I checked out Ibendoo Ramen the other day as I was in the area, and it was soooo good I brought my husband back two days later! So many great broths, meat and veggie selections, and you can swap out broths no problem. The first time I had the pork belly ramen and added sprouts and a side of kimchi, and the second time I had the Niko Soba with teryaki pork and added kimchi and an egg (that particularly ramen didn't come with egg). There are small fees for the adds, but that's pretty understandable, and the list of things you can add is fantastic. The soba noodles are apparently made of farro, not buckwheat, and I absolutely loved them - great texture, not grainy like buckwheat, really great flavor. We also got the takoyaki octopus balls, which were perfectly cooked and really tasty. We had great, fast, friendly service. Love the Sapporo on tap too, plus other beer and cocktail options. I've been wanting to try this place since it first opened. I ordered takeout and when I arrived the worker messed up my transaction. I told her $13.00 on debit and then I'll do $20.00 cash (the total was about $23.50 and me and my mom were splitting the bill so she wanted her change). She nodded and said okay but then used the whole $20 bill and did the rest on card, we ended up having to redo the whole thing. I didn't mind that much but it was a bit frustrating that she didn't listen the first time. I ordered the kimchi Ramen, and the pork bun. Overall I think the food tasted amazing but the portions are way off. The ramen was about $10.00 but the portion size is too small for that price. There was about 4 tiny pieces of kimchi and pork in my ramen which was quiet sad. The pork bun was beautifully presented, the buns are made perfect and soft. The sauce has a perfect consistently , but the only negative thing is THERES NO PORK! It's like someone sprinkled little bits of pork , it didn't even cover the bun. One piece of lettuce on it.... Salem doesn't really have any Ramen places, you normally have to travel to Portland for some good Ramen. Ibendoo is newer, and I was very impressed with the quality of their food. For this only being your 6th day, you are not off to a good start. Most disappointing $56 I've ever spent. 1. Food was good, but average. If it were just for the food I would come back. 2. Service was great. Waitress was attentive and polite. She did her job very well. 3. Appetizer. We ordered the short ribs - $6. In all there was about 4 bites of dry, over cooked meat. I do not recommend. 4. Ramen. I asked if I could substitute the teriyaki pork for the pork belly. The waitress submitted my order then came back to let me know that there were no substitutions, but for $1.25 I could add the pork belly. I ended up settling for teriyaki pork minus the teriyaki. When my ramen was presented to me it had ONE bite of pork belly on it. The bite of pork belly was no thicker than my NAPKIN! When I questioned the waitress she stated she herself paid for the "up charge "... I asked if this was the normal serving size for the up charge. Yes it was. $1.25 gets you a single bite of thin pork belly 5. Owner. I had asked to speak with the manager regarding this policy. I pointed out that I was disappointed in the no substitution policy and pointed out that it was not stated anywhere in their menu. I also questioned the serving size of the pork belly, he defended the serving size. I gave praise to my waitress for HER efforts at customer service. The owners response? "What do you want me to do about it?" WHAT DO I WANT YOU TO DO ABOUT IT?!? Are you kidding me? How inconsiderate. I have never seen a worse representation of customer service ever. I said, "As a patron that ate the meal, I will just pay my bill and leave." I'm torn! I love ramen but I can't support poor business practices such as these. Felt straight from a container to the bowl. Meat was very small! Smaller than a hockey Puck. I also ordered the takoyaki super yummy but do not recommend the Kara-age chicken smaller then the pork in the ramen and for 5$ not worth the little nuggets. The food is decent here. Most of the the orders come out good, but our last order today had the rice undercooked. The atmosphere of the place is nice, they put a lot of effort in all those spoons on the wall. The real issue I had was the service. The person at the counter turned really rude after not getting a tip for a to go order. It's was blatant, and really want necessary. I think people are forgetting what a tip is for. It's supposed to be for being a good server, being attentive to the customer, and putting in that extra effort. For you to expect a tip for grabbing a bag from the back to walk 2 feet to throw it on the counter is a bit entitled. I think it may be some time before we come back if we do. read more

Went for the first time in April and have been going back ever since. Customer service is amazing. The food was fresh and I had leftovers! The first time I went with one of my good friends, she tried the buns and liked the flavor. A few weeks later, I went by after a hard day, I was grieving the loss of the friend and this was the last place we had eaten at together. Sooooo. I've never had "real" ramen before. My experience has been with shin or buldak supercharged with shoyu, Sriracha, lime and Thai basil. In other words as good as it gets at home. So I wanted to be blown away and impressed by this ramen. That wasn't the case unfortunately. Like I said, I've never had the real stuff but I wasn't impressed. The ramen I got was good quality and quantity and I can't say it tasted bad it's just that I didn't realize that the stuff I make at home is much better. Good ramen - I got the crispy chicken ramen bowl. I ordered take out and the way they package the ramen is pretty ingenious - they have a container that keeps the broth apart from the noodles. I think some of the add in ingredient prices are a bit steep, like $1.75 for half an egg? But adding nori for just a dollar was worth it for me. I also got the octopus appetizer and it was tasty. The potted tea plant was cute, but not sure I liked the whipped topping and Oreo cookie crust in my tea. Think I'll skip the potted tea, but it was worth trying. Amazing spot in south Salem for good noodles. My wife went in without me and posted pictures and I had to make her go back a few days later with me. They have lots of options for Udon and Ramen bowls, I got the shredded pork belly with and it was really good. Also got the Takoyaki balls as an appetizer, served super hot and fresh, after they cooled down a bit the octopus was cooked perfectly, not rubbery at all, good flavor with the dipping sauce as well. This place is good, however I am disappointed to learn that the vegetable ramen that is made with a miso base is in fact, not made with a vegetarian miso base. I was trying to distinguish the broths in my order from each other so I called and was informed that both of the broths (one tonkatsu & one miso) contain pork which is pretty misleading since miso paste is just soy. The staff was accommodating, saying I could come back for a vegetarian base, but I can't help but think how many vegetarians, Muslims, etc. have had a dish they assumed was meatless because of the ingredients and unknowingly ate bone broth. read more

Finally, excellent ramen right here in Salem! I eat here about once a week. The noodles are cooked just right and the broth is both rich and balanced. My favorite is the fried chicken ramen with a half portion of the spicy sauce. You have the option to build your ramen from scratch and gluten free noodles are an option as well. Pricing and portions are perfect. Very friendly staff and perfect for a quick lunch. The specialty drinks are really good, especially the sake mojito!
