The owner and wine-maker Neil (whose nickname is Clavo) was great to talk to. He let us try every wine - about 3 whites, 1 rose, 1 sparkling, 5 or 6 reds, and a port. We are kind of wine snobs and loved a lot of the wines. While we tasted (and we were the only visitors at the time), Neil told us stories about his wine and his dogs, Rory and Karma visited with us. They are very sweet older pups. Because Zack's dad is in the wine business, Neil offered us a 30% discount on the wines we purchased - so nice! We'd love to visit Neil and Clavo again and were so thankful for such a fun afternoon activity (and Neil even gave us caterer suggestions to we can label this stop "working on our wedding"!).

Edgar's wines have a wonderful Spanish influence and are consistently unique and delicious. What makes the experience especially special is Edgar himself. The cheese was the highlight of the experience, each one really did pair so well with the wine, plus they were delicious on their own. So on our most recent trip to the Central Coast, we had to stop by my now favorite winery and have a tasting. I forget the young lady's name who helped us out but she was amazing and balanced all the parties on the patio super well, providing a great experience and wine knowledge to everyone. The weather on the Central Coast is amazing and sitting out on the patio was such a great vibe and although I have every intention of visiting new wineries throughout the coast, I will make it a point to regularly visit this one. My experience with Vino Vargas began when I made my appointment and Pedro (owner and winemaker)…read moreinquired how I found them. I explained I had been to a few other wineries on the San Miguel side and he said, you know, we're part of the Pleasant Valley Wine Trail (13 wineries on the San Miguel side). I didn't even know about that, but come to find out some of the wineries I previously visited were part of the trail. I was thankful to Pedro for this, as it helped me plan out the rest of that day on the trail. This particular trip to Paso was a few days before the Labor Day holiday weekend. I wanted to get away, but also wanted to be as safe as possible, by going at a time where I felt there would be fewer people. In the morning a few hours before my visit, Vicky called to confirm my appointment. I appreciated that and I'm sure she did too. Vino Vargas is on the far end of the trail, so it's a little bit of the beaten path, but so worth it. Because appointments are highly recommended during this time of COVID, I happened to be fortunate enough to be the only one at the winery at that time. It was such a great experience. I was able to have a great (socially distanced) conversation with Vicky. Learned so much about her and Pedro's wine-making journey, and the wines they make. I suspect it's not something that would happen with much regularity on any non-COVID style scenario where tasting rooms are typically full or busy. The wines were also delicious. I'm not much of a white wine drinker, so I passed on that option on the tasting menu and went straight for the reds. I wound up buying four bottles - 2017 Toro Tinto Tempranillo, 2016 Rio Ruso Pinot Noir, 2017 El Taxi Cabernet, and Paso Rosa Rosé Dessert Wine. I was very luck to have gotten one of the very last bottles of the Paso Rosa and I was thrilled, because it is absolutely delicious. If you can make Vino Vargas part of your Paso Robles adventure, I would highly recommend it. Pedro and Vicky are the nicest and so love what they do. Their wines speak so much about the care they take in making them.

Where can you get wine WITHOUT SULFITES? Caparone Winery! We intentionally picked this unique…read morefamily run winery because they don't add sulfur dioxide to wines, which is used as a preservative. When we visited Caparone Winery in Paso Robles, we made the mistake of driving down a dirt path road on the way. It wasn't terrible but do try to take San Marcos Road when coming here. When we came to the winery, it literally looked like a deserted farmhouse. There was just 1 other vehicle around and a closed door to the building. We ventured inside and was pleasantly surprised that the father/owner Dave was already there pouring wine for visitors! The building was filled with wooden barrels of unsulfated wine. On a modest table, Dave offered 2015 Nebbiolo, 2015 Cabernet Sauvignon, 2015 Merlot, 2016 Aglianico, 2013 Zinfandel, and 2016 Sangiovese. We sampled each wine and particularly liked the Zinfandel! The wine smelled fragrant and full. The wine was slightly dry and not at all acidic and we loved the lack of sulfated preservatives. At $18 per bottle, 10% discounts are offered for a half case 6 bottles and 20% discount for a full case of 12 bottles. We purchased the Zinfandel, Cabernet Sauvignon, and Nebbiolo. Excellent wine and without sulfite preservatives! A great little winery worth visiting!

All the wines I tasted were crafted with care and I especially liked the 100% Grenache 2022 from the York Mountain vineyard. The knowledgeable staff and comfortable seating had me staying longer than I planned. Highly recommended if you're in downtown Paso Robles and looking for some excellent wines!
