We started with the Steelhead Carpaccio. Delightful flavors of salmon, grapefruit, and pistachio prop up the lime cream. All at once makes for a delicious and complex play on a basic Carpaccio. Mains: I went with a Crab Caccio e Pepe, a delicious creamy take on crab and pasta. Just the right amount of Grana Padano and black pepper create the underlying notes for this crab and pasta dish. Delicious. Wife N went with the Blackened Ahi. This was extremely tender, and cooked perfectly (which is to say, absolutely raw with the exception of the flawless eighth-inch sear all around). Fingerling potatoes, horseradish cream and a sweet onion jam routed out the flavors here. Perfect. Place is a bit loud, but has all the vibe you'd expect from an oyster bar. Love Jax! However, the service and the attention to the customer are severely wanting. My wife and I waited forty plus minutes for a simple grilled cheese sandwich and soup. It would've taken longer had I not gone into the kitchen to tell our waitress we were hungry. The waitresses, for some reason we had two, had to be prodded to refill our water and diet soda. Unfortunately, bread is not served before (or during) the meal. Sorry, but we cannot recommend this place as long as the staff continues trying our patience.

Then, they went into bankruptcy, and took their time to reopen selectively with a new menu and supposedly a better business plan. I waited a year until visiting after they reopened, hoping they'd have their new act together. Sorry, it's just not there, yet. Let's go down the list: #1, prices are way too high for the restaurant niche they're trying to recapture. I don't expect endless shrimp for $12.99 like the old days (which is why they went bankrupt) but a fried fish platter for $30 is outrageous for the same breaded filets, shrimp & scallops you can get in the Kroger's frozen food aisle for about $10. Then, #2, the funkytown nightclub music they have blaring feels waaaay out of place. You can't find some Island vibe music from Hawaii or the Caribbean? The music was really annoying. And, #3, just about everything is ala carte now, including salads. It's almost impossible to have a full meal, salads to desserts, for less than $50 a person. Hey, it's a Red Lobster, not a downtown steakhouse. Get real about pricing! The only good notes to report are their Happy Hour, 3-6pm M-F, to save a few bucks. And, at least the service at this Cheyenne location was courteous, prompt and very attentive. Aside from that, I probably won't be back for at least another year in hopes they start giving customers a little price break on mediocre seafood.

Westley was our server, and I cannot say enough kind words about this young gentleman. He was prompt and knowledgeable, and made sure our meal was delivered timely and in excellent order. It is a quiet tucked away osteria well lit and cozy. With Frank Sinatra softly crooning in the background, the staff were all well trained and so enjoyable. The meal was so delicious- we were all well satiated! We did get desserts to share and even ordered pizzas to take home for future meals(they live over an hour away). The pizza counter was packed with take away customers! What a treat! I will definitely make sure to hit this place up every time I visit!

Needless to say, the meal was delicious, and the take-home plate was an added bonus heated-up at home the next day... T-Joes is our "to go place" for a good prime rib, steak, shrimp & hamburgers.
