I had such a lovely experience dining at Ibendoo Ramen last night with my friends and family for my birthday celebration. The waiter went above and beyond to ensure our party of five was well-attended, making great suggestions and providing prompt service. Honestly, his kindness and attention to detail was on par with service I would expect from a more exclusive establishment. Thanks for making our evening special. Everyone in my party opted for the soba noodle dish, except for me. While I'm sure theirs was delicious, I really enjoyed the Char Siu Tonkotsu ramen dish I ordered. The soup had a rich and flavorful broth, the noodles were done to my liking, and the slices of pork were surprisingly robust. I thoroughly enjoyed my meal. The dining room isn't a large space, but the restaurant has done an excellent job designing the layout so as to maximize seating options. The tables are roomy with benches along the walls, and very comfortable and sturdy chairs everywhere else. The lighting was a little bright for my liking, but that's to be expected in a strip mall retail space. Even though I can't give them any more stars in this review, if they could refine the lighting I'd find a way to do so! Place closes at 9pm, we came in at 8:35. Booth seats were empty and no one was in there. We asked if they would be willing to serve us. They smiled and said yes, but politely reminded us they closed at 9pm. They served us all three ramen, 6-pieces of gyoza, and two buns in no time and we made sure to eat as quickly as possible. We also helped close out our bill sooner vs later so they could continue their closing process. Their ramen and food speak for themselves but their service is something we will always come back for when visiting Salem. They could have had an irritated attitude and given us a cold shoulder but they didn't. They could have given us half-ass food but they didn't. They made us the best food they have to offer with great service and we appreciated it tonight. read more

I had a couple of them that were soggy and not cooked. The ramen was something to desire. The noodles were decent and some pork pieces tasted good. But that broth. Yuck. Ibendoo is okay. I'm literally mixed about it. The hubs and I had a work trip to Salem and had a taste for ramen. We have actually frequented Ibendoo once before but couldn't remember the outcome. This time we thought it was decent but nothing to write home about. I had the veggie ramen, but there were way too many sprouts and not as much seasoning as I generally prefer. My hubs had the vegetable stir fry ramen, and he wasn't impressed; he stated it gave cup-o-noodles ramen and not the homemade vibe. We had a couple of friends order as well-- the consensus was that is was decent. Nonetheless, we did order the shrimp fried rice and jalapeño poppers which were tasty. The rice was good, but we only received 2 shrimp on the side; who does that? We ordered shrimp fried rice, why wasn't there shrimp throughout the entire order of rice? That was off putting and cheap. Tasty but needed more. Overall, this place was decent but could have been better. I always take into account that the order was take out, but I don't think that had anything to do with receiving only 2 shrimp and the soup needing more seasoning. Can't offer thoughts about ambiance nor service considering we ordered via DoorDash. My rating is (2.7) stars but I'll offer three stars this time around because there isn't a point system, but wishing them well! read more

Ibendoo Ramen was the first real ramen restaurant I've tried. Before coming here I had really only had packaged ramen or cup ramen, and I liked it enough but didn't get the fuss around it. Ibendoo made it all make sense, it's my favorite restaurant in Salem by far. I've tried plenty of ramen restaurants since then, including some that have won awards, and Ibendoo is still my favorite. I've been coming here on average about once a week and the staff is always super attentive and quick, they even started to remember my order when I come in. I've never had a bad experience here, it's remarkable how consistent and delicious the food here is. The cleanliness was also not great. The booth seating is all tore up and the walls are gross with splatters. No one wants to look at gross gunk splatters while they eat. A lot of the "clean" tables had crumbs so that was gross as well. Best ramen place ever. We just moved to Salem about a year ago, from Portland. The hubby and I are foodies, lots of yummy food at Portland, no doubt. This place blows every other food establishment out of the water. Now, I only want take out from this place, we don't even bother with other places. I have friends who want to fly in, from out of state, just to try this place. Hubby's fav is the charshu (apologies I have no idea how to spell that, and I'm too lazy to look it up, lmao). The fried chicken stir fry is my fav, along with that heavenly chicken bun. I don't know who is cooking in their kitchen, but they HAVE to be angels or something. The place is spotless, too, not a spec of dust. I'm pretty sure there's an angelic host hiding in human form, running this kitchen. This food is the last meal I want to eat before dying. 1.75 stars. This is the second worst bowl of ramen I've ever eaten. The worst was actually a couple of weeks earlier in Boise, ID. So a spot in infamy was narrowly avoided. So what's wrong with the ramen? Really it's the broth. A previous reviewer described it as tasting like "dirty water" and I'd have to agree. The process of making tonkatsu ramen is rather complex and time intensive and I'll just say it seems they have skipped a few steps in that process to make this broth. I will say that at least they try to bring ramen to Salem which is reason alone to give them at least 2 stars. All that said, I can't imagine going here again. read more

I give it a good 4-1/2 stars on taste, and a bonus half star for the highly entertaining duo in the kitchen whose falsetto singing, wild laughter, and constant flurry of witty (although sometimes salty) commentary kept us in stitches. Seriously, those two should have their own show. We particularly liked their rendition of "Down Under" by Men at Work. But as for the food... we ordered a wide variety of appetizers, and I found the sweet potato fries to be particularly memorable. I loved the big salt crystals. The dish was perfection. I think I raised my expectations a bit too high for this ramen shop... I came by for an afternoon snack and was excited to see all of my favorite Japanese appetizers. I decided to get some Takoyaki, Karaage, a Char Siu Bun, and Potted Thai Milk Tea. I'm not sure if it's because I called my order ahead on the phone, but a lot of the food was underwhelming. The takoyaki tasted pretty good, but each ball was pretty soggy and it barely had any bonito flakes on top. The karaage was more like popcorn chicken. It was small pieces and weren't very fatty. The Char Siu Bun was okay. The flavor was good but there was more bun than char siu. The Potted Thai Milk Tea was creamy, but it didn't taste like Thai Tea... It tasted more like regular black milk tea. Overall, all of the appetizers had a flaw. Not sure if I would come back since it was such a lukewarm and underwhelming mid-day snack. read more

Update from 4/5/24: some changes but still freakin' awesome. The menu has been simplified and still contains all our favorites. We ordered chicken kara-age, gyoza, char siu, and kimchi ramen which we customized. Please note: the char siu is not the chilled, lean "pink meat" from Chinese restaurants (which I also love); this is marbled pork that is still sliced thin, but it is marinated, roasted, grilled, sauced, and served hot. It is succulent and rich without being heavy, spicy without hiding the pork, luscious without being fatty. You can get it as an appetizer AND you can add a piece to your ramen or stir fry. I come back for this. The ramen broth continues to be complex and delicious. It's the perfect animator to the noodles. I got kimchi ramen this time and it was good medicine! Adding pickled ginger and radish complimented the kimchi rather than clashing with it. Customizing my bowl (no fishcake, extra pickle, etc.) was no problem whatsoever. Service was great, as usual, and they continue to have a full bar as well as Fresh Squeezed on tap. Prices were very reasonable. Ambiance: it's a casual place with outstanding food and the cheerful vibe of a good noodle joint -- a little clink and chatter, but you can still have a conversation without raising your voice; smiling staff who are hustling but not projecting a rushed feeling; low key Gen X music only noticeable in momentary lulls. We were having a rough day and it was overcast, so Ramen sounded so good. This was the one real ramen shop I found in the area. The service wasn't the most friendly but the food was fast and delicious. My brother ordered a Char Siu bun to start and loved it, the bun was soft and delicious and the meat was tender and very flavorful. I then had niku soba ramen and added Kimchi. I also added some of their hot chili sauce. The pork was awesome /!; the overall flavor (especially with the hot sauce and Kimchi) was great, my one knock was, there seemed to be a lack of broth, it was probably the least amount of broth I have had in a Ramen.
