    My "daiquiri" which was literally rum and a bunch of grenadine

    This is now the fireside cantina and it was unfortunately pretty disappointing. It took forever just to order the food. I think that the gentleman inside was new and in training but the two others inside didn't seem to be helping him and were standing around on their phone. I order the daiquiri which was supposed to be rum, peach, mango and lime and I watched them make the drink. I think they were out of something and so the woman helping the man just handed him grenadine and he just poured a bunch in. It literally tasted like rum flooded with grenadine. I couldn't even really drink it, it was so bad. I ordered the carne asada quesadilla and elote. The elote was decent but the quesadilla had little to no flavor and only about half of the quesadilla had any filling. The bits of steak were tiny and had no flavor. The meat was tender and juicy though. Overall, not great service and not great food.

The fish was cooked perfectly, and the sauce and accompanying ingredients brought everything together beautifully. Every bite was outstanding. Beyond the food, the atmosphere was fantastic, the service was friendly and attentive, and the bar offered a great selection of cocktails and spirits. I'm not a scallop expert but this one missed the mark - the flavors were off with the sauce (tasted earthy). Presentation and color looked good, but this didn't taste good. Also came here breakfast several times. I don't have pictures, but each time the breakfast was amazing!

First, our server, Zach (unsure of spelling) was wonderful. So friendly and attentive and had good recommendations for what to order. The food was so delicious! My husband also got the elk sliders, but he dug into them before I could get a picture. It was his favorite thing that he ate. The birria flatbread was just ok. We will not be getting it again. The wagyu burger was delicious and the fries were so perfectly crispy. Drinks were wonderful and they have a great full bar selection. I am not typically a carrot cake person because don't like raisins or nuts in my dessert. The flavor was great and the frosting wasn't too sweet. My husband thoroughly enjoyed it, especially with the crispy sugary carrots on top! We will definitely be back!

Without a doubt this is one of Tacoma's best dining experiences. Chef Shawn's team is small but mighty. The staff that we encountered were all super kind and attentive. It's widely known that Chef Shawn has a radiant personality and treats everybody in his restaurant like a longtime friend. He walked around chatting with everybody personally, showed off dishes as he walked through the restaurant, and was even happy to let diners take a peek at his kitchen (how does he make all this magic happen on TWO CAMP STOVES?!) The menu isn't massive, but everything on the menu is executed with precision and grace. I had a hard time deciding what I wanted but I've had my eyes on the Lobster Bomb for years. My husband got the "Tiny Burrito" which is quite literally the size of a newborn. The Lobster Bomb was excellent. Generous chunks of succulent lobster and the hollandaise was perfect! Subtle on the lemon flavor as to not overpower, but still rich and creamy. I tried my husband's burrito and the chorizo gravy is stellar. You could easily share this with 1-2 other people in my opinion. It lasted my husband two leftover meals! The restaurant itself is small but it's cozy and feels like you're at home. No frills, nothing over the top, nothing trendy. Just a relaxed vibe with lots of authentic touches from Chef Shawn. While this was our first visit it definitely won't be our last. Don't make the mistake I did and let years pass by before you experience Tibbitts!
