This is a native soup of the Yoruba people of South West Nigeria and other parts of Yorubaland. The two vegetables most commonly used to prepare the soup are Celosia argentea and Amaranthus hybridus. The name is derived from the Yoruba language and loosely translated to "stirred leafy greens." The spinach available in West Africa tends to be a little different: it has larger leaves, and it's a bit heartier. I will come back and try other dishes next time.
