We ordered the Sasquatch pizza both times, no debate needed, it's just that good. Consistently excellent, exactly what we remembered from the first visit. The place has a cozy, local hangout feel to it, the kind of spot that makes you want to settle in, and they've got live music out back which adds a nice bit of energy without overwhelming the conversation at your table. Staff here are genuinely friendly, and we ended up talking with two different people, our server and one of the bartenders, who both turned out to be from Jacksonville, same as us. Small world moments like that make a place feel less like a stop on the road and more like somewhere you belong for an evening. Great value for what you get, too. This is officially a return-trip tradition for us now. Five stars, no hesitation.

What can I say? This is as authentic Italian as you'll find almost anywhere in the U.S. outside of…read morereal Italian neighborhoods. I'd give it a 4.8 or 4.9 -- a perfect 5 is basically unobtainable in my book. Ristorante DellaSantina sits on the outskirts of Sevierville / Pigeon Forge, sort of behind Hollywood, perched on a small hillside along the road. It's unassuming. You could drive right past it. The interior is quaint and tastefully done -- simple and clean, the way an Italian restaurant should look. Our host was excellent. The place was a little backed up because some tables were still sitting and talking long after they finished dinner. Please be considerate of people waiting: take the conversation to the bar or head out so the next table can sit. Once we were seated, service moved fast. The staff zipped around with purpose. Appetizers came out quickly, and the entrees were virtually right behind them. The longest wait was the fresh-cut fries -- and they were shockingly worth it. The food is outstanding. Italian cooking varies by city and region, so flavor profiles differ. We started with a salad and the meatballs (get the meatballs). We both ordered chicken Parmesan. My wife had Bolognese on the pasta and tomato-basil on the chicken; I had Bolognese on both. Coming from a heavily Italian area for 60+ years, I've eaten a lot of home-cooked and restaurant Italian. These sauces were perfect to me -- barely acidic, well balanced with herbs, not the sweet style some people prefer. They walk a very fine line. Everything tasted fresh. No commercial junk. Salad was excellent with a great Italian dressing. The meatballs are as good as you'll likely ever get in a restaurant -- maybe even at home. The hand-cut fries were a huge pile (had to be three potatoes) with a slight exterior crisp and an interior like butter. The chicken Parmesan was the best version I've had in 40+ years. My wife loved hers too, even though she usually prefers a slightly sweeter Bolognese. Both plates came with rigatoni cooked al dente. No dessert at the table -- we were already exploding before we finished. If you're traveling, split a plate or you'll be packing leftovers into a hotel mini-fridge. We did grab two custom ice creams from their pizzeria next door and ate them later at the hotel. OMG -- awesome. Same building: thin crust and Chicago-style pizza. We recommend this restaurant with no hesitation. It will likely be the best Italian meal you've had.

This place brought me so much happiness and joy. I got the salmon Alfredo as a test of sorts. I'm picky, VERY picky when it comes to pasta, even worse with sauces. I taste the avocado salad first. One singular tear of pure joy falls from my eye. The chicken was fried perfectly. The food didn't stand a chance against my appetite. I didn't even get to get a photo of my meal before I was violently destroying my plates (with love.) My sweet tea was perfect. Not sugar water, not overly sweet nor under sweetened. I didn't even need to ask for a refill, they just offered right when k was low. Then I tasted the salmon Alfredo. You know those scenes in ratatouille? When remy tastes the cheese and the strawberry together? Then when the food critic had the ratatouille? That's exactly what happened. It was as if the chef and waiters were ethereal beings sent from heaven solely to give my meager human taste buds a chance of experiencing pure bliss. It was gorgeous. I will be back if only to experience the beauty of such blessed Italian food. Other restaurants wish they can be like Mariolino's, I guarantee you, that other restaurants fall short.

After my first meal at this nationally celebrated fine-dining restaurant, I left determined to…read morereturn as often as possible during my time in Highlands, North Carolina. My second visit only deepened that conviction. Once again, I found a seat at the bar, this time in the capable hands of Fernando. Knowledgeable, engaging, and effortlessly personable, he made the evening feel less like formal service and more like being welcomed back by an old friend. The meal began with Paoletti's house-made sourdough rolls: cloud-soft within, delicately crisp at the surface, and served alongside black-olive tapenade and herb butter. With them, I ordered a glass of the cellar-special 2022 Barolo to carry me through the first two courses. I had arrived with firm plans: the basil-garlic butter escargot I had been dreaming about since my last visit, followed by the cannelloni. Then Fernando recited the evening's specials and mentioned elk ravioli--house-made pasta filled with elk and ricotta, set in a tomato demi-glace. Plans changed immediately. The trio of elk-and-ricotta ravioli was a delight. The pasta had that taut, satisfying al dente bite that announces it was made by hand, while the demi-glace was deep, savory, and impossible to leave behind. It begged to be gathered up with another piece of sourdough. If decorum had allowed it, I might have polished the plate clean. Next came the escargot, a dish against which I have a particularly exacting standard. My uncle has owned a French restaurant for as long as I can remember, and some of my earliest culinary memories involve this classic preparation. As a French-trained chef, I also know how quickly escargot can turn rubbery when mishandled. At Paoletti, the kitchen shows admirable restraint and precision. Rather than offering the slightest hint of bounce, each snail nearly dissolves on the tongue beneath a glossy basil-garlic butter, with slender slices of mushroom adding an earthy counterpoint to every bite. The seasoned breadcrumbs softened into the sauce--and really, who has ever objected to breadcrumbs steeped in butter? Certainly not this food lover. For the grand finale, Michael selected a 2016 Brunello di Montalcino that made the cannelloni sing. He shared stories about his path to Ristorante Paoletti and about his young daughter's remarkable palate and knowledge of food. His pride was unmistakable, as was his gift for making a guest feel at ease. He remains one of the most personable and perceptive guides to food-and-wine pairing I have encountered. The cannelloni itself was unlike any I had tasted: instead of the traditional broad pasta tubes, a delicate crepe enfolded ground veal, ricotta, and spinach. It was a daring substitution, and it paid off beautifully. Baked beneath béchamel and Bolognese ragù, the dish was rich yet composed, each element amplifying the next. Superb. It is easy to understand why Ristorante Paoletti has earned such ardent praise. Tucked into the Blue Ridge Mountains of Highlands, it delivers the ambition and polish of a destination restaurant without the stiffness that so often accompanies fine dining. The cooking is assured, the hospitality genuine, and the experience memorable from the first warm roll to the final sip of Brunello. I intend to return as often as opportunity allows. Molto bene, Paoletti.
