This might be just me but I prefer getting a whole link unsliced. Taking a bite out of it to feel the casing snap under the pressure of my teeth. And the snap today was extremely satisfying. Something that I need a lot more in my life is Brunswick stew. Scott Brothers BBQ's is a little different. Topped with a chili crisp that added an extra layer of spice and aroma. Pieces of all the meats swimming in the stew. And getting surprise bites of fried garlic from the chili crisp. The perfect item to warm you up on a cold day. Honestly, I'd eat this even on a scorching hot summer day. Man, a perfect stop before the airport.

Yesterday (Saturday) I ordered pulled chicken, pit beans, and cornbread with the coleslaw on the side. I hadn't eaten since breakfast and was famished. The pulled chicken was tough, dried out, and chewy, I tried saturating it in barbecue sauce but that didn't help. I ate it one piece at a time with lots of chewing to soften it up. I made it three quarters of the way through before surrendering. The coleslaw was fine. Then I tried the pit beans. The use of pit here is a misnomer, unless they're named after the pits of Hell. The old recipe was a spicy version of classic New England baked beans. Now I love beans. Beans and eggs for breakfast. Beans and franks for supper on a Saturday night or at a church supper. The side of baked beans that was an integral part of a Full English or Full Irish Breakfast was a welcome part of many business trips. Pit beans are not those beans. No, these are a different species of beans. Whereas normal beans are soaked in water to soften them up as a normal part of preparation, pit beans seem to be soaked in vinegar. I certainly don't mind vinegar (a mild solution of acetic acid), especially in a good vinaigrette salad dressing, but this level of acidity was sufficient to remove rust. Trying to eat these beans was like trying to ingest sulfuric acid. I had one taste. Nope. The cornbread was fine. This is northern-style corn bread, made with sugar. If you mix the sweet barbecue sauce and spicy barbecue sauce in a fifty-fifty ratio you get a decent I informed the truck manager of my results and suggested execution for whoever came up with the recipe. All of the workers are so sweet and welcoming, and keep things moving with a smile on their face!! The woman that was cutting the meat was so knowledgeable and helped with our questions. She was really good at guiding what we need for how many people. She also really took her time picking out the best slices for us and even cut the dino meat off the bone so it was easier to eat. When doing so she even said "I really want you all to have a great experience here." We pretty much tried a little bit of everything and I can honestly say (sides included) it was so unbelievably delicious. There were multiple options between being made to eat or made to be refrigerator. Another option I can't remember now. The chicken cups are MUCH bigger than expected, I had to split it into two and eat the second half the next day as leftovers so it's easily shareable. The chicken parm cup was nice and hot but the pasta in the middle was cold after the very top layer so I actually had to wait until I got home to heat it up myself which was disappointing. The taste however is REALLY good! I would suggest the pasta be cooked seperate Lu from the chicken because I think the pasta was cold because it was cooked together maybe? I would love to see more options on the menu like chicken pesto pasta.
