I was lucky enough to be part of a group of travelers who had a special wine & cheese pairing at Dall'Albero at the end of August. The owner personally talked to us throughout the tasting, telling us about how they traditionally culture their vegan cheese, what uses it's best for, etc. We had a great assortment of hard cheeses, softer cheeses, spreadable cheeses, and appetizers made with their cheese.
It sounds cliche, but there wasn't a single cheese I didn't love. Sure, I loved some more than others. The yogurt-style spreadable curry & chive cheeses were amazing! Great on bread and veggies. These would be great to cook with, too. The black pepper coated hard cheese was tangy with just the right creaminess. The ricotta-style cheese was lovely spread onto bread with a little balsamic drizzle and would be fabulous to cook with.
I can't say enough good things about the team there. They clearly love what they're doing. My only complaint is that they don't ship to the US yet! But they did discuss how many import laws there are to get through here so I know it's something they're working on and would like to do.
