Yet again, I've been under a rock. I discovered this after my 7/1/18 visit. The enthusiastic counter person at Indi Chocolate said they've been around for eight years. They too were part of this Pike Place Market expansion. The baked goods looked interesting, but the laminated layers looked tight. Besides I'm here for high quality dark chocolate. Indi Chocolate are all about crafting micro scale bean to bar unique items. There is onsite production where I got to peep at the conching vessels. Cool! The retail shelves were filled with items to make custom elixirs, purchase nibs and beans, unique finished single origin bars, and items like soaps, lotions, lip balm and such. I did try some orange chocolate lotion. Luxurious, but unsure if I wanted to emit scent like that. Guess it depends on the situation. lol I ended up selecting a Ghana bar and bark garnished with candied ginger for later. I've had drinking chocolate, but never sipping chocolate. I sat at the counter to ponder this indulgent serving. Tiny spoon to not overwhelm. So creamy, rich, smooth...like a warm pot de creme or pudding. Consuming this pretty much took up my sweet quota! Indi chocolate has a nicely laid out space to showcase all the amazing chocolate related items that they offer. The space is large and very inviting for anyone to just browse and, in some cases, try out some samples that they have out there. The space is a little hidden..so it took my a while to find it..but it's right next to the entrance of the waterfront parking lot and sort of between the park and piroshki store. I had a chance to smell some od their chocolate infused tea, chocolate infused lotion, chocolate infuses lip balms and some more..and I definitely enjoyed opening up my sense to scenting all these things for sure. Overall, a nice experienxe to ezpkore this modern store. It's a little pricy though, especially for the classes they offer...but I know if I have a visitor visirng Seattle for the first time, I would want to take them to visit this place right after their visit to Pike Place market, too. read more

ODD SERVICE and OVERCHARGED!! I wanted to support small businesses during the pandemic so I stopped by Indi Chocolate on a quiet morning. I got a small drinking chocolate for $5 and an Indi Chocolate chip cookie $4: I've heard good things about their cookies so I decided to give it a try. The guy who worked that day gave me a cookie that sat separately from the rest of other cookies on the counter and said " we've recently changed the recipe, this is the OLD one" . I was confused and he continued " It was like 2 DAYS AGO, I would eat it " !!!! Then he processed my order in Square and asked me if I would want to add tip, I said 15% . I waited for him finishing make my drink and asked him to exchange my cookie to the new one- the one they supposed to serve for customers who pay for it. He gave to me a new one but said " I can't take the cookie that I gave to you back, you can keep it or put it to garbage ". All right, I understood because the virus thing so he was cautious about the hygiene. But was it right to sell the old cookie to a customer? I was nice to support their business and more than that I gave tip for such a small purchase. Eventually, the service was really odd and the products weren't good. Literally, I misread a sign and thought we were heading to a lower level of the market... it brought us down to a fantastic view of the water, but no "lower level" of the market. My mistake. As we were heading back up to Pike Place Market, I spotted Indi Chocolate's signs for coffee. Not sure what it was that drew me in but seeing it from the elevated level, I could see the beans and their centralized coffee station, I was into it. I asked my husband to stop for a java fix and he was totally on board with feeding my habit. Love him. Anyway, my husband grabbed a seat at the elevated high tops off the side. I headed straight to what I thought was the ordering area. It's a little unclear because of the circular shape but that's no criticism because the gentleman I encountered made eye contact and was happy to help me. I asked for a drip coffee, my go to (less calories) and I second guessed myself asking what they are known for. He started describing this delectable sounding chocolate latte that he was in fact drinking. I told him was a little more calorically dense than I was looking for so I stuck with my original order. That being said, he still told me all about the beans they have. They purchase and roast the beans themselves. That's what I'm talking about Seattle! I went with high expectations for coffee but this still impressed me. They order coffee beans from various countries and describes each one in detail. Love that! Then they roast them onsite. They're not only making coffee but chocolate, obviously. They even have a super cool chocolate stirrer that goes for 12 hours I believe to fully breakdown the beans. They give you samples from the puree. Delicious. After he described to me the beans, I knew I needed to buy us some chocolate. Everything they serve is dark chocolate. My husband is milk chocolate kinda guy so I asked, what is the sweetest small package sample of chocolate you've got? I'm embarrassed to say I don't recall where the bean was from specifically but I'm fairly confident it was Vietnam. These little bite size pieces of chocolate rivaled the chocolate I've had while living in Western Europe. It was that good. Damn good. I really don't want to eat chocolate again unless it's Indi Chocolate quality. IF you're a coffee fiend and like a quality cup, stop in. If you're a chocolate fiend and want a delectable bar- don't miss this place. I think I encountered the owner but the gentleman's passion for the beans was remarkable and unmatched. While very pricey, they do great chocolate! We've only tried the brownie (ok) and coffee drinks from the cafe area but it's their chocolate bars that we love. I had the iced drinking chocolate that was topped with the yummiest, scratch-made mole marshmallow, and the fact that they torched it right there before adding it to the drink made it that much better! We really wanted to like this place. Instead we ended up being entirely underwhelmed. We were at pike place and happened to see a sign for indi. We are avid dark chocolate/local chocolatier lovers so we immediately headed in. Employees working weren't exactly friendly and just kind of started at us. We decided we wanted to try one of each bon bon/truffle they had on display. They had five choices: sea salt, rose, passion fruit, white chocolate raspberry and orange. The sea salt was the only one we finished. The rest were either lack of flavor (rose) or wayyyy too much flavor (passion fruit and orange). Once you fine it, the location is great, you get a great view and you're right on the water. There's lots of people watching to be done here, and it's a lovely space to be on a bright and sunny day. The staff at Indi Chocolate is patient, friendly, and knowledgable. I went in knowing nothing about the difference in the chocolates, and the staff was more than happy to assist. They worked with me to figure out my preferences and let me try some samples. In the end, I walked away with several bars (that I ended up LOVING when I got home- I should have bought more!), and I even brought my local friend back the next day to try some more. The store offers a really cool variety of gifts besides chocolates and baked goods, and I was dumb enough to not try the sipping chocolate while I was there. I love chocolate and I love coffee and Indi Chocolate definitely comes through with them. I've heard many good reviews on their amazing coffee and presentations, so I had to finally stop by. Located in Pike Place Market in the newly waterfront complex. Indi Chocolate is making chocolates and coffee together. When I first walked into the shop, I was greeted by the staff (4 to be exact, they had training). The lady that was helping me on choosing which was best to try out, she recommended their most popular "indi chocolate mocha", I was sold! I decided that I wanted to add in their homemade marshmallow to make it a little cuter for the picture ;) and was curious on the texture. While waiting for my mocha, I was standing at the pick-up counter and was listening on how to make latte art (something I was always curious to do). The gentleman that was training the girl was very knowledgable about the techniques on how to make a latte art (I was very impressed). This is something you don't really see most often on the line, which I found very unique. As the barista was making my drink, she brought over the 8oz cup and hot milk over to me and started to pour the hot milk into the cup while making the latte art. She topped it off with the homemade marshmallow while sizzling it with a torch. Love the presentation of my drink, the flavor was fantastic. My daughter and I came in here looking specifically for sipping chocolate. We got 2 orders of it, and 2 croissants. Total was around $22. The inside of the building seemed like it should be an amazing experience. Its clean, and modern looking, with enough wood and stone to feel warm and comfortable. We were very excited to sit at the marble counter top so my daughter could watch everything going on. There's a space directly behind the area that you order from that also gives you the ability to view some folks making more intricate chocolate things (I assume), in a production area. There's also 2 pots of "tester" chocolates to help illustrate the different flavors of different beans in different regions, but they weren't stocked with spoons, and I'm with a 6 year old and not trying to be a bother, anyway, we didn't test the pots of chocolate. I did look enviously at all the spice rubs and gift boxes and WHOLE BEANS offered for sale. I'll be back for the beans, without a doubt. The person running the counter definitely had the air of someone who was doing their best, but was being foiled at every juncture, and was doing their best to truly do everything they possibly could, but the patience was escaping them. They were a little curt when we ordered, but with courteous efficiency as opposed to rudeness. The croissants we got were not fresh, in any capacity. But they were sufficient--we weren't there for the baked goods. Unfortunately, it took the barista multiple attempts to fail at making sipping chocolate, before the same person that took our order for us shooed them away and did it properly. It became abundantly clear why the person that was working, by themselves, with added obstacles was struggling. There were multiple employees in the building, so there wasn't a good reason for only one to be at the customer service area at 3pm on a Saturday in pikes places new market area with what I can only hope was a trainee. As a customer, I had to ask for items to be remade, that the trainee should have known were burnt, and shouldn't have been served. It is still very worth the trip for this treat. We had a fantastic time. I will tell anyone that has read this far that, if you're going to get the sipping chocolate, order it for there. There is considerable size difference in the carry out cup v. The 6oz rocks glass filled to the brim that you get when you order for dine in. And, the 3oz carry out cup does not have a lid. That's a LOT of wasted chocolate that you're not having and then struggling to protect while tourists are throwing elbows your way. read more

Yum! I was on my hot chocolate binge and made my Seattlite friend promise that we would come here when I visited. I'm so glad we did! Indi is a bit hard to find if you are new to the Market area. It isn't on the same level as the main marketplace but actually down a level, and they share a space with a few other eateries. I ordered a hot chocolate (drinking chocolate on the menu) with a scorched marshmallow (100% worth the extra few bucks) and my friend ordered a mocha. The hot chocolate was super rich and delicious, but I thought the marshmallow was definitely the star. I loved that I could taste the burnt, toastiness of the marshmallow. :9 I also picked up a vanilla cocoa infusion bottle for the friend I was staying with. Best brownie I've had ever, and I've had a lot of brownies. They have a cool mini chocolate making demo where they give you a quick lesson on "bean to bar" chocolate and then you can pick any assortment of their chocolates and coffee as you'd like! Most of their staples are based on chocolate from Ecuador, but there are also options from Peru and Ghana coming up. I tried their single origin brownie with a cortado, and it made my weekend. The brownie has a unique texture and because it's single origin, it has a very fruity/distinct taste.
