Bring a group of friends here, order like 10 rolls, and sit for two hours catching up. The ambiance is tranquil and the servers are friendly without popping up every minute asking if your food is ok. On this day I had to take it to go, but the Rock 'n Roll was particularly delicious and would be a great option for somebody who is just getting into sushi. The best Japanese food I've had in Salem! Delicious everything that I've had. Especially the teriyaki chicken, I like how it has zero fat.

This has long been one of my favorite local stops and the spicy chicken yak isobar has been my go to for years. Stopped in for dinner as we were running errands, our first time to dine in since pre-pandemic and while the staff and service were every bit as good as I remember, the yakisoba has changed. The flavor was much more vinegar forward than the smooth yet spicy flavor from before. Not sure if this was a supply chain issue or a permanent ingredient change but it is a markedly different taste. read more

Was looking forward to my dish as I entered. It looks much nicer on the inside. I ordered the yakisoba and requested extra cooking time on the noodles as I like them a little browned. What I got was a nice looking dish with noodles that were swimming in sauce. Luckily their teriyaki sauce isn't very strong so it didn't make the dish inedible, but I'll take it home and put it in the frying pan for a bit longer. Hopefully it'll be better. I may give them another shot because the price is reasonable, but we'll see. read more

I love this place! My husband and I eat here at least once a month if not twice. The staff is always kind, helpful, and attentive. The sushi/chicken bento/gyoza/miso soup are always delicious. We have tried multiple rolls here and are never disappointed. I have eaten at other sushi places here in Salem and they do the same basics, but Fuji always stands out and keeps us coming back. It beats any sushi bar that I've been to in all of Washington, Oregon, and California. I don't know why this place isn't packed on the weekends... but I do benefit from it being not ever being busy. I'm seated immediately every time, including lunch and dinner. Service is genuinely friendly, food comes out quick, and most importantly, everything is delicious. Prices are less than what you'd pay in most sushi bars in major cities and on par for the Salem area. The standout roles for me are the rock n' roll, Oregon roll, rainbow roll, and crazy monkey. My first time here was a success! I went during lunch time in which they served their lunch menu. Out of the few selections they had, I went ahead and ordered the Teriyaki Chicken plate. Boy was I not disappointed! The chicken was nice and tender and was not completely drenched in teriyaki sauce. The steamed rice was underneath preserving its warmth. And let me tell you, the portion size could have easily been for two but I didn't eat lunch or breakfast so I sure as hell scarfed the whole thing down :P Overall, food was delicious and service was great! First, I love the folks that run this place. Super nice, friendly, and seemingly enjoying what they do. Makes for a great atmosphere. Next, the sushi is fresh and appetizing, making for a great treat. But, the real hidden gems are the lunch specials: either the chicken curry, or the Teriyaki plate. I would rate this as a five-star, but sometimes the curry is a little too soupy, has too much onion, and lacks potato or carrots. All in all, though, great flavor profiles on all plates! read more

Sushi in Salem, Oregon? I had a hard time trying to find a decent Sushi place around the Salem area, as we were coming back from Crater Lake Nat'l Park. I'm glad I found Fuji, as we were pleasantly surprised with the quality, price and service. I ordered Salmon Sashimi, Rainbow Roll, Spider Roll and Spicy Cream Salmon Roll. The rolls were really good, the Sashimi wasn't as fresh as I've had in other parts of the U.S. (mostly California), but it was passable. The rest of my family members Bento dinners, and still had a bunch of left overs to enjoy. If I'm ever back to Oregon, I'd definitely come back here. read more

Got the salmon poke ball. Good proportions! Perfect amount of fish and rice. Sometimes restaurants overdue the rice to compensate for the lack of fish, but it's well balances here. The bowl also came with seaweed salad, iceberg lettuce, ginger, imitarion crab, and some carrots. A side of miso soup comes with the bowl. I wish there was some cucumber and other basic stuff. Fuji Rice Time might be the best sushi joint in Salem; quality is consistently high, unlike some other established (non conveyor belt) places in the area with multiple locations which shall remain nameless. Just a few sushi bar seats, so if, like me, you enjoy watching your chef work his magic, good luck with that during lunch hour. This is a busy place. Their Volcano Roll is superb. The High Street Roll puts baked scallop, tomato, mushroom and spicy garlic sauce on top of the usual California roll, a nice take. There are always a few interesting specials on the wall board as well. Good Miso soup, gratis, as well as hot tea. Prices are on the high end. $5.50 for two pieces of nigiri hamachi. It's excellent yellowtail, but yikes, this isn't San Francisco, or the Pearl district. (Nagoya has more generous portions for $4.50.) I can't seem to feel like I'm done eating here unless I've spent twenty bucks. (To be fair, this is the case with most sushi joints in Salem.) Mid-day parking can be a real pain. read more

You will get a menu with their fantastic Japanese cuisine. Ignore this menu. That's for another time. You will get a slip of paper listing their sushi offerings. Go nuts. Get anything with freshwater eel, what my friend Mike calls the "bacon of the sea". Get the tempura shrimp and soft shelled crab rolls. Get anything topped with flying fish roe, which will pop delightfully in your mouth like fishy poprocks. Get the Wasabi Tampico rolls which are fearsomely hot and will cause you to sneeze, sweat, and make amusing facial contortions. You will not care because they are delicious. Get the soft shelled crab rolls. Get the spicy tuna rolls. Do not neglect the Nigiri, which is slices of raw fish/crab/eel/etc served over sushi rice. You will mark the hell out of this piece of paper. You will order way too much food. Like, WAY too much. You are going to eat all of the ocean tonight. That's OK. Embrace it. Whisper a silent apology to future generations who will grow up with a barren ocean wasteland. But it's ok, because all of it will have gone into your slavering maw. The wonderfully attentive waitress will come over and recite your order. A small frown may cross her face. Ignore it and order the miso soup as a starter. Now wait. This ain't no conveyer belt joint. You will sit and you will wait and then you will reap the benefits of your patience. Because after what seems like an excruciatingly long time, during which you will have been greedily slurping delicious miso soup so it may not actually seem that long, your fantastic waitress will stagger to your table with a gigantic serving platter filled with all of the sushi. All of it. Ever. Handmade by the nice long-suffering Asian man behind the counter. Then, if you are not already wearing one, go out and buy a hat. And hold onto it. Put a huge lump of Wasabi in your sauce dish, fill it up the rest of the way with soy sauce. If anyone near you adjusts his monocle and informs you that mixing soy and wasabi is not the proper way to eat sushi, you will punch him. You will not stop punching until your hunger overcomes your blood lust, which will be almost immediately once your gaze strays from your foe's battered face back to the platter containing ALL THE OCEAN EVER. You will sit back down, grasp your chopsticks with grim determination. And you will begin to eat. You may harbor fears that you have ordered too much. You may wonder if you can eat all of this. All of the sea, that is. The sushi chef has denuded the Pacific for you. You worry. It's understandable. Until about half way through this embarrassing repast, this sushi extravaganza of humiliating proportions. Then. Then you will secretly wonder if you haven't ordered enough! This will gnaw at your brain while you fork the delicious fruits of the ocean into your trembling mouth hole. You will worry, but this worry will fade into the background of the huge rush of endorphins your brain is releasing as you shovel in roll after roll. As you eat things you've never heard of and would be afraid of if you met them in their natural environment, the sea. You will eventually fall back, exhausted and victorious, into your chair. Your attentive waitress will deposit the check on the table and cart off the truly enormous platter with the help of 5 oxen and 1 bus boy. You will owe one million dollars. That's what it will feel like. And you will think this is cheap, after the repast, nay, the orgy you just participated in. Tip well. read more

My other favorite sushi restaurant in Salem. The service: the waitstaff is very attentive, knows the menu well enough to describe an item without having to check with anyone else, always checks on your drink & how your food tastes, grabs used dishes and utensils out of your way and they deliver service with a smile. The food: the rolls are fresh, the fish is fresh, the flavors are full & delicious, had a dragon roll and it was SO filling and SO delicious that I ordered one to go. The soup was very good and hot, the tea is really good quality and if there is something not on the menu, they will accommodate you to the best of their ability. The atmosphere: first thing to mention is that is was very clean, there is plenty of space to sit comfortably, the decor is really cute with lots of Eastern-themed wall art, lanterns and other such items. The lights are low but not "make me squint" dim. When in the restaurant, you don't notice the talking from other diners because every spot is like a tiny little cave that you can enjoy your group and food in. Food was authentic Japanese cuisine, tasty, not too greasy and presented well on prefabricated dishes. I got the tonkatsu with 3 gyoza, 6 California rolls, 2 shrimp tempura, yam, pumpkin and zucchini tempura with salad & miso dressing, soybeans & miso soup for $18. Fast service and friendly staff. Lots of food and great flavor, plus I couldn't finish all of the food (for a medium size woman).
