I first tried their Hibiscus and it was beautiful and light to the palate BUT I am a crazy woman for calamansi and omg, that drink was phenomenal! From that first day forward, I would visit the market and buy TWO of their beverages because I could never pick. Well fast forward 4 months later, after coming back to Oahu after working in Maui, i went to the market today specifically looking for this amazing vendor. I initially couldn't find them because they were located in a different spot but after making a 4th and determined pass to find them, I did and I again got TWO beverages because why not?! After ordering, we walked to the left of the tent where they made an expediting station. As drinks were made, the attentive gal called out order numbers. After a 6-7 minute wait, we were on our way. I ordered the Smoked Salmon and Bacon sandwich, the Apple Pecan Salad with balsamic dressing, and a large cold brew. I paid online and sat outside for maybe 15-20 minutes. I never did figure out whether I was supposed to get a notification that my order was ready, so eventually I just went inside to check. Sure enough, it was ready. I had included a note with my order that I planned to eat the salad the following day and asked that the wet ingredients be kept separate. They absolutely understood the assignment. Everything was packaged so thoughtfully. The Apple Pecan Salad was beautiful, incredibly fresh and substantial, with the ingredients carefully separated so it would keep. It wasn't some obligatory pile of greens tossed into a container. You could actually see the care that went into making it. The Smoked Salmon and Bacon sandwich was equally good. Fresh, generously filled and absolutely delicious. I ate half the sandwich and some of the salad and was completely satisfied. Between the two, I can easily get four meals out of what I ordered, which makes the value even better. And the cold brew? Wowzer. Robust and delicious! I think what impressed me most was simply the level of care. A sandwich and a salad aren't complicated foods, but doing simple food really well takes effort. Fresh produce, good ingredients, thoughtful preparation, paying attention to a customer's request, and putting out food that looks every bit as good as it tastes. I felt that in this order. I actually tipped 15% when I ordered because I was thinking, okay, this is basically grab-and-go. After I got home and ate the food, I wished I'd tipped 20%.
