Koliba is a small restaurant, but it is certainly not quaint. Modern, artistic design washes the walls and is outlined with photos of old Poland and a few rustic pieces creating a nice blend of past and present.
The traditional Polish dishes resurrected our palates from a week spent dining on fish and chips and thin pizza. Try the Compote, a delicious homemade fruit drink with strong aromas of cinnamon or ginger.
The service was better than we had come to expect in Ireland. We have found that most of the service at restaurants in Ireland could best be described as "friendly and inattentive" for our in-and-out American tastes--indicating that we need to learn how to relax! Our server at Koliba was the first to keep us from sitting around for an additional 15 minutes after completing our meal, waiting to pay the bill.
