The food was extraordinary and it just kept coming. There were tons of little bites and various pallet cleansers between dishes. Each little bite looked like it would have taken a tremendous amount of work and time to prepare. Meanwhile, there were probably 7-8 staff members at any given time serving our table. You'd think the staff were trained by ninja's. Never once did the staff make us feel like they were hovering or overbearing. Yet, if my drink was getting low, I'd turn around to discover it was once again full, like magic. Empty dishes? They'd disappear before you got a chance to look at them a second time. Truly a fabulous experience and meal! I wish I could tell you specifically what I liked the most but I honestly cannot remember, only that there wasn't a single disappointing dish or morsel of food.

Unfortunately, like many four star establishments these days it seems to be a trend among other like Haute cuisine restaurants to wow their guests with exotic combinations of fine ingredients that look pretty on a plate. Here, the cuisine was lost and unidentifiable, save for a few staple sauces. The result was confusing combinations that didn't work. All I can say is disappointment awaits those expecting an elevated French cuisine experience. I know he has it in him. His enviable resume speaks for itself. However, it appeared that he followed the trends instead of leading. A word of advice: get back to basics. Be true to the cuisine and above all...flavor profiles first, presentation to follow. It doesn't have to be fancy. I would be happy to return one day and pay anything they wish if that happens. I'm hopeful that it will. Until then, These days a one start still outperforms most over hyped four star disappointments.

For that program you eat in a communal dining set up, much like a dinner party, and located across the street from the main restaurant. There were 15 diners at the table. The program begins with a brief introduction and overview by the maître d', and then the meal begins with a two simple light cheese breads, followed immediately by a thick, almost puree a green vegetable crowned with a foamed nut mixture. It was thick and delicious. Next the menu moved to a single large carrot, perfectly cooked in carrot juice and then topped with crisped pieces of carrot peel. It was another incredible creation. From there we went a meat dish that was perfectly cooked and presented. I thought that they said it was pork, but it tasted like beautiful steak. We finished with a delight dessert and a richly filled cookie to take home with us. The maître d' introduces each course, explaining the ingredients and the cooking style. This was an amazing meal, and worthy of the restaurants two star rating. The communal seating is a little strange, and might be uncomfortable if you are seated next to someone who is not pleasant company. Most of the diners are Americans, which seemed a bit odd. We were seated next to some very nice fellow diners, and enjoyed their company. However, this part is hit and miss. The price is unbelievable, at 49EU for all of the food. A simple three glass wine pairing adds 12EU and a coffee is another 2.5EU. This has to be the best deal in Paris today, if you can get a reservation!

Note that they do ask for tips at the end on the card machine at around 15%-25% of the bill. * Spring rolls with leek and spring roll with orange 4/5 - This was a refreshing starter. The orange flavor added a bright note to this course. * Brazilian Cheese Bread 4/5 - Good cheese bread, a bit dry. Baguette Stick 3/5 - Okay, also dry. * Taco and Olive 4/5. Lollipop 4.5/5 - Made with veal and apple. * Curry cheese ball 3/5 - Okay flavor. Contained lamb, squid, ginger, and monkfish. Tasted mostly of cheese and curry. * Oyster 4/5 - Raw Oyster in a foam with sweet jelly cubes and nuts topped with blue cheese. I don't like blue cheese, but the rest was good. Fogatto bread 3/5 - Plain, crispy bread. * Bread 3/5 - Bread sprinkled with cinnamon. The beef fat was a bit too fatty. * Sous Vide Steak 5/5 - Amazing steak cooked in a black pepper and beef sauce with shallots on the side. The steak was incredibly tender without being fatty. But my last visit, where the waiter (the one with the tiny pony tail or man bun depending on your point of view) got very belligerent and downright rude about leaving a tip. (this habit started around the Olympics and has mostly died down). When I wanted to speak to the manager (who I have spoken to before) suddenly no one spoke English and just passed the buck before bringing the waiter back in front of me. All good things must come to an end especially when the service has gone down while the prices have gone up. Fortunately, there are many more excellent choices that are now available.
