Food arrived very quickly, though we ordered no appetizers. The tonkotsu broth was rich and velvety in texture, but more like a mild umami in flavor. The marinated egg wasn't brought up to temperature with the broth -- a little cooler than room temperature, with a medium oozy yolk. It felt like the marinade penetrated all through to the yolk -- it was great! I welcomed the novel choice to use red onion over the usual scallions.
