My wife and I worked with Kuma Catering for our elopement dinner and it was perfect. Jeshua put together an awesome meal which included appetizers, mains, and sides. Oh my yum!! My drive out to the town of Coachella and in particular their food truck park that's open on Sunday's was absolutely worth it. I wish I could convey the amazing aroma of it all ... deliciousness!! The Kuma Catering cart held my attention, and I opted for a super tasty and unusual grilled cheese. Full disclosure... I ordered two actually. I couldn't make up my mind which to get and figured this way I could have half of two and save the other two halves for dinner or lunch tomorrow. My two halves were: 1. Bacon, honey crisp apple, caramelized onions, sharp cheddar, all grilled to absolute tasty perfection on rustic sourdough; 2. Lamb fennel sausage, peppers and onions, mozzarella, basil, also cooked to deliciousness in rustic sourdough. A giant shout out to Jeshua "Kuma" Garza, for his creative mastery on making what could otherwise be a basic grilled cheese into a gastronomic delight. Bravo! read more

I gotta say, I have been an out of town fan of Coachella Valley Brewing for a while, and now seeing what Chef Garza has brought to the proverbial table, this place is going to the next level fast. The menu on the day we visited has some great options such the chicken sandwich, burgers and the amazing fries. Pretty straight forward bar food right? Yes and No. Chef Garza elevated the offerings with aspects such as fried rosemary and curry aioli with the fries. The chicken sandwich was a home run with chicken that was amazingly tender and a slaw mixture that balanced the sandwich perfectly. But you may be asking...these are all pretty solid 4 star results? Yep, that coveted fifth star was tacked on there by getting to watch the owner operator work the room making sure people were enjoying the food and by the way he interacted with myself and my 9year old daughter. Most young children are a hindrance at best in a brewery tasting room, I will admit. But my kiddo I will admit is pretty accustomed to these types of surroundings.Well she flagged down Chef Garza to place an order before I knew we were even hungry :). Chef Garza addressed my daughter directly, answered her questions politely and honestly and even brought forth a few suggestions catering to her (see what I did there) as a kid, such as cutting the sandwich in half and bringing ketchup in case she wasn't a fan of curry. What a great concept. After reading about Kuma for a couple of weeks, we finally gave it a try. This week's menu was all about hot dogs. I'm not talking about your boring style dogs though. My wife ordered the Shawarma Dog and I got a Ramen Dog. Each was cooked to perfection and had a unique and awesome flavor profile. Lived up to the reviews and expectations. For such a limited menu the preparations described are chef-quality. I had a Smoked Brat and the French fries. The texture of the brat was probably the best I've had. It was prepared a bacon fennel cabbage and a grain mustard. The cabbage was a perfect sauerkraut - perfect - none of the pungency and 100% of the flavor. The French fries were saltier than I would have liked but I'll chalk that up to preference. The star was the curry aioli. Genius. In short, I'll be back to CVB for the beer and Kuma's food. The chef is a nice guy as well and at least on this evening personally served his creations. Awesome. From our first phone conversation to the end of the weekend, the entire team was amazing. The food was delicious ( my brother n law is still talking about the tacos), the drinks were fresh and different and the service was more than I could have asked for. Had the Chili Rapini Grilled Cheese today while at CVB. It featured Chili Garlic Rapini (East Coasters know it as Broccoli Rabe), Prosciutto, Mozzarella, and lemon aioli on Ciabatta. The sandwich was perfection. The flavors complimented each other and no ingredient was overpowering. It was truly a very pleasant surprise as we were passing through the area. I have the pleasure of working at the Coachella Valley Brewing taproom and I cannot remember my life before Jeshua came in and started to cook in back. He is a Cordon Bleu-trained chef and his food is inventive and delicious. The menu changes every week and I haven't had one thing that has been less than phenomenal. He is also teaming with us to do occasional beer dinners and his first one was like a full-on amusement ride for the olfactory. We stopped at Coachella Brewing Co. on our way from the Mojave to Palm Springs. We were debating on whether to stay for sandwiches with Kuma or continue down the road. We stayed. Probably the best decision of our lives. I had the Kuma burger - perfectly cooked, thick patty with a delicious, chunky bacon onion jam, and delicate arugula. My husband had the fried chicken sandwich - the best friend chicken sandwich he has ever had; I agree! It was a delicious piece of chicken with a not-too-spicy sauce. But the star of the sandwich was the crunch that the pickles and slaw provide. Both sandwiches on a buttery brioche bun.
