would let us know when our food was done (in an annoyed tone). When I went to get my order, the same employee handed me my order with an annoyed look. I ordered the longanisa and bulgogi rice in the combo deal. The beef in the rice bowl had a creamy spicy sauce that was delicious! I wanted more sauce when I was eating my food. The steak was tender and thinly sliced. The rice was plain for me, so I added sriracha. The longanisa dumplings are large. I was surprised with how big they were. I could only eat two with my rice bowl- which was a half order of rice bowl. The portion sizes of the food are not lacking in terms of size. The dumplings I was hoping would have more flavor than they did. There was a large amount of sausage in them. I poured a spicy sauce on them they had at the condiments table beside the food truck. This helped add flavor since the sauce was very tasty. read more
I have been wanting to try this food truck for so long and I finally got the chance to! The fried chicken dumplings were interesting to say the least but that longanisa dumpling was so good. The dumpling was so nice a chewy and the longanisa was different enough but also worked well. I would definitely get the spicy mayo sauce to dip the fried chicken dumpling! It really was fried chicken shaped into a dumpling and I wasn't mad but it was heavy understandably so. I definitely want to try out their other foods and dumplings! read more
