Exquisite, Just Fantastique! Last dinner in Europe and I would definitely say the best. We did London, Paris and Amsterdam and splurged and stayed at the hotel De L'Europe and this fine Michelin star establishment is nestled within overlooking a canal. We were actually not planning on dining here at all. There was a fellow at the Swan restaurant in London who overheard us talking about the first leg of our trip. He was a fellow from Texas living in Amsterdam for the past few years and his goal was to eat at the 50 best restaurants in the world. We told him we were going to Amsterdam and he told us we had to eat here, he had just eaten here a few days ago. The food was amazing. They have an 8, 7 or 6 course tasting menu. 8 courses included foie gras and a cheese platter, 7 courses came sans the foie gras. We opted for 7 courses but asked for the foie gras instead of the cheese and they were happy to oblige. We also opted for the wine pairing of course. The wait staff was amazing, the restaurant was very luxurious and the view of the canal was a great touch. Jackets are not required but preferred, so guys wear a jacket. The chef also made an appearance and greeted us. This place was great and I would most definitely return here for another spectacular dinner. We had pickled herring for breakfast and bitterballen for lunch and rode bikes around the city and this just topped off our Amsterdam experience. Also of note the hotel has a smoking room next to their bar for an after dinner cigar (they have a nice selection) if you so desire.

Bord'eau is nestled inside Hotel de l'Europe. The entrance is a little inconspicuous but once you step into the dining area, you are in a classy setting with wide windows facing Muntplein. You can catch a glimpse of the Munttoren Tower. The Amstel River creates a gap between you and the hustle and bustle on the other side. Nice contrast. When my party was finally situated, hot towels arrived at the same time as the hot Duck Tea with five spice. The warmth helped our blood flow in stimulating our appetite on this wintry day. Definitely not everyone's cup of tea, this drink was savory. I personally found the infusion very pleasant. My dining companions were not as enthused but their determination to try anything was admirable. Our entrees were accompanied by a parade of amuse-bouches. One of them was the "mini cannolis." We were perplexed to see a "sweet" dish on the table so early in the course of our meal. Only when we bit into it, we realized the filling was actually crab mousse. The unique flavor was a conversation piece at our table but the cleverness had won us all. The next item was Risotto with black truffle oil. It was very rich and creamy. As we continued to dig in, we found a gem of egg yolk in the center which was such a delight. Our stomachs had certainly kicked into the second gear by the time the "oysters on the half shell" were served. Instead of the real mollusks that we are used to seeing, it was oyster cream. Lovely taste and presentation. They picked the perfect shells for serving. We found the construction of the Steak tartar and caviar amazing. Everything was edible, even the faux bone and marrow! The pigeon was nicely done through and through - slight pink with a trace of fat and well-seasoned. The filet of sole came out moist and meshed well with sea urchin. Disappointingly, the Oxtail with tendon and mushroom foam had some chewy bits which was my pet peeve but the flavor was very good. By the same token, while I really liked the Wild Hare hockey puck, it had a few minuses. It was slightly salty and the cooking was uneven, i.e., dry in one quadrant but perfect in the next. If they were trying to redeem themselves, they succeeded remarkably. The Scallop dish was the star! Everyone held their breath as the server was shaving the truffle. No one made any objection to the generous amount they sprinkled on top. The cream sauce was delicious. I was in the company of the cleanest dishwashers ever. There wasn't a speck left on the plates. As if we weren't full by now, we still got the last course. My friends and I absolutely loved this artful and amazing dish! A clear apple made by blown sugar with apple shaved ice as the core. This was by far the most memorable visually. Truly the grand finale and we had the pleasure to enjoy it. Oh but wait, there's more! They had to sweeten us up even more with their chocolate forest cart. The bonbons were shaped like acorns, berries, mushrooms and truffles; and each contained the flavor of its shapes. Overall, it was very enjoyable. For the most part, the staff was personable and attentive. We appreciated when the chef took a minute away from the kitchen to greet us. It had made our experience more personal. This rich and hearty fare was fit for the cold and rainy days in Amsterdam. All the items were nicely presented. Even though some of the flavors were up for debate at our table, none of us could deny the creativity. Don't let the appearance fool you. It may not taste like what it seems.

Very nice overall ambiance, I love that it's right on the canal and fortunately my husband and I were seated at the window. We did the full meal (I believe 7 courses total) and it took ~4 hours. The servings were very small (as expected) but surprisingly we were so stuffed at the end. At first couple of courses we talked about having to go to Mcdonalds afterwards because we didn't think we'd get full :p Presentation was amazing and staff was wonderful. Of the 7 courses, I felt like I was mind blown at about 75% of them. Some dishes were meh, while other were very good which is why I didn't give a perfect 5 stars. It was a nice experience, but for the cost..mm I'm not sure. I've had amazing meals without having to cough up 300+ euros.

When I look back at our dining experience here, every dish was good, nothing was super duper amazing, the venue just didn't seem romantic enough, but I guess it's in Amsterdam so the standards should be different. The service was good, most of the waiters were professional and friendly. However, It was our anniversary dinner, but they brought out our dessert and it said "happy birthday" on the plate, that was a bit disappointing. I really appreciated their prompt responses to my emails, and they were very accommodating to the reservation time change that I had requested.

Amazing meal to end my trip to Amsterdam. I dined alone because I was on a business trip without anyone else, and it was still a really great experience. The servers were very attentive, and they even laid out some magazines for me to read since I was alone. I can honestly say that I enjoyed every single dish served this night. Usually when I go to really nice tasting menus, there are are one or two dishes that I don't enjoy as much, but this was not the case! My favorites were the red mullet, bbq oxtail with polenta, and the duck liver.

One of the top 10 meals of my life and it comes right on the heels of and surpasses another fantastic meal this same month at ink in Los Angeles. The entire experience is refined. The degree of refinement in the cuisine takes it to exquisite. The dining room is small (12 tables?) with an exquisite view of a canal, Amsterdam town homes, and street life including a constant pulse of cyclists. If you are a visitor/foreigner/tourist you definitely get the sense of being in the center of Amsterfam while you are dining. Table service is attentive and impeccable. We ordered a la carte. Though we only ordered two dishes per person we were delighted by a great sequence of amuses both before the first course and again preceding our dessert. Here is what we experienced: * Oyster in champagne sauce served on scallop shell * Beet root topped with a small dollop of wasabi ice cream * A veal tartare trompe l'oeil of potatoe "bone" stiffed with "marrow" * Shared North Sea snow crab with pristinely sliced avocado and a crab claw beignet * I ordered a filet of brill served with smoked mussel and fennel along with a smoke fennel sauce * Erin had a turbot with bordelaise sauce * salted caramel ice cream amuse (surprise) * astounding. Chocolate balloon that I have attached as photos but I wish I had taken a photo of its full presentation. What a delight!

Went for lunch after disembarking from the US. Light mood upon arrival, very attentive staff. Beautiful place with even lovelier view. I love Europe for the food. Amsterdam never disappoints me. Started with champagne. Ordered 6 courses tasting menu. The dishes were light and creative. A few stand outs: tomato dishes were perfect, the bone marrow and caviar, Dover sole (they exchanged to red mullet for be because I'm gluten free), gluten free bread was good (why can't we get decent gf bread in the USA?), beef was outstanding, the duck liver course was the perfect umami taste. It was a distinct taste, unforgettable and delicious. The apple dessert with blown sugar was a treat for the eyes and the mouth. Lastly, the edible chocolate tree and handcrafted macadamia nut Bon bins were a wonderful finish.

I came in here expecting to be wowed (I mean, 2 Michelin stars sets a certain expectation, right?) but came away feeling like there were more misses than hits. The strongest items were the appetizer and dessert courses. My favorite of the night might've been a couscous and greens salad. It had the perfect amount of sweetness and acidity. I also quite enjoyed the crab with smoked avocado. The courses in between were interesting but many of them were over salted, which was a sentiment shared by my dining companions. The desserts were mind blowing, though -- imaginative and flavorful. There was one that was a green apple sorbet, shaped like an eaten apple core, with seeds made of chocolate, over a mini pie crust pastry, inside a blown sugar shell shaped like the outside of an apple. Incredible. The second dessert course was awesome too. Decor is cool, service was extraordinary, especially from our main waiter. White gloves, water and bread constantly being refilled, the works. Interesting to try, but maybe my expectations were too high. Still, the price feels like a steal compared to many other restaurants with the same rating.

I recently ate here and was glad to find it had improved substantially in terms of both service (way more down to earth) and quality of food (fanastic dishes versus a total fine dining quality experience, with each course complementing the other). Most of all, I was extremely impressed with the selection of wines they offered with the dishes which - for a change - truly complemented and ammended the dishes served. Most memorable were the appetizer and the desserts, but I did also absolutely love the touches of caviar, truffle and duck liver they incorporated into the courses. Would definetely come back here again.

What can you say? Remarkable. This is one of the places you still remember after a couple of years, every detail was perfectly arranged and the meal was a truly top experience. The place is at the ground floor of hotel de l'europe, beautifully faced on the river Amstel. The single room receives plenty of light from the big windows on the channel and its design, based on black and gold colors, it's elegant and stylish, and the staff is perfectly synchronized with the environment. There are two options for the tasting menu, with five or six dishes, and it constantly changes, even if some the signature dishes will always be present (the apple, for example). The chef, Richard van Oostenbrugge, is the chief of the De l'Europe restaurants department and it directly lead the brigade of the Bord'eau, with its peculiar style. The restaurant, in fact, can be characterized as modern french cuisine, but Richard's peculiar style involves cleaner and more direct tastes, lacking some of the classical french ingredients and adding several influences from nordic cuisine. For example, a wonderful example of what we received was dover sole covered with thinly sliced raw champignons and grated foie gras which slightly melted when poured over the mushrooms. Luxurious, incredible in the flavors and more overall a brilliant union of the different textures, combining the firmness of the sole, the raw mushroom and the melting foie gras. Me and my lady both went for the 6 courses menu, and we enjoyed every single dish, from the mise en bouche to the petite patisserie. The savvy use of luxury ingredients, caviar, oysters, foie gras, truffle (during the right season you usually have the option to have a dish with white truffle if you like) give tone and amazing flavors, the usage of raw ingredients, especially fish, recalls northern tradition, the combination of textures and flavors, every dish was just incredible. Maybe the mise en place is not super creative, nor the dishes have unknown tastes, but everything is just perfectly in place and so beautifully combined is incredible how such perfection can be reached. And don't even let me start speaking of the apple. Just wow. Wow wow wow. The perfect rating, however, can't be reached because of a number of issues: first, I definitely suggest you to make a reservation by phone: I booked online a table almost six months before asking twice for a table next to the window, but we end up being at the table the farthest one from the window in the whole hall. That's comprehensible but still unacceptable. The coffee was really low quality compared to the meal. I specifically asked for an italian espresso, I received something like a small portion of an american coffee. That alone deserves two grades less. The third and last reason why Bord'eau does not deserves 5 stars is the surcharge over wine, which is a little bit too high (we are speaking around 3 times the price of the same bottle in shop), especially for high-end wines. In conclusion, a dinner here is a dinner for the ages, with top quality dishes... but I hate to see a such a wonderful experience flawed by food-unrelated issues. That said, definitely a place deserving its stars and one of the best meals in my life.

Ended our stay in Amsterdam with an impressive dining experience here. Everything from service, food, execution and presentation was perfection. You can tell a lot of detail and creativity went into cultivating each dish.

We could not have enjoyed our recent lunch here more! From the moment we sat down at the window overlooking the canal, as the champagne cart rolled to our table, until the last bite of dessert, it was the most memorable and delicious meal. The 3 course lunch menu is a fantastic deal, but we opted to try five because we really wanted to add the sea bass dish. So glad we did! It was phenomenal and one of our favorites here, and probably top dish ever eaten anywhere. This and the langoustine were my favorite courses. Don't skip the cheese cart. It was completely amazing! The delicate snowball dessert was one of my favorite desserts ever. The rabbit dish was the only thing that did not blow me away, but that is just a personal preference. My husband loved it. Can't wait to eat here again!

The food arrived piping hot in about 20 minutes. It was sooo delicious--the tasty juicy sausage pairs perfectly the mashed potatoes with either sauerkraut or kale. The apple pie was also tasty--larger chunks of apple and more spices less sugar than American apple pie from what I can tell. Perfect with whipped cream. A must visit if you're in Amsterdam and want to try traditional fare. Highly recommended!

Came back with no sauce on top, no mayo for fries - red bass decent - server/waiter said it "wasn't his fault" and "the system didn't take our order". No empathy, no anything. - the most appalling part. Offered us a free drink or a coffee. WHAT?? Didn't comp the martinis, didn't comp the awful steak frites, or anything. Sorry excuse for a restaurant that, if based on service and food, should be out of business. Won't be back. Go to brut de mer instead. No stars

The food (like the Steak Frites) is consistently solid, but you are definitely here for the energetic atmosphere and the perfect location. A great 4-star spot if you want to soak in the fashionable Amsterdam.

Amuse bouche goat cheese - had a nice smoky flavor and fresh 2. Scallops - small but packed with flavor. There is a white sauce that complimented the scallops and the bread pastry with onions 3. Goat cheese terrine - very nice soft goat cheese mixed with onions as well as berry and veggies. Only wish there was more bread. 4. Sea bream - very nicely done with a fresh taste of the meat and a crispy skin. Pairs well with its sauce and tomatoes. 5. Ravioli - nicely done al dente with a herby sauce and packed ravioli 6. Bread pudding - one of the best I've had and came out fresh and hot. Comes with a white sauce as well as boozy caramel sauce.
