Gully Kitchen feels like the beginning of something much bigger.
The lamb bowl was outstanding--tender, deeply seasoned and layered with fresh toppings and sauces. It carried a pleasant amount of spice without becoming aggressively hot, so the flavor remained the focus. The iced chai was equally memorable: creamy, refreshing and genuinely phenomenal.
The ordering experience is also unusually flexible. There is a sleek touchscreen for anyone who would rather order without much interaction, but the staff is extremely knowledgeable about the ingredients and happy to guide you through the menu. Nearly everything can be customized to fit your palate, whether you want more heat, less heat or a different combination of sauces and toppings.
What impressed me most was how little this felt like a soft opening. The team operated with the polish, confidence and consistency of a restaurant that had already been doing this for months. The systems felt practiced, the staff felt prepared, and the entire concept already seemed built to be repeated.
The space itself is far more substantial than a typical fast-casual restaurant. Exposed brick, colorful seating and a large upstairs lounge create a warm, modern atmosphere where people can actually settle in rather than simply grab food and leave.
Owner Tushar Paul has already proven that the food works through his smaller New Jersey operation. Bethlehem is his first complete restaurant concept, and now he is proving that the food can support a distinctive brand. His wife designed the amazingly inviting interior and manages the staff, while Mr. and Mrs. Paul contribute their warmth, hospitality, and support. Meeting the family makes the restaurant feel personal rather than manufactured.
My prediction: Gully Kitchen will gain attention quickly, and I would not be surprised to see this concept franchised. The food is accessible without losing its Indian character, the branding is memorable, and the family behind it is exceptionally easy to root for. read more
