Talbott & Arding was chosen as our first stop on our girls' getaway journey. Tucked in the Hudson Valley, just an hour from the Berkshires, it was a sweetly energetic beginning to our day. We each chose a sandwich from the counter. My smoked salmon on focaccia was a delight. The bread, airy and light, beautifully happy yeast just bounding with lift, defying the constraints of olive oil which left my fingers gloriously glistening. I haven't had a focaccia as happy as that in a minute. Super thin radish, bright pickled shallot and fresh watercress all gave a nice vibrant touch. Ben's cream cheese couldn't possibly be creamier. And the delicate, silky, fresh, luxurious salmon... What a dream. So balanced. I filled my arms with goods- iberico salami, Aleppo chili oil, Blackstrap coffee beans, local chocolates, and an adorable Talbott & Arding puzzle. I'm sure I could have easily convinced myself to buy just about everything I laid my eyes upon. The cheese counter was an absolute work of art. It's clear that Talbott & Arding is a willing servant to the gifts of the surrounding earth and people. The homage it pays is palpable. Our stop at Talbott & Arding set the tone for an intentional, peaceful, vibrant, cozy, delicious, connected trip. I'll be back immediately.

To the point where I asked Lauren, the owner, what mustard they were using, and then ordered a panini press when I got home hoping to recreate the magic. Perfectly chewy bread, just the right balance of sweet and savory, and that mustard. Truly amazing. My wife ordered the avocado toast which she said was perfection. I wish I could bundle this place up and ship it to New Haven because I'd be eating one of those sandwiches every week. As for everything else: The service was great. At Governor's Tavern, if you want a gin and tonic, you simply ask for a gin and tonic. The only decision you need to make is which gin you'd like. I'm not much of a cocktail person, but I appreciate that not every place feels the need to reinvent the wheel. The place was packed at lunchtime, but we got lucky and grabbed a pair of seats across from the bar. The server who I quoted was genuinely friendly and welcoming. I ordered a Guinness, but unfortunately the keg had just kicked. She recommended the Samuel Smith chocolate stout instead and even brought me a sample before I committed to taste since I never heard of it, which was a nice touch. For food, we ordered the State Grill burger and the Nashville Hot chicken sandwich. Both were excellent, and each came with Belgian-style hand-cut fries. If you're spending the day browsing the boutiques and antique shops along Warren Street and want a drink, a good meal, and a lively mix of locals and tourists, Governor's Tavern is worth a stop.

There was garlic cheese toast between the mixed greens and bruschetta topping. The balsamic dressing is thick. Super garlicky and flavorful. The pizza has a choice of either sourdough crust or spelt crust. I tried the sourdough Margherita pie. The salad and the small pie was plenty of food for two people. The service was friendly. The booths were comfortable - love that there were pizza seasonings on the tables.
