Smaller intimate restaurant. Service and food are excellent. The Wagyu filtered and soaked bourbon is an experience that is good even at $30. 2nd time here. Will be back

Mushroom dish

The whole restaurant smells of the smoke from the wood fire. To me it was overpowering and we asked to sit outside. I ordered LOCAL MUSHROOM "BOLOGNESE" which was just okay. Then I ordered a shrimp dish with feta and pine nuts among other things, which was prepared beautifully, wrapped in Philo and tied with a chive stem. Unfortunately it was so salty that I could hardly eat it. I would not recommend Proper, especially for those prices.

Atmosphere

The atmosphere was cozy and what we were looking for in a mountain steakhouse restaurant. They specialize in meat and we could tell. We got a NY strip and it was delicious. On the other hand, the beefy mashed potatoes were very salty and we didn't end up eating very much of them. Our server, Steve, seemed irritated with us and did not provide service that matched with the price tags and "fine dining" label. Would also like to add the bathroom was dirty and not up to the standard of a fine dining atmosphere. Happy for the experience but would not return.

The restaurant needs reservations. The inside is on the smaller side. The food was good but a little pricy. The service was on the slower side but the waitress was really nice. The drinks were on the pricy side.

Perfect texture, beautifully seasoned, and bursting with vibrant, balanced flavors. It's fresh, refined, and shows the kitchen's attention to every detail. Then came the bone marrow, which was an absolute show-stopper. Rich, buttery, and perfectly roasted -- it paired so well with the accompaniments that it felt like a dish straight out of a fine-dining magazine. Every bite was indulgent and perfectly executed. I took my guy to Asheville Proper for his Birthday and we actually enjoyed this place. My guy loved his steak and potatoes he gave it : For my Vegetarians out there : I had the Marbled & Smoked Gnocchi - it was good, But I felt like it was missing something like another type of fruit, idk I didn't like the grapefruit...idk it just didn't give me that WOW tasting factor. Did I eat it ? Hell yeah !! ( I didn't eat it all ) Will I eat it again? No Rating that at : I also had the Mixed Green Salad : I'm not sure if I was starving or that salad was just fire because dang it was gone in seconds. Loved it ! Rating the salad at : I can't remember the dessert name but nothing was left and that's all that matters Rating: I do want to go back and try the " Juicy Marbles Vegan Filet " - I almost got this but I was overthinking it

My bf and I had reservations at 545pm and we arrived early, a little after 5pm. The host accommodated our new time and sat us right away. The food was exceptional. We ordered the waiter's recommendations and wow, we were blown away. Highly recommend the beef tartar, charred bone marrow, and s'mores cookie for dessert.

We sat at the bar, drinks and service were top notch! I normally don't order espresso martinis, but it was a great after dinner drink. My wife ordered the Wagyu Coulotte (MR) with Chimichurri and loved it. I had the Hickory Nut Gap sourced Ribeye (MR) and it was amazing, perfectly cooked. We shared the Tallow Confit Potato Medley, Skillet Corn Broulee and Sauteed Mushrooms. I recommend choosing only two sides as our eyes were bigger than our stomach, but everything was delicious and perfectly prepared - highly recommended! Great ambiance and music too.

We had lunch here on the 4th of July while wandering around in downtown Asheville. The inside is very posh & polished. The staff is professional and very attentive. The kitchen is open air style, so you can watch the chefs grill your food, but that also means the restaurant is a little warm during summer months. My duck tartine would probably have been better served as a sandwich; the toppings kept falling off the bread, the blackberries didn't add much to the flavor profile, neither did the arugula & pickled zucchini topping, although the duck did have notes of a legitimate NY style pastrami, even if the breast meat was overcooked. My wife had the eggplant parmaggiano sandwich, and to be perfectly honest it was the better option, considering price/value ratio. The house made potato chips have a depth of flavor with citrus/acidic touches, blended with black pepper & saltiness. Perplexing that the side of chips beat the main dish in terms of overall balance. My advice to the chef, puree the blackberries instead of serving them whole, and rethink why you added pesto to the base instead of a creamy aioli. Presentation wise, it's pretty, but functionally the combinations don't work.

I came here for my birthday dinner, and it did not disappoint! I got a cocktail that was good, but I can't remember the name of it. We also got the Parker house rolls. These were fine, but I might skip them if I were to go again. This place specializes in steak, and our waitress described each one to us, which was very helpful in determining what to order. I ended up getting the petite tender. It was nice and seared on the outside but tender on the inside. The mashed potatoes were very good as well. I enjoyed the ambiance of the restaurant. It was great for a birthday celebration, and I would definitely go again!

Foraged gnocchi. We wanted to lick the plate because the hibiscus glazed was so good!

The Times is easily my favorite bar in Asheville -- truly a five-star, can't-miss spot.
