We tried to go at 9 and 10 on weekends but they were closed. This weekend we got there at 11 on Sunday and they seemed to be just opening. I've been stoked to try this place because I love Burmese food, but it didn't hit for us. Our donuts were soggy. They tasted underdone. The green curry was watery, but spicy. It was a big portion, but almost no chicken. I was most excited for the tea leaf salad, but I think there must have been something that got lost in translation because what we got was most definitely not a tea leaf salad. I was so sad when I opened the take out in the car. It was also slow. We ordered, grocery shopped, and when we came back it still wasn't ready yet.

The place itself is located on the wall of the Lotte in Catonsville and it looks like a small family-run establishment. Service was kind, but admittedly a bit of a language barrier which may have affected some of the ordering process. In total, we ordered the tea leaf salad, a curry dish, seafood noodles, and the asian doughnuts. While I was hoping for fresh, vibrant dishes, my expectations fell a bit short where some of the proteins felt a bit tough and other ingredients felt a bit soggy. The flavor profile was good (one of those places where spicy means spicy), but it did lean a bit on the seafoody/fishy side. I still think it warrants checking out because it's not often that there's Burmese cuisine available.

Kee Mao - this honestly was the best part of the meal but I honestly expect this dish to be solid at every restaurants. Overall, as someone from out of state, I wouldn't try this place again given this experience.

But Southeast Asia is by no means a monolith when it comes to culinary tradition and culture. Vietnam, of course, has a large place in the regional and global culinary scene. How about smaller neighbors in the region like Laos? My wife Jun would love to visit the country one day, but for now Baan Mae would offer a good preview of what the Laotian food tastes like. Chef Seng Luangrath, who has been the face of the Lao Food movement in the U.S. (she also has another restaurant Thip Khao that we had visited before), wants to showcase her country's food at Baan Mae, which also draws from the influence of Thailand and Burma. Overall, we had a very solid dinner at the restaurant. Based on the reviews of the restaurant, it seemed like a no-brainer to order the "FiLao-O-Fish" sliders. The sliders with fried Chesapeake blue catfish (the restaurant has a mission to eat as many of these invasive species as possible) with spicy tofu mayo was indeed a very delicious snack to kick off the meal. Jun, an avid fried chicken eater, also highly approved the crispy fried chicken wings with jaew bong sauce, a traditional Lao chili paste made with mushroom, soy and tamarind. If you are looking for a dish with a bit more neutral flavor, the Hua Pii salad would be a great option. The shredded banana blossom salad with jicama and tamarind sauce had this very addictive quality while also tasting healthy. For the main dish, we shared the Gaeng Daeng Puu red coconut curry with lump crab on the bartender's recommendation, and it turned out to be a wise choice as well. We both wished the coconut curry had a bit more spicy kick, but otherwise the rich flavor was an unexpected antidote to the humid DC summer. We finished our meal with the green Thai tea gelato, which tasted more green tea than Thai iced tea; not a bad dessert but not as distinctive as we had hoped to be. Getting a reservation at Baan Mae is fairly manageable with about a week out. The dining space is fairly modest, but you can also try your luck at the bar area like we did and chat with the bartender to discuss food and drinks options. The restaurant has a number of interesting cocktail options incorporating ingredients and flavors from Southeast Asia, as well as a short list of wines and beers. The atmosphere of the dimly lit dining space with colorful walls feels pretty lively and ideal for a casual get-togethers or dates. Baan Mae has long been on my list of new restaurants to visit, and I'm glad Jun and I finally paid a visit. Jun certainly liked her experience enough to say she can see herself going back again in the near future, and I feel the same.

Everything about this place exceeded our expectations. The restaurant itself is beautifully decorated, clean, and thoughtfully designed. It feels upscale without being stuffy, and the atmosphere is warm and inviting from the moment you walk in. We started with the crab rangoons and then ordered five sushi rolls: the Creamy & Crispy Roll, Crunchy Crab Roll, Black Dragon Roll, Hawaii Roll, and the Volcano Roll with spicy tuna. Every single roll was fantastic. Not "some were better than others" fantastic. Not "we found a favorite and tolerated the rest" fantastic. We genuinely loved every roll that came to the table. The Volcano Roll with spicy tuna was my personal favorite and an easy 10/10, but honestly there wasn't a single thing we ordered that we wouldn't get again. The presentation deserves its own mention. The rolls were beautifully plated, complete with gorgeous edible flowers and thoughtful garnishes that made everything look almost too pretty to eat. Service was excellent. The food came out surprisingly quickly, but not all at once. Instead, the rolls arrived in small groups, which actually made the experience even better because we could enjoy each one before the next arrived. For two people, five specialty rolls and crab rangoons came to about $80, which is completely reasonable and honestly pretty standard for quality sushi. We will absolutely be back, and we've already started recommending Hills to Sea to friends and family. If you're a sushi lover in Lancaster County, put this place on your list immediately.
