They built the building and the entire business out of love for what they do and the community of Fraser. Take a seat at the bar and you get to meet the family and learn and see their love of the restaurant business. All of their spirits and juices are crafted on site by a PhD of micros biology who had an incredible passion for fantastic cocktails. The food created by the son in law is amazing! It's finally open! Fraser has a new hot spot in town, The Fraser Valley Distilling. I'm more a wine girl but Jenna just made a Gin cocktail for me that I loved! She is an artist when it comes to making creative cocktails to suit your palate​. ​She has a science-based​ background which makes her an excellent mixologist. The Tom Collins slushie was a refreshing citrus icy delight. They even make a Whiskey Coffee slushie too. The Fraser Valley Distillery is a family business and Barry Young creates Gin, Vodka, and Whiskey. When you visit be sure to take a tour and learn how everything is made. We even purchased a bottle of Gin to enjoy at home now I will just need Jenna's recipe​ if she will share it. They have a small menu right now. Our group tried the Buttermilk pancakes with a homemade blueberry jam. They were cooked perfectly and were nice and light. The Pastrami sandwich won me over with the mustard and sauerkraut on locally made Rye bread. We will definitely be back for this again. I ordered the Grilled Cheese with Apple, Spinach, and Bacon and it was good but the flavors of the Pastrami Sandwich was our favorite dish. If you are a french fry fan like me you will love these never been frozen thick french fries. They come with the Grilled Cheese and Pastrami dish or you can order a side of fries with any dish or just as an appetizer. I would come here seriously for just the fries and the 3 dipping sauces of ketchup, a spicy one that has some heat to it, and a garlic mayo. Friends at our table liked the Chicken and Biscuit but I didn't get a chance to try it. Currently, the menu is rather small but everything on it is delicious. They are off to a good start with the food items. They have a barrel​ room that can be used for private groups too. I am hoping they will have events and live music in the future. Stopped in for drinks. The place itself is very cool. The staff is super attentive. The owner gave us a tour of the distillery and was very gracious. We had gin and tonics and I must say the tonic made in house was amazing. We didn't have time to eat because we showed up too close to closing time. This is the new cool hangout for locals that just opened. A comfortable or dare I say cozy retreat after a day of powder skiing or Trail running and biking. I had a truly homemade Manhattan (my favorite) and wow what a difference quality rye whiskey and a competent distillery technician (aka bartender:-) can make in a drink. I savored every sip. Yum City.... This is a nice family run business where you are greeted immediately and treated as a respected guest. The new limited menu of sumptuous Pastrami Sandwiches and homemade french fries coming out of the spacious and CLEAN Kitchen made me drool like a Pavlovian Dog. Note: I asked to inspect the kitchen and I was invited in and given a tour without hesitation as well as the seperate distillery by the owner. A must when you are in the area. Everything is so fresh, delicious and made in house. I love their gin and tonic and I never liked either prior to frequenting here. The have the best seasonal salads, chicken tenders, fries, we have never had a bad meal. Also the staff are super friendly and responsive, which is becoming more rare to find with the work force shortages out there. Ambiance is Colorado chic, warm and inviting. Decided to get a couple different things and share at the table. My kids are 9 and 12 so wasn't sure if the food was too "fancy". Great food, service and atmosphere. We chose this place because it had a few vegetarian options. We got the falafel sandwich with a flatbread that seemed homemade and really good. Homemade sauces are excellent. We also got a summer salad with crispy chickpeas and a wonderful-dressing. The Mediterranean board was creative, appealing and very good with homemade hummus. We had no idea what we had been missing. Yes, this is a distillery, but their attention to the food is like it is all they do.
