They have moved from a food truck to their new restaurant in North Lawrence. They had a soft opening today and we stopped by to give the BBQ a try. We tried the wings, pork, and the brisket. All three were very good and was impressed. The brisket was probably my favorite. It had a good bark, was very moist, great flavor, and perfect tenderness. They are in the processes of fixing up the slow ride bar and I think they will have a great place once it is done. I look forward to this being a great place to stop by for good BBQ in Lawrence. New to Lawrence,Kansas Best BBQ I've tasted. Granted Kansas is famous for there BBQ. But this place isn't like all the others. This says allot about there Bbq. The owner started from a food truck and has started his restaurant in Lawrence. Currently this restaurant is open from 11am till The food runs out every sat/sun. You have to check them out. Their meat is exceptional. I've had the brisket, pulled pork and burnt ends. They are all top notch. But for me, their ribs are the best. Best ribs I've had, period. That title used to belong to Joes KC, but not anymore. I've had the ribs at Fire Canyon three times. They are juicy and flavor is so good I don't add sauce. I just let that Smokey flavor come through. read more

We tried all the meats as well as the beans, cheesy corn, and potato salad. All of the meats were excellent. The beans were our least favorite side, not quite as flavorful as I would have hoped, but still ok. If you count on eating huge quantities of meat, you're going to have to lay down some cash. But my husband and I shared the smallest portions of each one of the meats plus three sides, 4 rolls, and a Coke for about $40 (including tip) and left completely satisfied. I wasn't happy that they charged 50 cents per roll. They should give at least one free per meat dish and make up the cost elsewhere. That's the kind of charge that just annoys customers. I stopped by to check this place out for my wife as she is planning on holding an event at Fire Canyon. I decided to have dinner and ordered the brisket slider, pulled pork slider and green beans. The bbq was fantastic (as well as the beans). I'd say it's on par or better than any of the best bbq in KC. I met the owner, Darren. My husband and I had lunch here today for the first time. It's a great little restaurant with a wonderful atmosphere. The food was incredible. I had the jalapeño sausage and my husband had the brisket sliders. Everything was amazing. Darren, the owner came over and talked to us for quite a bit. We really enjoyed getting to know him and his philosophy for the Restaurant. everything is made from scratch and you can tell. Staff is super friendly. I know they are a newer restaurant trying to figure things out. Prices were a bit steep for the amount of food you received. Sides were miniature. Spent $70 on dinner and we were still hungry. They need to condense/clean up their menu to be more approachable. read more

They're still on a limited menu but both the brisket and pork slider was delicious! I'd say one slider is more like a smaller sandwich and 2 was the equivalent of a large sandwich. I didn't have a side, but they had bbq beans and apple slaw available. They had a lot on draft, a few cocktails, and flight options for beer, whiskey, and bourbon(? I think). It's a large space and a stage is in the works for music. Bathroom was clean. I interacted with 3 staff - the hostess was enthusiastic, the bartender was attentive but not overbearing, and the owner came out to check on food and talk about his plans. He asked if we liked the music and the volume, said he'd turn on any game requested, etc. (I really appreciated that I could hear a conversation as it was early - so many places on this town are just loud and my parents don't want to visit them. I wouldn't expect that during a jam session obviously). Im relatively new in town so I've been looking for my go-to restaurants for different types of food. This was definitely the best bbq meat I've had so far, so hopefully more sides and options are forthcoming because it just might be the one! read more

I tried Fire Canyon BBQ last night and was so very impressed with the quality of the food and the wonderful service. To open a BBQ joint in Kansas you have to be something special. These guys are and more. On top of great food is an impressive lineup of beer on tap and a full bar with something for everyone. First time and likely the last. Spacious venue and in a decent location and setting. Ample parking for two and four-wheeled vehicles. The menu is acceptable but limited. Beverage selection is good. Had the brisket with two sides (meaty beans & cheesy corn w/ "ham"). Neither side was that outstanding and severely lacked any meat mixed in. The brisket was the star of the show. Good quality and the portions were good except the "slider" was on the small side. Flavor and smoke penetration were very good and the meat was lean and fork tender. Sauce (that we had to ask for as well as silverware was on the smoky side and very good), albeit unnecessary, which is what you want. Soft drink was overly iced and watery so a to-go w/ no ice was requested and provided. Service was good and attentive enough. Unfortunately, on the whole, the experience was underwhelming and of only modest value at best. With some work on the sides and other tweaks this place could survive. read more

This place is the real deal! The ribs were among the very best that I have ever had and the owner Darren is a great guy with a very solid work ethic. Def 5 stars. His BBQ sauces are also outstanding! Let me start off by saying I live in California and planned a company picnic (approx 75 ppl) from out of state via email. I browsed the internet and found a few different bbq options in the Castle Rock area and contacted a couple companies, Fire Canyon included. Ultimately I chose to go with Fire Canyon because of the amazing customer service I received from Darren from the very first contact we had. Darren was very responsive and helpful throughout the entire process, quick replies, suggestions and solutions to make it great. I received great feed back from the attendees of the picnic that the food was excellent, chicken was their favorite! Darren went above and beyond to help me plan this from out of state and I will definitely be using them again for future events! These guys are AMAZING!!! The food is not your normal BBQ fare and it is delicious! The chili - both red and green has a great kick and they don't skimp on the meat! Darren and Fire Canyon BBQ are fantastic. I recently had my birthday party catered by FCB and all I heard the entire night was how great the food tasted. My order consisted of Pulled Pork, Briscut, Gouda Mac n Cheese, Coleslaw, Cheesy Corn, and ABTs. I wish I had more left over as I write this post. Along with the high quality food, the service is great. I didnt have to do anything for set up, serving, etc. Highly recommended for anyone looking for BBQ in Castle Rock or Colorado, in general. read more

The food is great. The people are great. Fire Canyon catered our wedding, we were blown away by the food. It's a good thing that we have some leftover sauce, because it is amazing, but at the wedding I did not try it, because the meat was so good on its own. Get the ABTs, and order extra. We fed 60 people, we ordered 70 ABTs, Darren brought 100, and we ran out fast. Can't go wrong with Fire Canyon Barbecue. read more

We tried the sliced brisket and sausage - both were excellent! Brisket was nice and tender. I added the sausage to a pasta casserole and the next day to a breakfast omelet. Really added a lot of flavor to both. Pitmaster sauce is one of my favorites. Definitely 5 stars for quality and service.
