As a non-vegan, I was very impressed by all the dishes! The sauce for the carbonara mimicked the creaminess and cheesiness. I wasn't the biggest fan of the "bacon" / "guanciale" - it was a bit too squishy and needed to be crisped up a bit more but that's a personal preference. Pay inside when you are done by informing the staff of your table number. This was one of our top 5 favorite places on a two week trip in Italy.
