Inside is large and there are 3 TV's showing different things but the volume is low so you can talk to each other. The tables are spaced apart as well. The staff were very nice and explained the specials and answered questions. I got the Steak Orleans which was a 10 oz ribeye topped with beef cream sauce, jumbo shrimp, and mixed vegetables. That steak was so tender and the cream sauce was very flavorful. It had peppers and onions sautéed in it that made it good by itself, but on top of those seasoned loaded potatoes, it was delicious! Hubby got the shrimp and grits. He said they were the best he's ever had! The grits have jalapeños in it which gave it a kick.He also tasted bacon, green peppers and onions. He said it was his new standard. We ordered a side of catfish and okra because we wanted to taste it. Man, that catfish was piping hot, crunchy on the outside and tender on the inside. The food had that authentic, old-school New Orleans flavor that reminds you of how great Southern cooking used to be. If you know, you know. The atmosphere was warm, welcoming, and relaxing, making the entire experience even better. The staff was friendly, the service was excellent, and the food was absolutely amazing. I've eaten at a lot of restaurants over the years, and this was a breath of fresh air. It's the kind of place that keeps you coming back again and again. If you're ever in the area, do yourself a favor and stop in for a great meal. You won't be disappointed. The ambiance alone is worth the visit, and the food and service make it even better. I've also had the grilled seafood and usually gravitate toward the salmon with vegetables. My wife loves their fried okra, and we've tried several of the fried seafood options as well. Everything has always tasted fresh and well prepared. Interestingly, we have several friends who go there specifically for the burger. We still haven't tried it, but we've heard enough people rave about it that apparently we need to. The drinks are good too, and when it's just the two of us, we really enjoy sitting at the bar and having dinner there. That's probably what we like most about this place--you can go all-in on fried seafood and enjoy the guilty pleasure, or have a salad with grilled shrimp or salmon and leave feeling like you behaved yourself. I was staying near Waco for a few days, but the area I was in had very limited choices for food. So, I looked up some nearby restaurants in Waco, and found Cajun Craft. It was worth the drive in from where I was staying. From the outside, it doesn't look like much: small parking lot, rusted roof, etc. However, I have found that often conceals some of the best places. An immediate friendly greeting was offered at the door and I was surprised by the quaint setting. There were only a few tables near the bar, but there was a covered patio attached and even more seating outside. The menu offered most of the traditional Cajun dishes at a modest price, but I already knew what I wanted. I ordered the Atchafalaya Catfish, a catfish filet over a bed of rice smothered in crawfish Étouffée. It was amazing. The Étouffée was rich and hearty, with the perfect spice level, maybe the best I have had west of Baton Rouge. The catfish was crisp and golden, giving a great balance to the creamy Étouffée. If you are ever in the Waco area and have a craving for some authentic Cajun cuisine, you must give Cajun Crafts a visit.
