Jargon has settled into the kind of comfy-chic neighborhood-bar groove that's hard to fake. It's been around since 2017, and it shows -- in a good way. We walked in without a reservation, sat down, and had the kind of long, unhurried dinner that feels increasingly rare. Nobody rushed us. They let us share plates without hesitation. The menu is billed as New American, and that's the right phrase for it -- genuinely eclectic, pulling from Spanish, French bistro, and Southern influences without committing to any one of them. The pork chop was excellent. The grilled carrots were genuinely memorable. The green salad was simple and well done. Our waiter recommended a wine that we were pleased with, and even offered a tasting. The wine list is deep for a room this size, and the cocktail list looks the same. Music was at that sweet-spot volume where you can hear your conversation partner and still hear the song. You could bring your parents, or come on a date, it works either way. Some farm-to-table places feel pretentious; this one doesn't. They don't make you feel dumb for not knowing every local distributor. One small gripe: a 3% "kitchen staff fee" printed on the back of the menu. I'm all for paying the kitchen, but I'd rather see it built into the prices up front. 4.7 Stars. What would push it to a solid five stars: drop the hidden fee and bake it into the menu prices. That's genuinely the only thing standing between this and a perfect night out. read more

Our server was rather chatty but incredibly kind and attentive. About the same price range as other upper scale/casual spots in Asheville. Big portions help justify the price. Local ingredients and really good food. A nutty amuse bouche to start the night. Beets and pickled apples were interesting in a good way. Cheddar onion rye sourdough was adequately sour and warm, on the dense side. Trout was super moist and the mustard sauce complimented it very well. One of the better fish dishes I've had in NC. Also tried some of the pork chop (very tender & great sauce) and mushroom risotto (herby and great flavors on the mushrooms). read more

Jargon will forever be a favorite! Chef Alek is truly one of the best. His dishes are always so well balanced. They're cozy, heavy on the local produce and proteins and just overall well executed. These little cherry pepper bombs were the perfect nod to spring! Welcoming the sunshine with a highlight of all the spring produce we love The Duck stroganoff was cozy and comforting. Absolutely lovely experience! I went here for my birthday last month, but just now got around to reviewing. The food was excellent, the atmosphere was intriguing, and the owners and staff were so kind and welcoming! We got the fried frog legs as an appetizer, the duck breast, the beef short rib, and the chocolate cake dessert (forgive me for forgetting the exact name of this item). They even added a candle to my dessert, knowing I was visiting out of town so I didn't have an actual "birthday cake", but this was so much better than a traditional cake, and the thoughtfulness of the staff made me feel so included! We went here for Jargon's annual Mardi Gras celebration, which has become a well-known local event, but which has its own special menu. So while the specifics of what we had to eat won't necessarily be available on their regular menu, I think the comments about the food and service will give you some idea of what this restaurant is like. First of all, don't judge the book by its cover. It's not the most attractive place on the outside but it's in West Asheville where funky often comes with the territory. Inside it's got real cozy charm though. The outside patio was covered and heated so it was nice even on a late winter evening. The service here is outstanding -- among the best I've experienced in Asheville. Friendly, but not overdone or phony. Attentive without hovering and efficient without being too pushy. The timing was perfect as we enjoyed 3 courses over 2 hours. We weren't rushed at all. We started with cocktails: a sazerec, since this was a Mardi Gras dinner and this is a famous New Orleans cocktail. They may not have this on their regular cocktail menu, but they should. It was perfectly mixed. For appetizers we had vegan red beans and rice and charred okra with a lemon remoulade sauce. It's rare to find a non-pork version of red beans and rice, so kudos for this. The spicing was well done and this dish was tasty. The okra was perfectly charred and the sauce was an excellent accompaniment. For one of the entrees we had a gumbo with trumpet mushrooms in the sauce and grilled lion's mane mushrooms on top. They were sliced like cuts of beef and had a nice savory meaty flavor that went well with the gumbo sauce. For the other entree it was a crawfish pot pie. The filing was a roux where the celery was the star. You could taste it and it had just a bit of crunchiness left to it. The crawfish were delicious. The crust on top was also excellent, like a really good but light biscuit. For dessert we had their version of beignets. They weren't bad, but compared to "real" beignets from New Orleans, they were a let down. Still, they were fine to close out the meal with, along with great decaf French pressed coffee (the best decaf coffee I've ever had!). We'll definitely come back to try their regular menu. read more

Jargon was one of the best restaurant experiences I have had in my 41 years of life. Everything I had was perfectly prepared and presented. Phenomenal! Every dish provided a blend of natural ingredients with flavors that excited the palate. I never knew that broccoli could taste so amazing. The slightest char along with hummus and jelly was exquisite. The pea salad with pecans added a blend of sweetness along with the goat cheese. Lastly, the field pea perloo with snap peas and mushrooms on a bed of rice was a great pairing. Mushrooms harvested from the morning, I would say, made its way to a great main entree. A Trip to Asheville Is Incomplete Without Experiencing Jargon. I rarely write online reviews, but after my experience dining at Jargon, I felt genuinely compelled to do so. I took a weekend trip to Asheville from Atlanta and used Amex Concierge to book a reservation at a restaurant that fit a foodie, experiential vibe for a solo diner. I was fortunate enough to experience the chef's table, which offered an intimate view into the kitchen and the team behind the magic. Jargon was--hands down--the best meal I've had in the last one to two years. Coming from a city where restaurants are plentiful and the Michelin Guide frequently recognizes high-end establishments, I could only wish for a place like Jargon at home. I've dined at many of those acclaimed spots, and while they are often impeccable, they can lack certain elements that Jargon delivers effortlessly. The restaurant itself is warm and approachable, and the staff genuinely expressed joy in being there. They spoke highly of the owner and clearly took pride in every detail, including how the team was supported--especially during Hurricane Helene. That care shows. The menu, as I understand it, is ever-changing and collaborative, with contributions from the entire kitchen staff. Watching them joke, engage, and support one another during moments of pause made it clear this wasn't just a team--it was a family. Following recommendations from the hosts and my server, Hailey (apologies if I've misspelled her name), I ordered the octopus, hamachi crudo, and the duck. If it weren't for word censorship, I would use several expletives to accurately--and rightfully--describe how good this menu was. The octopus was grilled perfectly. The hamachi crudo was so delicate, balanced, and flavorful that I ordered it twice. And the duck--my main course--was unforgettable. If I could have ordered it again and again, I absolutely would have. Hailey showed complete confidence in the menu and my selections, guiding me to excellent wine pairings at every turn. Every single bite was perfection--bringing a smile to my face, followed only by disappointment that the experience had to end. The manager checked on me several times throughout the meal, as he did with other tables, and his interactions felt genuine--not obligatory. Each visit came with thoughtful conversation and sincere interest. When it came time for dessert, he shared his top three recommendations. I promptly broke the rules and ordered two of them--despite dining solo--and had zero regrets. I hope this review inspires you to visit Jargon and experience what true talent, artistry, hospitality, and culinary creativity can offer. A perfect evening. My husband and I sat outside on the back terrace and both enjoying a glass of wine to start. We shared the spring pea salad and cheese to begin our meal. He ordered the chicken, despite never ordering chicken out, and he did not regret it! Corn bread and bok choy accompanied his dish and all the flavors were sweet and delicious. I enjoyed the whole trout entree. They de-boned it table-side and it came with potatoes, mushrooms and asparagus. Fantastic and filling dish!! We somehow found room for the pana cota. I really wanted to love Jargon. I have read so many good reviews with many saying they like it, but it's pricey. The server was excellent, offering suggestions on the menu and bringing us complimentary champagne because we were celebrating our anniversary. I also enjoyed a Herb-ie Hancock, which was smooth and delicious, but costly, at $17 for a tiny glass. I ordered the mushroom risotto. It was delicious but the balsamic vinegar was a bit overpowering. My husband had scallops and pork belly which was also very tasty. The ambience was very cool and relaxed, but with so many great choices for upscale dining in Asheville, it is highly unlikely that we will return. read more

My husband and I were visiting Asheville from out of state and made reservations for a Friday night based on the reviews. I am so glad we did! The food and service were outstanding! We decided to share several small plates, which I recommend. We had the Mochiko Shrimp which was very good. Then we ordered the Smashed Fingerling potatoes with Chorizo which sounds simple but was absolutely delicious. 10 out of 10. Next was the Sunchoke Agnolotti, also a winner. Finally the Hangar Steak Tostado which was also excellent. Our server Jared was friendly and informative and had a great personality. When I go back (not if) I will certainly ask for him. My husband enjoyed his coffee porter and I enjoyed my Hunky Dorey Sauvignon Blanc. The restaurant decor is charming and I wish I took some picture to share. This was our first time at Jargon. My wife and I arrived early, about 5:30. We started with the heirloom tomato and blackberry salad, and the ricotta cavatelli. Both were excellent. The tomatoes and blackberries were both flavorful -- not always the case in many restaurants. Wonderful dressing and sauces. We then had the mushroom risotto and the duck gumbo. Again, both were superb. The duck was medium rare, not perfectly tender, but very good. The chef is clearly creative (haha, not always a plus in some places) but also very skilled. The only disappointment was that they apparently couldn't buy or forgot to buy sufficient watercress, so the watercress salad which comes with the mushroom risotto was replaced with a spring mix. Dang. The service? Hmmm...not so good. I would describe our server as politely perfunctory, condescendingly efficient, with all the warmth and patience of a Marine drill sergeant. Another oddity -- the dessert menu, on plain paper, was stained and crumpled; come on now, just print a few more. The owner stopped by while we were dining and was very kind and interested in our experience. We've dined at several places in the Asheville and Black Mountain areas. Had a wonderful dinner at Jargon on a short stay in Asheville. We had the lamb potstickers which were excellent, and the pork loin and duck breast for entrees. Both entrees were well prepared and had wonderful flavor. Dessert was the carrot cake which was really amazing and might be the star of the meal as we enjoyed it so much. Our server was helpful in explaining any questions we hand and the dishes themselves and was always there to assure drinks were refilled or anything else we may need was quickly attended to. The place has a great ambiance with nice lighting and a cool little bar. The waitress was very kind a helpful and all of the drinks that we had were unique and delicious. I was blown away by how polarizing this meal was for the table. We ordered a ton of dishes and there were lots of highs and lows from the meal. The mushroom dish was 5/5. Great selection of mushrooms and sauce it was sitting in. Curry vegan coconut soup was 5/5 good, plentiful size and dense as well. Really impressed with this dish. Fingerling potatoes were 5/5 great. Delicious meal, hard to mess up smashed potatoes Pork Belly Lechon 5/5. Good size and melted in your mouth. Here is where things went downhill... The hazelnut crusted trout is not a good dish. Sorry, no other way to say it. The crust tasted like it was fried in a batter that shouldn't be fried. It should be taken off the menu asap. Two people at our table ordered this and it comes with 6 small fillets. Less than half of the fillets were eaten. I would like to note the restaurant took off one order of Trout for us, which wasn't necessary but very kind. The ribeye was a big miss. We asked for it to be medium rare and it came out nearly blue. They tried to cook it more, but it was doomed once we sent it back. They should have just made a new steak because when the cooked twice steak it was chewy and odd textured. Jargon also gave us a Horchata for our friends birthday. They were very open to conversation about the miss in the kitchen and appreciated the feedback. I've been to Jargon before and will come back. We had the pleasure of going to Jargon for our anniversary. We looked at the menu online and reviews and decided to reserve a table inside. It exceeded our expectations. The restaurant itself is beautiful. Cool decor and setting. When we go back we'll reserve a table in the courtyard. Plenty of paid parking around. It was $7 for 3-4 hours. Service was impeccable. Our waiter was kind and knowledgeable. All other staff was also very helpful and friendly. Now for the food. We started with the hamachi crudo and then had the duck and trout for our entrees. Everything was delicious. My trout was the best I have ever had. Cooked perfectly. Our drinks were delicious - rose pimm's and their version of the old fashioned. We attended a wine dinner here recently and it was delicious! If they ever host another one do yourself a favor and grab seats, it was a sold out seating and it took place in their new space next door to the restaurant.
