Waited 30 minutes when I noticed only two tables had food delivered since we sat down. I looked around and counted 18 tables that were sat before us patiently waiting for food. I then saw Doc walk out the door carrying a paper bag that appeared to contain food. Two possible managers going table to table blaming a new line cook for the delay. Here's the issue. Docs items are not cooked to order. Owners don't walk out when 80% of their patrons are experiencing extended waits on food, and one new employee should not be the excuse given at Doc's Smokehouse. Docs has great food, and amazing customer service. Hopefully what happened Friday night is not the new norm. Go try docs, but don't count on it being the service that you're used to getting.

The burnt ends were a little dry, but can be forgiven because it was near the end of the night. We were checked on frequently, drinks refilled. Then we had the opportunity to meet Susan, the owner. If you don't know Susan was a competition BBQ'r for many years before opening her restaurant with her husband and you can see all her trophies and ribbons in the room She graciously bought us some bread pudding and gave me a little secret about it! If you think this is anything other than spectacular there is something wrong with your pallet. We have eaten around the world in some very high end restaurants and that gave us as much satisfaction and joy as many a dessert. Delicious. It's made with Angus beef topped with Pepper Jack cheese, Grilled Balsamic Onions, Mild Banana Pepper Rings with a Sweet and Spicy Sauce, all served on a Onion Roll. It was served with a side of Fries. I was impressed by the size of the burger and that it was hand pressed. A hand pressed burger always tastes better to me. I requested that it be prepared medium rare and it was done perfectly. The fries were soft, I'd prefer mine a little crispier, but they were seasoned well. I got a giggle from their ketchup bottle, it said it was "Fancy". They have an impressive variety of beers. They offer draft, bottle and canned. I personally always go with one of the many craft beers they have on the menu. When dining alone, I always sit at the bar. The bartenders are typically female and are friendly. I am fan of hooks under a bar and Pump House takes it even a step further. They also offer, outlets. If your phone needs a charge and you've got a cord, you are set to go. Offering outlets under a bar, is top notch customer service. Now that I know they have great burgers as well as their wings, I'll have to rotate between the two when coming to dine.

The only complaint I can come up with is the location/parking area isn't the best. It's tucked away behind a crappy roadway and parking can be a bit tight for bigger vehicles. They did a great job and the portions were so large, I got two meals out of my Ribs and Brisket Combo Platter. Brisket was fork tender and the Ribs were fall off the bone tender. Both were good, but my fave was the Ribs. Edley's is an order at the counter establishment. Once you order, you're given a table marker number. When your food is ready, a runner will bring it to you. If you're a soda or tea drinker, you'll order them with your food. If you prefer an adult beverage, you order them separately at the bar. I aways sit at the bar any way, so it's easy to order a beer while waiting for my food. Edley's now has their very own, Hazy IPA made by Urban Chestnut Brewing Company. I gave it 4 out of 5 Stars on my Untappd. I liked that a local STL brewery was the one who made it for Edley's. My Combo Platter came with two sides and I chose, Baked Beans and Red Potato Salad. I have always said, if you're eating BBQ, you've got have a side of Baked Beans. Another of my crazy rules is, Potato Salad must be made with Red Potatoes. So when I saw that they advertised their potato salad with red potatoes, I knew I had to have it. The Baked Beans had chunks of brisket in it, which added extra flavor. Even though the potato salad was made with red ones, it needed more white pepper and some more seasonings to make it kick. In addition to the two sides, the platter came with a piece of Jalapeño Cornbread. I'm a jalapeño addict, so it was a winner for me. It was moist and had plenty of little pieces of jalapeños to give it the perfect kick. The young lady at the counter was very perky and made the ordering process easy and smooth. My bartender was friendly and hustled taking care of bar customers and guest who showed up at the take-out window. It's a restaurant that makes its own Root Beer and serves burgers. The King is not in my immediate area and it's not even in one of my regular driving routes. So I don't think of him that often. I need to change that, because the short out of the way drive is so worth it. I normally get the Lion Tamer which has jalapeños on it, but today I went with a King Louie. It's a single smash burger and I added cheese. My topping were only pickles, lettuce, onion and a smear of mayo. I had them hold the tomato. I'm not a fan of mayo, but for some reason I like it on my burgers here at King Louie. The edges of my burger were crisp, it had an odd shape so you know it was hand pressed. It explodes with flavor, just like an old time 50's drive-in. The fries are equally impressive. They are super crispy and done to order, no fries sitting under a hot light waiting to be served. What impresses me is they are fries that still have their skins on. For me, that just adds flavor. Of course, the main attraction next to their amazing burgers is the refreshing homemade, Root Beer. It is always the perfect accompaniment to a burger and fries.
