Tomatoey salsa. Simple decor. Waitress did not understand my order. Turns out I got Enchiladas Verde not Enchiladas Vera Cruz, but oh well. It was almost closing time and I don't like to complain. It came with 4 enchiladas: one cheese, one bean (my favorite), one ground beef and one loaded with chicken. Excellent verde sauce over top. Very tasty. Food came out super fast! FIVE STARS! I just found my new favorite Mexican restaurant. I travel overnight once or twice a week and try to tryout family run restaurants. This one hits the mark in all cases. Food was delicious and a huge portion. I got mine to go and it came with a full bag of authentic tortilla chips and a good size cup of salsa. Solid Mexican restaurant in the middle of Kansas. Hays is a pretty small town, and there are only a few places that serve traditional Mexican food. Jalisco is one of these places. The employees were warm and friendly, and they really helped establish the authentic environment of this Mexican restaurant. We went on a Saturday night so it was quite busy, but the service was pretty solid taking this into consideration. Our waitress forgot to bring us the check towards the end, but she did a fine job nonetheless, and I even spoke Spanish with her throughout the night. The salsa was pretty standard. It wasn't mind-blowing by any means, but it was definitely a good appetizer to the main course. The chips were warm and crunchy and complimented the salsa pretty well. I ordered some enchiladas, and they were really good! The red salsa had a lot of flavor, and the cheese inside was perfectly melted. The beans and rice that came on the side were pretty okay. The beans tasted as if they were canned. The rice was solid though. A solid variety of vegetables were included in the mixture. My SO ordered chicken tacos, and while they appeared tasty, they were under-cooked, as she said the chicken was chewy, and she didn't feel so well afterward. My SO's father ordered a chimichanga, and he said it was delicious! The guacamole was great too. It was none of that Chipotle crap where it's just crushed avocado. The guacamole at Jalisco's had lime, tomatoes, and onions mixed into it. Overall, the food was solid for the price, the environment was great, and the staff was friendly, and the service was good. Despite a few inconsistencies, the experience I had at Jalisco's was enjoyable. I would go back again with a group of friends or family if we find ourselves again in the small town of Hays, KS. Checked Hays for best restaurants and JD's Chicken was listed #1 and Jalisco's was in the 30's! What a joke. I hope my review corrects this travesty. If you are looking for great Mexican food that is fast, fresh and always amazing Jalisco's is your place. Not only the best Mexican in Hays best maybe all of Kansas. (They have locations in Dodge City and Salina as well) I travel for a living and tend to gravitate towards Mexican restaurants most of the time. I typically am disappointed and look forward to getting home to get my grub on at Jalisco's. I don't do Margarita's cuz fruitiness isn't my thing, but everyone who does drink them says they are the bomb. Strong and tasty. My GO-TO entrees are: Pollo Bandido Carne Con Queso The only thing I would like to see added would be homemade tortillas. But I have been places that offer them and they aren't all that. Please do not be fooled by the "Vegetarian" dishes... The beans are made with Lard and NOT Vegetarian. We only noticed halfway through the bean taco on the combo plate and they wouldn't take it off the bill even though we asked them to take it and didn't order anything else. It is irresponsible to label dishes on your menu "Vegetarian" when they are not, they could and did get someone sick! read more

Excellent food. I ordered the combo platter and the size was more then I could eat. Very spicy hot sauce if requested. The dining room is very typical of this type of restaurant. I love Jalisco's! I order for pick-up and go in to sit down all the time. The food is affordable and delicious! It is the most authentic Mexican food in Hays. They have very fast service, especially if you order for pick-up. I have had a few issues with order correct-ness, however they are always quick to fix it. Their margaritas are gorgeous and strong, so keep that in mind. My favorite dish is Chile Colorado with corn tortillas. Yum! read more

This place is in a dumpy, gas station strip mall style location AND the food is "off the hook" good! The owner is from Jalisco and the dishes reflect that. This is no gringo cheese and sour cream Americanized restaurant! I had the pork tacos special and it comes local style - with white onions and cilantro and I then asked for the lime slices. The rice and beans comes on a separate place which is nice. There were 2 young men running around serving and they are polite and fast. The decor is pretty cool for a blue collar place too. If you get horchata you are allowed one FREE refill which is unique and welcomed too. The table salsa is crap so I asked them if they had a roasted tomatillo salsa maybe with Cascabel peppers (native to Jalisco) and they brought me a spicier, roasted salsa right away. The price is fair for the great quality and you will not leave hungry. The gas you get later is mild which also shows the food is of a better cut. Muy sabroso! read more
