Regarding the Holiday and the Kevin Page, these maki rolls are similar. Both shine with the white fish on top and generous amounts of tuna (and salmon in the Holiday's case) within. The eel and cucumber add a pleasant new dimension to the pieces. I'd say these two are like identical twins adopted by different families. Each will have some unique personality and flair, but at the core, they are one. The crazy tuna brought something different to the table. While I am generally not a fan of the chopped-up style of fish, here it just works, and I didn't mind it. If I were to guess, this is because many places have more tempura than fish and add too much spicy mayo. Despite the style, the tuna was still able to shine through.
