Each meat has a great amount of intramuscular fats that melts in your mouth as you eat pho or even Shabu. I would buy 2 pounds of this every time, enough for a family of 4 or 5. I can see behind the counter that the butchers are busy slicing the meat away daily. If they don't have it in the fridge, they will slice it for you as you order. I've been a regular customer for years, but after being treated like that by the owner, I won't be back.
