I was very excited to visit Hennings, as it a larger, well known cheese factory. Upon entering the building, I had t-shirts, Christmas ornaments, wine stoppers, post cards and Packers gear practically thrown at me. I finally made it to the cheese but, not before filling my basket with souvenir tshirts, wine and tasting some ice cream first. I'm not a huge fan of that. I'm here for the cheese, not random stuff that will make my luggage over 50 lbs; Resulting in my frantically trying to transfer things in to my husbands luggage, only to end up paying an overage fee. The shop does however, have a really neat museum. It's a one room shindig but, they have awesome vintage cheese making equipment, butter churns and pictures. Everything is captioned and well explained. The rooms leads to the cheese making area. It is behind giant windows for all to see. They had a variety of wild cheese flavors such as "Blueberry Cobbler", "Apple Pie" and even "Mango Habanero". They were all delicious but the winners for me were their 7 year aged Cheddar and White Horseradish Cheddar. Lastly, they have "Play Dough" flavored Ice Cream. You read correctly, your gourmet, childhood, play-time snack was converted in to ice cream. The 5 year old in my feels victorious!

Granddaughter of the founder gave us a personal tour of the factory. Absolutely amazing and so impressed. This is a 4100 brick of cheese!

Granddaughter of the founder gave us a personal tour of the factory. Absolutely amazing and so impressed with the integrity they have maintained in the cheese making process. The orders they fill and the manual care they take in ensuring the cheese is of the highest quality is very unique. The cheese prices were about half of what I expected and much less than what you would find in a grocery or specialty store. Worth the trip for sure!

Waiting to be waxed!

Amazing cheese curds. I like to order some every winter so I can enjoy the mozzarella whips and various cheese curds in Las Vegas.

My order was dropped at a UPS facility by Vern's on 7/16. At some point in the process, UPS had a technical issue and when I received my order 5 days later the temperature inside the cooler (which I paid 11 dollars for) was 88 degrees. I immediately contacted Vern's to let them know of the issue and was told by their sales rep Alyssa that she would have to speak with someone in the shipping department to see what could be done. i waited one full business day to hear from someone, but just crickets!!! The next morning I called Vern's again and was told they would transfer me to Mike the shipping supervisor to handle my issue. Mike immediately started telling me there was nothing they could do as they have no control over UPS and that I would have to contact UPS to find out what happened and to get a refund. I calmly explained to Mike that I did not contract with UPS to deliver my order, that they did and that all I was requesting was that they make things right by re-shipping my order at no cost to me. Mike, then went on a long winded story about how the truck that delivered my 88 degree cheese did not say Vern's on it but UPS, so they would not refund my money or re-ship my order. The pomposity of this guy cannot be measured!! I asked him if in their 61 years of business had they ever had this problem before? He said "Sometimes" I then proceeded to ask him if he gave the same response that he had given me to those customers, nothing but crickets. Can you imagine the gall of this company to just give you the middle finger after paying 80 plus dollars for cheese and the best they can do is tell you its your problem now , not theirs!!! I don't know if Vern is still on God's green earth, but if he is he should be ashamed to have his name on a company that has no ethical or moral compass. If you order from Vern's, you best drive to Wisconsin to pick up your order, because all Vern's delivers to you is terrible customer service, headed up by Mike and the middle finger!

It was started by the Klessig and Heimerl families, who brought in Neville McNaughton, Pat Knowles and Dan Strongin as consultants. Not only do I love cheese, but I grew up in Cleveland and went to grade school with the Klessigs, so I was very interested and excited to try their cheese. After 15 years of planning, the first milk was delivered and a vat of cheese was made on August 24, 2007. I had some of the cheese during the winter holiday -- and they are now ramping up for national distribution. Look for their cheese at Whole Foods in the DC area in July -- and they will be rolling out nationally in the coming 6 months. They have 3 core cheeses -- Green Fields, Big Eds and Saxony. I have only tasted the prototypes, they were all delicious and are worth seeking out. You can contact the creamery at their website to get additional information about where to purchase their cheese. Green Fields A semi-soft cheese that is carefully tended then wrapped in a special breathable paper to protect Green Field's sophisticated flavor during the journey from our creamery to you. Made from whole raw cow's milk, and unpressed cooked curds, with a washed rind ripened a minimum of 60 days -- at its peak at four months with a shelf life of six months. Big Eds Young, mild, but full of flavor, with a buttery body. Enthusiastic, like Ed Klessig, whom it was named after, it hugs you back, never offends, and is great both for first time tasters and afficionados. A "clean rind" cheese made from raw cow's milk formed into cooked, pressed curds and ripened 120 days, with a shelf life of six months -- clean rind cheeses are meticulously wiped to keep them clean, cultivating a nearly perfect rind. Saxony A sophisticated cheese with a nutty flavor and a supple-body, as comfortable in the kitchen as it is on the table. Cooked pressed curds from whole raw cow's milk with a light, dry, washed rind ripened a minimum of 90 days, peaking at 150, with a shelf life of 9 months.
