They also tied it very nicely, and the vacuum pack is clutch. The big order was a bone-in rib roast (six pounds), which will be our Christmas dinner. It's a beautiful roast ... probably Select Grade, since it was about $120. But there is plenty of fat in the cap. If this beauty doesn't taste worth a damn, it's on me. Notice that I rubbed it with dry rosemary, course black pepper, Kosher salt and lemon zest. It will sit in the fridge overnight and roast low and slow on Christmas Day. We also picked up bacon, breakfast sausage and Dearborn hot dogs (I'm a hot dog junkie). All of it was fresh and tasty, The service here is spot-on. Not only do they answer questions, but they also give you exactly what you order ... along with some advice. That's old-school, and it's too bad that there aren't more places like this anymore. Of all the flavors we tried, the sweet corn, blueberry, and New Orleans seafood were my favorites. Be forewarned however, you need to be very careful to follow the cooking instructions provided. I over cooked a couple and they were not as moist as I would have liked. I highly encourage you to make the trip to Gibbs, it is a really fun experience!
