Our family used to be big fans of the eclairs from Elite Bakery since last year when my god mother ordered their eclairs for her husband's birthday, and my mother was a huge fan of the raspberry eclairs. They were a big hit at the party as well. When we heard that we would be having Elite Bakery's eclairs again for my sister-in-laws birthday, we were so excited and couldn't wait to try them again. Unfortunately it was a big let down. It seems the baker had to make budget cuts on the ingredients and changed the recipe completely of the dough, the cremes and of the topping on top of the eclairs. The dough now tastes tough, dry, and the overall flavor is lackluster. The cremes used to be very light and airy with a nice taste of whichever flavor they were inspired by, but now tastes very heavy and doesn't have much flavor at all. The toppings used to be a light layer of white chocolate with whichever flavor it was inspired by, but now it's a heavy glaze that seems to be made of gelatin and it's heavily colored with artificial colors. Yes the look of the eclairs is very aesthetically pleasing with the gold details, but at the expense of the flavor, they are lying to their customers.
