We then stuck with the sushi which was available at the buffet. Since they state up front that they will charge for "wasted" food, the best recommendation is not to load up your plate but get a smaller number of things at a time and make multiple visits to the buffet. Some of the rolls wouldn't come off because the wrapping had a lot of moisture so I ended up just eating it deconstructed. I prefer how Kazu Nori gives you each roll one at a time to prevent this.
