To borrow the popular phrase, he clearly understood the assignment. My husband and I walked away from that meeting feeling confident that Chef Michael could translate my vision into an experience expressed through food and he absolutely did. The food was exceptional. My menu brought together flavors from several cultures, and Chef Michael embraced both the vision and the challenge. From the lamb kebabs and couscous to the shrimp and andouille sausage over grits, lemon tartlets, baklava, and pastéis de nata, everything was beautifully presented and thoroughly enjoyed. My guests are still talking about it. What made Chef Michael truly extraordinary, however, went far beyond the food. He brought warmth, care, flexibility, and a genuinely joyful presence into my home. He and his team never felt like people who were simply there to fulfill a catering contract. They engaged with my guests, anticipated their needs, and became part of the spirit of the evening. My guests didn't just enjoy what Chef Michael serve, they enjoyed Chef Michael. His professionalism was evident in every detail, but it was his personal investment in making the evening special that I will remember most. He understood that I was trying to create more than a birthday party, and he helped bring that vision to life. We actually had several communications before the event, to fine tune the menu and outline the progression of the evening. Chef Will was very punctual and came in ready to get started. At our request, he made himself at home in our kitchen. He used some of our cookware, kitchen utensils and our grill, and he was very respectful of our home/property. I had the pleasure of visiting with him while he prepared the dinner. Such a delightful guy, and very impressive with his love of quality food and just the Houston food scene in general. The evening was about 2 hours once we started eating. The food was awesome. The food was very flavorful and the presentation was top notch. As we ate, he continued with the preparation/plating of the next dish on the menu and cleaned-up as he went. When he left, other than some plated leftovers, there was no evidence he had been here. He even took out the trash! What a great guy, and a great treat for us and our guests! I enjoyed this evening so much. I hope to attend some of his cooking classes as well. Due to COVID-19 I was unable to proceed (AirBNB owner cancelled then I was unable to secure another location). I told Chef Will as soon as I found out to cancel but he never refunded me. He said: "How do you suggest that I recoup the money I would have made from the other people I turned away for the date you placed a deposit on? You cancelled. You could've accepted a delivery on the date you requested and either improvised or eaten it later." - I told him he didn't give me any options such as delivery and never responded to my emails until much later on. He then tells me "I spent the last 2-3 days trying to book your cancellation with a couple of people I had turned away due to your booking. I had no luck." - Because you can't find any additional clients you won't refund me. Great business model. "As a professional courtesy I can offer you a discount on a future booking or a 25% refund. " - Thank you so much, I spend $250 on absolutely nothing and I get 25% off next time I want to throw my money away? To sum it up: Chef Will stole $250 from me and was unprofessional. He was slow to respond to emails and never mentioned that the deposit was non-refundable. I would STRONGLY not recommend him, I would give 0 stars if it was an option
