They manage long lines with plenty of demand and the product remains consistent and they are still smiling while doing it! Each burger comes with two patties, onions, and cheese with truffle sauce on a bun. You can choose to add bacon, jalapeños, etc. (which we did). They also include a spicy sauce on the side that you add to the layers of flavor! Make sure you get your own burger since once you try it, you won't want to share! We also got a side of truffle fries and they were perfectly crispy, and could immediately taste the truffle seasoning. We've seen the long lines on social media so went to the kaka'ako farmers market early... and got there at 7:30a, I was the first in line! They actually let the market start early that day (instead of 8a) so they took my order as soon as I got to the counter. Score! (The line quickly started forming at 8!) I always wanted to try their smash burgers. So I arrived there 5 minutes before 8 and they have been taking orders already (hard workers!). I ordered and got number 83 but they were serving around 60? So I decided to browse around other stores in the market. I spent 20 minutes getting flowers etc. They were still serving 70 something. I finally got my order a bit before 8:30. Well people enjoy taking videos or photos of cooking smash burgers and also enjoy nice smell. Went to the Kakaako Farmer's Market and decided to try this smash burger after hearing so much about it. There is a line, which usually means its something worth waiting for. The line moves fast as they're just taking orders. They're very nice and pleasant and all working hard. The longer wait is for your completed order. This took about 20-30 minutes since they can only make about 20 burgers each time on the grill. The burgers were really good but don't think it was worth $18. There are a lot of good burgers out there and for this price there are others that you could enjoy in a nicer setting without the long wait. All in all a fun morning though and I'm glad I tried their famous smash burger. It's good to try it but not sure if I would wait in two lines again just to eat one. read more

#49 of 52 (weeks of trying a new restaurant at least once a week) I've seen this place so many times but I refused to try it because I am not waiting in a long line. We happened to show up to the market today and the line wasn't very long at all so we decided to give it a try. I do not like truffle so I'm glad there is an option to get the burger without that sauce. We ordered two burgers, one without sauce and one with bacon. I'd say from the time we got in line until we got our food it was about 30 minutes total. It was nice to at least have a show while you're waiting and watch all the burgers being cooked. They do have a good system down. There is no denying the burger is really good. You get two smashed patties though you can pay for more. I love the onions and wanted extra but didn't want to pay extra for them. My honey said he did like the sauce but they put too much on. Fries were hot and crispy - subtle truffle flavor, could've used a little more parmesan. As for the burger, soft pillowy bun and full of cheese. We finally got to try the infamous truffle smash burger we've always seen a long line for every weekend at the Kakaako Farmers Market on Saturday's. Shoutout to our friend Brian who waited one hour and 15 minutes to get these insanely delicious burgers that didn't disappoint and definitely lived up to the hype. We got the double patty truffle smash burger and added bacon. The truffle aioli was out of this world! JOJA truly puts on a show for people as he systematically cooks dozens of burgers in front of the crowds and the masses patiently wait for their mouthwatering lunch. I will continue to have dreams about this meal! I love how the farmers market has tables for people to sit down and enjoy their food and even have hand washing stations. Finally got to try the popular smashed burger at the Pearl Country Night Market. Had pretty high expectations since there's been a lot of hype for it recently. Owners were nice and efficient. I liked that they had a number system to let you know how far along they are. Food probably took about 15 minutes. Truffle Smash Double Cheese Burger $19 Comes with spicy orange sauce and chocolate chip cookie. Beef was juicy and flavorful. The truffle sauce was a nice bougie touch. I do wish there was more toppings. Sadly they weren't selling their truffle fries, those are usually my favorite kine. I wasn't the biggest fan of the cookie, it was rather too sweet for me. Wonder if they have an option to skip the cookie for a lower price. A little expensive for what you'd expect from a food truck/tent style place, but the quality was there. Writing this review is a bit challenging for me because I've been a big fan of this food truck for a long time, and this is actually the first time I've tried their smash burger. I'll do my best to be objective. We went to an event at Waikai, and around 6:45 PM, I lined up to place my order. I got the Oklahoma Smash Burger, which comes with two patties smashed together with cheese and what seemed like mayonnaise sauce. After placing my order, I ended up waiting a long time for my food. However, while waiting, I got to watch the cook prepare the burgers and smash the patties, which was pretty cherreh to see. It took about 45 minutes to finally get my burger. One thing I noticed is that they take orders and fulfill them in batches. The staff takes around 10-15 orders at once, then the main man puts all the patties on the grill and starts smashing them. This method makes the wait time longer, but I understand they're likely doing this to ensure they don't mix up orders. Also, with a small team, it's understandable that food preparation takes a bit longer. When I finally got the burger and took my first bite, I was disappointed--it tasted very bland, and I barely noticed any salt. I'd give the burger a 5/10. It wasn't bad, but it was just a regular burger, nothing special. The long wait was also an issue for me, so I'd rate the wait time a 3/10. However, I understand the delay was probably due to the way they take the orders. On the positive side, the staff really impressed me. I could see how hard they worked and how much effort they put into making the burgers. For their dedication, I'd give them a 10/10. When I say these burgers are LEGENDARY, I mean it. Joja is a man working the grill and he does a damn good job at that! These lines are INSANELY long for a reason. If you don't know, this is an Oklahoma smash burger and has been around since the 1920's. The flavor from maillard reaction in the meat (the dark brown burnt bits on the patty) and the steam that is released cooks the onions to PERFECTION. he then flips the onions onto the grill to get a wonderful brown and adds that legendary slice of American cheese. Joja's burgers stand out bc they have so much flavor from the style of cooking, to the cheese, to the TRUFFLE sauce that HUGS this burger. I'm not going to lie, I'm not a huge fan of truffle oil flavor because must of the time it's not true truffle (it tends to be a chemical added to oil that is similar to the more pungent white truffle). But Joja's burger sauce blends well with the other creamy flavors imparting a wonderful experience through every bite. It's juicy, it's filling, it's just so good! I also got the Bacon truffle cheese fries - they're great too! Everything is good! The bacon is cooked perfectly, not super crunchy so the pork flavor comes out nicely. They ran out of pickled jalapeños (which is fine, next time) and the parmesan cheese on top adds a nice bite that compliments everything. And DO NOT forget the spicy orange sauce, it's fire. in fact, get two or three to make sure you have enough for every fry. Boy, oh boy. Without question, this right here is the most talked-about burger on the island. Probably even the whole state. Every foodie influencer or what have you has this place plastered all over their page; it's spread through social media like wildfire, and is definitely the hottest thing going in town. Picture lines longer than a North Shore barrel, hordes crowding around the griddle to snag a video, and the whole joint selling out before the clock even strikes 11... it can be a challenge to even get your hands on one of these things. Given the burger crush my family has been on lately, this place was naturally something we had to check out for ourselves. I'm a big fan of the "know your identity" approach -- doing one thing well, and committing to perfecting it. Joja certainly subscribes to this philosophy; there's one burger on the menu, and that's what you're here for. The standard Joja burger comes with two smashed patties, a heap of griddled onions, melted cheese, and toasted buns. After stacking everything up, the whole thing is then doused in house-made truffle sauce. It was a little startling to see how much was squirted onto each burger, but this definitely turned out to be the star of the show; not too overwhelming, as is all too easy to do with anything involving truffle oil. Really good. I do think the meat itself was a letdown, though; although uncle working the griddle clearly seasoned them liberally, we were all in agreement that it was definitely not as robustly beefy or flavorful as we were hoping for, on the blander side for sure, so that was disappointing. The onions could have been caramelized a little more as well. The total package was clearly carried by the sauce, which to be fair carried it pretty far... but maybe not quite into "excellent" territory. Overall: a fair, solid burger to be sure, but a touch shy of being worthy of the rabid fanfare that has followed... or the sheer effort it takes to get one. You're only able to get your hands on these things one or two days a week -- Saturday at the Kaka'ako Farmer's Market, and pop-up appearances here and there. Not everyone is ready to line up and inhale a burger at 8 in the morning, either, but sometimes that's what it takes to secure one since they sell out so quickly. I might brave a line like this *only* for the best burger of my life, but I'm not sure this one quite fits that bill. I will add that everyone here is incredibly friendly, and it's clear they are putting their heart and soul into their cooking; it is always worth supporting an operation like that. Been a long time coming. I've seen so many reels and posts on Instagram about this place quite often and I would always tell myself, one Saturday I'll make my way down to the Kaka'ako Farmers Market and give these burgers a try but... The burger tasted great, but watching the cook press down the meat while sweat visibly dripped from his arm onto each patty was honestly disturbing. Most people probably wouldn't notice, but I saw it happen--multiple times. It made the whole experience feel unhygienic. A simple fix like wearing arm bands or a sweat towel could go a long way. Do not sleep on the pasta! Stumbled upon this food truck at the Kaiser Farmers Market (Tuesdays from 4-6pm). They have a mixed menu with some plate lunch items as well as a variety of noodles. This is by a far margin, the best smash burger that I've ever had....hands down. We've seen this pop up at the Kakaako farmers market quite a few times, but "who wants a burger at 9 in the morning", I would often ask myself. Turns out...EVERYONE. But once we ordered, it took another 45 minutes for our order to be made....which makes sense, they only have one long flat top griddle and one guy making all the burgers. A woman was taking orders and they had another guy on fry/bun duty. After ordering they closed off the line about 10 orders after us, informing everyone else they sold out (woman taking orders was keeping count). Nearly 2 hours for smash burgers? Is it worth the wait? OH. HELL. YEAH. Because everything is made fresh to order and you can literally watch as he makes them, everything comes out hot and fresh. The burgers (which are lightly seasoned and smashed with onions embeddded are crispy on the edges and nice and juicy in the middle as any good smash burger should be. But the star is the white truffle sauce. Oh man, if I could bathe in that sauce....well...nevermind. Also, don't skip on their hot sauce. Its freaking incredible and works great with the burgers as well as for fry dipping. Only thing I didn't really care for was their loaded fries with chili. Ours came out kinda cold for some reason. My wife and kids still loved them, i was just not the biggest fan. They sell out constantly, so get there early. I can't stress that enough. If I could give them a 2.5 I would. Here's the skinny: They do the truffle sauce well. It's tasty without being over-powering or rich. It does clash with the burger seasoning. The plain fries are seasoned with maybe a light Cajun powder and seems to clash with both the truffle sauce and burger seasoning. The menu is simple in that you can get an Oklahoma Truffle Smash Burger with or without bacon. That's pretty much it. This model should mean the burgers are their specialty and spot-on. The most disappointing part of the experience was the wait. We stood in line from start to burger in hand, for 1:22 and apparently this was a "shorter" than usual line. They take 20 orders at a time but cook only 10 double burgers at a time. They unload the burgers and reload the next batch of 10 double burgers. This is a highly inefficient model. Unloading and loading the grill like a treadmill/assembly line would move things quicker and they could make more profits as a result. People also crowd the front of the line to look at the menu. I'd recommend taking a picture and taking the digital copy back with you in line to review. Glad I tried it but it wasn't worth standing 1 hour and 22 minutes in line for (for me personally) and I likely wouldn't have these burgers again unless someone stood in line and got them for me for free. I wanted to try the smash burger because others have told me about it. I was finally able to try it one day at an event at wai Kai. The burger was really good. The line was crazy long which I understand why. Would I go again? Probably not. Don't get me wrong, it was good but not worth the wait and price. I did not even get close to being full..
