    The brisket is the best in town! Mac & cheese is delicious! There isn't usually a long line, Owner is friendly, highly recommended!

It's just a different vibe with real good home-cooking. The day I went I barely made it before they closed, so of course, just about everything was sold out (which is always a good sign). I wanted to try the brisket baked potato, but since they didn't have any brisket left, they made me one with ribs. I'm not usually a rib gal, but Pop brought me one out to try while they were making my potato and won me over. It was fall off the bone tender, literally!! I basically just had to pick up the bone and the meat fell off. Then, the potato... He weighed it before giving it to me and it was 5 lbs. Two of us ate delicious, cheesy, buttery, baked potato with ribs for two days! Plus, I just have to say that I was so impressed with the cleanliness and overall cuteness of the little shop. I really can't wait to go back - I just wish they were open later and more days of the week. I want to try the banana pudding, too, next time. By the way, 'Ma and Pop' were just about the sweetest people I've ever met. I really wanted to be sure to leave a review because of that and they recommended on Facebook using his real name. He wrote it for me on one of his cards that I'd already lost by the time I got home. So I hope they see that I meant what I said and that I do plan to come back. Save some brisket for me!

The process was super simple. I found her on yelp. She hit me back probably w/in 15-20 minutes. I wanted a nice meal made for my wedding anniversary. Year 11 married for Hubby and I. I knew I wanted steak and potatoes. She came up w/the chimmichurri (which I knew I loved), zuppa tuscana and infused strawberry shortcake. She and her assistant/sous chef came over a little bit early (I was a little late ) and she was just awesome! Very warm, personable and knows what she's doing. They were ein my kitchen working their magic and the smell of mouth watering food filled the house. The soup was done first. Hubby basically melted into the chair after his first bite. Seriously! It was flavorful and light abs presented in a very simple but comfort food way. 10 out of 10! A bit later the steak, loaded potato abs brussel sprouts came out. BOOM!! Looked good as f*ck and tasted out of this world! The steak was seasoned well w/out being salty or over done. There was a slight non spicy zing from the chimichurri. Also need to note the chimmichurri tasted so fresh, and flavorful I wanted to eat just the chimnichurri w/a spoon or slather it on EVERYTHING!! I definitely ate at least have of my brussel sprouts w/this magical, fresh, herby sauce.... because it was that damn good! Eating this had me thinking up schemes... ahem plans to get Layha to stay and cook more... or everything . I can and end very much enjoy cooking... but now I feel like I can't go back to my own cooking (woman womp). Oh well. I already booked Chef Layha for New Year, my birthday and Mother's day before the meal was completed. She also made these cute and small bourbon infused strawberry shortcakes. Real strawberries. Simple delicious, and juicy flavor. NOT SOGGY at all. Not overly sweet. Flippin awesome ! She also made some rotelle nachos for my kiddos when they get out of school later. I'll be tasting that very soon. Probably right after I hit the post button . Either way Chef Layha has some real talent. She made my day as well as my husband's. Her food was impeccable.     Cousin's Maine Lobster Truck is a weird experience…read more It was fun to do once. I am probably not going to follow the truck from town to town so I never miss a single chance to get a lobster roll. * * * Cousin's Maine Lobster is a franchise of very very mobile trucks that sell lobster rolls. They also sell other lobster-on-top-of-stuff dishes. Their gimmick which I am not sure is a plus is to have no fixed location. They publish a list of places where the truck will be every week - generally one location for lunch and the other location for dinner. The Central Texas Truck could be anywhere from Georgetown to San Antonio. You can't just go there when you want unless you are willing to drive from Austin to San Antonio or San Antonio to Georgetown to get your lobster roll. * * * One consequence of being eternally mobile is that the truck has no regular or guaranteed access to a bathroom. You go to a brick and mortar restaurant - and the health code will require that that restaurant have a bathroom. Most food courts have some sort of bathroom - either one owned by the food court or one in a gas station or convenience store near the food court. Cousin's has nothing. So you not only have to plan ahead for when the truck is going to be within driving distance of you ... but you also have to plan to have done all of your personal business BEFORE you go to order from the truck. I do NOT consider this to be a positive feature. * * * There is also the issue of WHERE you eat your lobster preparation once you have received it. You could eat in your car. (For Samuel C that means a guaranteed necessary trip to a car wash.) There was almost no place to sit near where Cousins was located my day which was in the Yuppie complex of apartments near Oracle near Riverside. The park near where the truck was stationed has no park benches. I found ONE bench on the street mercifully provided by an apartment complex. Without that one bench I would have been scroodled. * * * I am from New England and have lots of experience with lobster. My personal opinion is that the way to eat lobster is boiled with a vast quantity of melted butter for dipping. The downside of a lobster roll is that the bread hides the taste of the lobster. This makes your investment in expensive raw materials kind of a waste. Mixing lobster with stronger tasting ingredients - which is what Cousin's does on the dump-ons - allows the stronger tasting ingredients to compensate for the diminished lobster experience. This is the way to go with Cousins. I did a Lobster On Tater Tots With Sauce concept and was not displeased. * * * Lobster should be boiled fresh from the fishing boat and eaten right on the spot. (For a related concept, see corn on the cob.) This is why people go to Maine for lobster and why clambakes with the shellfish just obtained an hour before the clambake make good sense. Shipping your lobster from Maine to Texas isn't terrible since the lobster is in water. Taking the lobster out of the shell and making raw ingredients for your lobster roll or lobster taco has started the clock ticking. As it happens ... The lobster gets old and stronger. This actually turns out to be a plus if you are dumping your lobster on tater tots. Eating old strong fish is an institution in Korean cooking. They like mackerel and other potent fish that pack a pow ... And aging the fish provides a taste Koreans really like. With lobster, aging gives you an ingredient that can stand up to being mixed with other ingredients. * * * This is all well and good. But it is not fresh lobster straight off the boat boiled and served in its natural goodness with only melted butter for a garnish. Some regional foods just don't travel.
