I stepped into their Round Rock location to get some work done last Wednesday, and I thought Instill had a nice vibe. They have food options, teas, and plenty of espresso drinks. I was overwhelmed by the sheer number of options on their menu, so I ordered a drink based on the name: Ocean Latte. It was mandatorily served iced. I don't know what I expected, but the butterfly tea, which I wasn't fully sure was a real thing, was sitting on top of my latte once it was served to me, and it looked like they crushed a Smurf and put it into my latte. Once I mixed all the elements together, the drink was pretty decent. Nothing world bending, but a fine latte. I liked that the cup had a curved bottom. That didn't tip the scale here, I always find it fun. I liked the different types of seating at Instill. One for everyone's vibe. I sat at this raised bench. Some drinks have adaptogens in them that support natural focus and restoration. I ordered the Ocean Latte and Kimchi Avocado Toast - both extremely unique and tasty! The soft sourdough bread comes from Texas French Bread. Butterfly pea flower gives the Ocean Latte its blue color, but the flavor has a subtle nuttiness and strong caramel profile. Friendly staff members informed me that they host events, such as their recent Office themed trivia night. The menu includes wine and beer on tap so it could easily go from a day to night hangout. The interior was spacious with lots of people studying or doing solo work during the day. Around Valentine's Day there was an added option to add a mini-dried flower bouquet to my latte. So cute! Such a cute place! Workers were very kind and knowledgeable. Their coffee and syrup seems well sourced-- almost all ingredients are organic, and beans are roasted in-house. The only reason I had to give it 4 stars is because I wasn't a huge fan of their oatmilk lattes, which is the only thing I tried. I fully enjoyed their Lion Latte Iced! It has that just right combination of salty and sweet. I am a 4 shot espresso minimum person but went for 3 to really enjoy the flavors. This morning my hubby drove by a mobile coffee shop that we haven't seen before and we love supporting local/small businesses and Im always down to try some new yummy comforting coffee. They are mobile, so to find out where they are currently stationed you can find out on their instagram page or their website where you can order online and schedule to pick up at the location and it will list the location and hours of operation for you. They are currently at 3705 Breckenridge (Colorado Crossing) until 12pm, I believe. They have a van thats green/white and has their name INSTILL COFFEE. They have special Artisan and Organic coffees with added boosts such as Lion's mane (details in photo), which is the one I chose mainly because it had caramel and the added boost is for the mind. Kind of like the power smoothies but in coffee! It tastes delicious and Ill have to wait and see if my mind benefited . The Barista is very informative and friendly. Serves your coffee with a smile and does a great job with the coffee. They do have other milk options in case you're not a fan of whole milk or can't have it. Along with the coffee/tea, they also have toast on their menu. I definitely recommend this coffee shop and I will take hubby next time for him to try it. read more

Interesting coffee truck. Haven't seen a ton of them around but they always tend to have good coffee. Instill is unique in what they put into their drinks, from herbal supplements to ghee, which is interesting to say the least. I don't think it really impacts the taste overall but they also have your normal drinks too. I tried a Lion just because I was looking through DoorDash when ordering and it's definitely a strong caramel latte, which was the perfect pick me up. Not sure what the lions mane stuff was but like I said didn't notice. Probably would just stick to a normal latte next time if in the area. read more

I'll set the stage, it was (finally) a rainy gloomy morning and all I wanted after my workout was a coffee not made by me. Cue instill coffee being right outside of the gym at my apartment complex. I've eaten here before when it used to be called coffee theory & I do believe it's the same menu. Anyways, this time I got the long buzz latte with almond milk. First off, the espresso didn't taste burned and the almond milk was actual perfection. You know how at Starbucks it tastes a little fake? Not here!! Previously I had the not so simple avocado toast and the kimchi avo toast. I preferred the not so simple because it had more balanced flavors versus kimchi which was too tangy for my taste. Saw this great food truck walking my dogs this AM. I had gotten them before, but hadn't tried their avocado toast. I got one banh mi style, and it was delicious. Great way to start my morning. Their long buzz coffee is also pretty silky and scrumptious. I love me some coffee, and their coffee is one of the best. Coffee, Toast, and Local? Sounds like a winner! Our apartment was so kind enough to host Coffee Theory one Sunday morning, and it was just what I needed to start my morning off right. Sometimes that's all you need to make your day. Atmosphere: Local food truck style, you'll get the friendly local Austin service combined with the mom and pop style of a local city food truck. Always like when places show the local love. Food: Coffee or toast, maybe both? I highly recommend any of their coffee's, as they do their own name justice. Per the service's recommendation I chose "The Hulk", a cleverly named drink for their matcha/cold brew. With a combo like that I had to try it. Certainly different, tasty, and most of all it'll give you that good morning boost that we all need once in a while. Service: Friendly service, the two owners were more than happy to tell me a bit about their background as well as recommend a drink to me with no issues. Overall: Coffee Theory was such a delight to have to start my morning off. If you ever need that hit of the good vibes and the good coffee to get you started off please check this out.
