Tucked away underground and a bit hard to find, the whole place gives off this mysterious, Prohibition-era speakeasy vibe--in the best way. It's dark, moody, and cool without trying too hard. The second we walked in, we were greeted with Prosecco and genuine kindness. The staff nailed that rare balance of high-end service without any pretension. We sat at the bar, and I cannot say enough good things about the bartenders, Scott and Zach. These two are true mixologists with deep drink knowledge--but they're also warm, generous, and completely unpretentious about it. We told them the vibe we were feeling and they just got us. Every drink they created felt like a perfect match, like they were reading our minds. Plus, they were so fun to talk to--we ended up chatting about drinks for most of the night, and not once did we feel rushed or like we didn't belong. They made us feel comfortable and welcome in a way that's honestly rare, especially in upscale spots. And then there was the food. My goodness. Every bite was a smile--literally. The chef, Rock (who, side note, gives off major "Tyler Childers if he was a chef" energy), came to talk to us multiple times while we ate at the bar. He was so clearly passionate about his work, so excited to share what he was creating, and just a joy to talk to. He made the experience even more special--explaining dishes, answering our many questions, and radiating the kind of low-key brilliance that's just magnetic. Also shoutout to the bolo-wearing server who, after we complimented his bolo, shared a whole story about his collection. Like... who does that?! People who are confident, kind, and just good. You can tell the staff here is well cared for, well trained, and encouraged to show up as themselves--and it makes the whole atmosphere feel alive and full of heart. I usually feel a little stiff or out of place at upscale restaurants--but this wasn't that. This place is somehow both effortlessly cool and completely unpretentious. Whether you're down-to-earth or dressed to impress, they'll meet you where you are. It was one of the best restaurant experiences I've ever had, full of laughter, great food, better drinks, and even better people. Can't wait to go back.

Their best items are seafood related, and their only steak on the regular menu (steak frites) was tough and chewy (even on medium). The gnocchi is a red-based sauce versus white cream. You cannot be picky here! Their higher roller menu has a nice Wagyu - 8 ounces for $144. This was the best part. The baked potato with it was cut into thin slices and cooked uniquely, yet tasty. The staff were incredibly kind and helpful with the food and wine lists. Overall, the most impressive part was ALL of the food had incredible flavor. Even for the items I did not care about, the flavors were still fresh and bold. I would go back if someone wanted to, but I'm not craving anything specifically to want to go back either.

But as I started eating I realized that they had used a ton of paprika in the batter to give it that dark red amber color. The chicken was good and not overcooked. However, they used a batter for the crust. Much like a Japanese tempura but less garlic. The crust was a hard crunchy shell. The flavor was ok but I just don't care for battered chicken. I also felt like it was cooked too hot. The crust was borderline over cooked but the inside was done. That's just my opinion. They served the chicken with mashed potatoes and gravy on the side. Both just warm and as my meal progressed the gravy was straight up cold. But I was finished so I powered through. To be fair, the fried chicken was the least expensive entree on the menu. But I'm kind of a fried chicken snob so I'm gonna give it a 6 out of 10. I prob would not order it again, but there were some other things on the menu I am excited to try on our next visit.

The hustle and bustle of Friday night dinner plans hadn't started yet and there was plenty of seating. We were seated and there were crumbs on our "clean" table. We were moved and the floor under that table was sticky. Our server, who never introduced themselves, came and took our drink and appetizer order. Our sodas came out flat. The server didn't charge us and replaced them with waters. Our appetizer eventually arrived, the spinach, artichoke dip. The parmesan on top was not melted, we removed it like a sheet of paper. We told our server, who said, "oh yeah, I should've told you that it is better when you take it home and microwave it to really melt the cheese then it's really good". Even if we did enjoy the spinach dip, which we did not, there aren't enough pita chips to eat the entire appetizer. Those would be an additional charge. During the appetizer conversation, I did put my empty water glass to their side of the table to make a refill more simple. They started to walk away without even realizing the nonverbal gesture I made as to not interrupt our conversation. I verbally asked for more water and they forgot about it. I did witness the "ah-ha" moment when they remembered they had forgotten. My wife's grilled salmon had no real flavor, sitting on top of a basic bed of rice. Her tabouli was lacking. I can't forget to mention that when her side salad arrived, the food runner simply asked, "is this yours?" It was slightly off-putting. I never thought about my dining experience being altered by the food runner, but "side salad with ranch" versus "is this yours" is a minor detail that can apparently affect the experience. The server didn't come by as often as I felt they should. They did their verbal checks with the appetizer and the meal, but didn't see them do any walk by checks, until I asked for the bill. My burger was nothing to write home about, but it was good. The fries were undercooked and the thousand island dressing tasted like Kraft dressing. I ate half my burger and my wife ate a small portion of her salmon. We paid 60$ for food we barely touched and we took none of it home. I would rather pay 60$ at Chili's or Texas Roadhouse. We take those leftovers home. I would like to say that I would give Bison another chance, but that won't be the case. Too many mishaps on this visit to make us want to return. My wife was very tempted to talk to the manager, but I was more ready to just pay the check, leave, and take this experience as a sign to never return.
