We tried again the next night, but had to pay a non-cancel "deposit" of 10 euros each for our party of five, 50 euro. But we were sure we could make it and booked. Now if you're thinking that the deposit was charged due to our prior cancellation, it's not the case since another person in our party booked the second reservation. It was well worth the deposit! Firstly, the location is in the Rembrandt area and very nice and active area. We were seated just inside the restaurant, with a very comfortable table, seats and window. The ambiance is great with popular music playing and a very bustling staff that is very attentive, friendly and helpful. The menu is vast and includes a lot of great options including French favorites such as frog legs and snails. We started with an adventurous order of the frog legs and they were amazingly good and the sauce was amazing! We ordered a bit of family style including the Cote Beouf, French onion soup, baked potato, fries, vegetables, chicken, ribeye. It was the perfect amount for the five of us and left room for dessert, which we ordered as a brownie and we asked for a custom dessert of ofogato, or ice cream with espresso poured over, an Italian favorite of mine! Ordered a massive Côte de Beouf (800 grams or 28 ounces) and some Grilled Vegetables on the side. This was an extremely well-cooked steak! European medium rare borders closer to rare than medium, which is fine for me as long as the steak is cooked well. Quite tasty! Service was fine, no complaints from me. Honestly can't believe I've never been to De Nachtwacht before. Definitely need to come back.

When it came out it was good., although it only had a drizzle of sauce. It was odd that the gave us one basket of fries for three people. We had to get another one immediately. Unfortunately I was so disappointed in the food and the service. Plus the staff really didn't care if the experience was good or not. I ordered my Bali steak and instead got the normal gravy steak. It was a bit overdone. I waited for some time for the waiter to check on us and when he did, I told him I was served the wrong item. He reviewed the order and said he would bring me what I ordered. Meanwhile my husband finished prior to me receiving mine. All they did was take my old steak and add the new sauce. Now the steak was completely overcooked. MEDIOCRE. No one came back to check. We asked for our check and were asked if we wanted to add a tip and at that point we explained our experience. He apologized but offered only the explanation that there were several complaints that evening and it was because the normal cooking staff were not there. So unhappy. Will not be going back.

The name slipped my mind, but it was a pile of mashed potatoes with endive, with a meatball on top with brown gravy and then beside that with some type of smoked sausage with a pile of mustard. I've always felt that whatever food you put on a plate should taste good together sausage with the mustard with the meat and the gravy and the mashed potatoes just seem disjointed to me. With that sad, I ate every drop of it and enjoyed it so maybe I learned something from this meal. ‍ My son took the alternative approach and ordered a meal with Indonesian flavors; chicken with peanut sauce was the main entrée and it came with french fries. He definitely enjoyed his meal as well. I'm glad we gave VS a try. It turned out to be a good meal of Dutch food in a touristy area with food from all over the world. Both delicious. We made the decision to go the Deluxe route with the prix fixe and the wine pairing, which nets out to about 5-6 dishes and 5 wines. We were blown away. From the razor clams and mushroom soup, to the ceviche and their lamb with romesco, each dish was superbly crafted. My boyfriend mentioned during our meal that the romesco on the lamb was one of the best he's ever had! Truly masterful. Additionally, their wine selections during the meal were wonderfully complementing to the dishes. A wonderful meal. Overall, GUTS provided a fantastic meal with great service and guidance. The mussel salad was unique, and the mussels were both generous in portion and very fresh and well cooked. I enjoyed the mushroom medley, but the winner dish of the night was most definitely the sustainably shot duck - which the server warned us to chew slowly in case of any bullet casings! The dessert was one of the more unique I've ever had - watermelon " taco" with goat cheese, the flavors paired very well and was very refreshing! I also recommend the wine paring for a special night out - for the price you get 4 paired all natural wines and I think that they were all paired very nicely. The only reason I gave it a 4 star instead of 5 is because it's just not elevated enough for the full 5 stars for me. For a very similar price, Wolf Atelier's food was a bit more refined, beautiful presentation and hit more of the 5 stars of food for me. However, GUTS has much better personable service. That happened to us more than once in Amsterdam, using the exact address didn't always mean the driver could actually reach the door, so budget a few extra minutes if you're headed here. I normally default to steak, but the menu had a burger topped with pulled pork that promised more meat than a straight cut, and I couldn't pass it up. Delicious. Genuinely one of the best burgers I've had. But the wife's flat iron steak might have stolen the night. Flat iron is one of the most underrated cuts out there, and this kitchen proved it. She was still talking about that steak days after we got home, enough that I ended up buying flat irons from Costco just to chase it. The atmosphere is cool and a little edgy, dim lighting, a lot of character, and yes, some genuinely creepy decor scattered around, including an old doll that stares at you like it's judging your order. It ran loud, but not so loud we couldn't hold a conversation across the table. Service was good, just on European time rather than American time. The Favorite Ribs (24.50 Euro) were flavorful; the L'Incroyable 300gr (Ribeye; 34.50 Euro) was good, but our least favorite of what we ordered; the Le Cannibale Royale 170gr (burger) was super tasty. We also enjoyed some frites (4.90 Euro) and some delicious Mac n Cheese (6.50 Euros). Good time and good food!
