An equally impressive accolade is their name on the 2025 Michelin Guide. One more cool fact while I'm at it, they do all this working out of a trailer parked on the side of the highway! My BBQ homies and I arrived about an hour early to make sure we get everything we wanted to try as this place does sell out quick. Pro tips, bring your own seats and in our case, an umbrella for those quick spring shower. We came prepared with a cooler of adult beverages, but come to find out, we didn't even need it. This awesome place provides a huge cooler full of free beer while you wait! In the Texas sun, this is much appreciated. Right outside the trailer is where the magic happens in their huge offset and rotisserie smokers. The guys working have no issues if you want to take a closer look. Right before they opened up shop, they came around with a huge tray of brisket to sample. This got me even more excited to try the food. The staff working here were super friendly like at almost every other BBQ spot we have visited. Between everyone in our group, I think we did a pretty good job of getting almost everything on the menu minus the sandwiches or specialty items like loaded mac or brisket quesadillas. Four of us decided to go with their 'Lil Bit of Everythang!' platter which serves 5-7 people. Well it fed four of us very comfortably with leftovers to take home. This platter literally came with almost everything. We got 1/2 a pound each of brisket, pulled pork, pork ribs, pork belly burnt ends, and a chicken half, plus 2 links of sausage, and 1 link of boudin and 4 sides. They give you a number and wait patiently. Your only options to eat are taking your food to go or set up shop on one of their few picnic tables. No sitting until you eat and I noticed people respect that rule and it does allow for everyone to eat comfortably. I really liked everything we tried. The brisket was tender and it had a nice bark on it which had just the right amount of seasoning. The ribs were fall off the bone tender and delicious. The pork belly burnt ends were phenomenal and one of my favorite bites. I don't know what they glazed with, but it delicious. It had a sweet and savory taste to it. Chicken is something I usually skip on, but since it was on the platter I got to try it. It was good. It was nice and juicy and full of flavor. One thing I really judge a place on is their sausage. Rosemeyer does it right! I loved the sausage here. It was packed nice and tight and had a great snap to it. We tried both the mild and jalapeno cheese and both were good. The boudin was also very good. Comparable to some of the stuff I've tried in Louisiana. They have six side offerings of which we got 5. We tried charro beans, dill potato salad, mac & cheese, and two unique items like fideo and mama's green gumbo. I personally loved all their sides. I would get all of them again. The one everyone in our group was iffy about was the green gumbo. It was full of beans which threw everyone off, but I loved the flavor profile of this. I would come back for a tub of that and put it over some rice and call it a meal. To finish off the feast, I had to get the bread pudding. If it's on a menu, odds are I am going to get it. I am so glad we did because the bread pudding here was out of this world good. Probably one of the better bread puddings I have ever had. It came out warm and maintained it's heat. They also added these tasty candied pecans that was a perfect compliment to the custardy bread concoction. A scoop of vanilla ice cream would have been gold on top. Speaking of ice cream, they are supposed to have some amazing homemade ice cream here and the flavors rotate. How many BBQ dudes do you know that do that? We were full, but I will try it next time. Overall, Rosemeyer has moved to my top 5. This place was so so good. It's far from where I live but still very drivable when the craving hits. I will most definitely be back.
