Delicious hand-pulled noodles!! I _love_ biang biang noodles so was unbelievably excited to find a shop specializing in them in Kirkland -- they're the perfect carb pick-me-up after a trip to Costco. The noodles are perfect texture, with a slight chew / bite, and are the best vehicle for transporting sauce. I got the dry wide noodles with shrimp, and I thought the tender, snappy shrimp went perfectly with the noodles and chili oil. I do wish that it was a smidge more spicy and less salty (I got the spice level three and it was still barely hot but it was too salty to add much more), but it was delicious nonetheless. My dad got the wide noodles in beef soup, and my mom got the pork belly dry noodles with medium noodles, both of which were delicious but similarly more salty than spicy. I also thought the texture of the medium noodles was a tiny bit better, so I'll probably try those the next time I'm here! We also got the taro pancake to start us off, and I was quite impressed! It was a great sweet and savory combo, and I think that the pancake was the tiniest bit chewy (as if it were made with rice flour?), which I really enjoyed. It was a little bit smaller than expected, but it was a great way to whet our appetite. The service is also quite efficient! You can place an order yourself on the QR code at the table, and the food is ready within 10-15 min. I found the process of getting a table a little bit confusing, since there's space for people to wait for a table outside, but I didn't see an obvious waitlist or host stand. We visited Fang's Noodle House on a Sunday for lunch at 11:30 after hearing that they serve the best biang biang noodles in the Seattle area. When we arrived, it was pretty busy, and throughout the meal we saw that they had pretty good traffic with a constant in and outflow of customers. It never got 100%, so I think their footprint and popularity are pretty much ideal. Ordering is done via QR code online menu but they don't supply wifi. That's a pet peeve of mine. Mini Pan-Fried Buns ($12.95) - These came out last after both noodle dishes. The buns are just the normal pork XLBs then pan fried a bit. I don't believe they make the XLBs in house, or at least not by hand, considering how uniform the pleats are. The skin is thin and chewy, and surprisingly the dumplings don't burst while being pan fried, so all the aspic still remains inside. The pan frying isn't too heavy - there's just a bit of a crust that develops but nothing too much. The juice inside is full of garlic, ginger and porky umami as expected. The meatball is on the tougher side of things, very finely processed, not very fluffy. (4/5) Spicy Pork Belly Dry Noodle, Biang Biang Noodle, 1* Spicy ($16.99) - This is a very saucy noodle, which, unlike most of the other places in Seattle that serve biang biang mian, actually tastes balanced and correct. The sauce, while full of oil, gives off a harmonious sweetness, which melds into the vinegar, garlic, and chili oil mixture. It's a great tasting sauce that, while giving a red hue, has basically no spiciness. They scoop some pork belly on top, cut into lardons, that are tender and fatty, which helps give an extra unctuous coating of richness that lingers on the tongue. There's some chopped cabbage mixed into the red sauce as well, giving the dish a more healthy bent. The noodles themselves are really wide, perhaps up to 2 inches in some sections, and are cooked to absolute bouncy perfection. There's no variation at all in texture throughout the entire table thwacked noodle. (5/5) Beef Shank Noodle Soup, No.5 Flat Noodles, 3* Spicy ($16.99) - Firstly, the beef is excellent. It's perfectly braised shank, cut into smaller pieces for ease of eating. The tendon and connective tissues are broken down until fall apart and tender. The broth tastes like roasted beef bone, but isn't very aromatic. It's kind of flat with that almost powdered pho broth type of taste. They add a chili oil on top that's somewhat fragrant and gives most of the flavor to the dish. At 3* spicy, it's still not too spicy. It certainly prickles the throat and gives a bit of heat, but no pain. There are some Sichuan peppercorns floating in the dish, but not there's no noticeable mala numbing quality to the broth. The No. 5 flat noodles are excellent. They are thicker noodles that stay remarkably bouncy throughout the meal, even while soaking in the soup. They are on the somewhat firmer side, so people who like softer noodles may not enjoy them as much. Given the size and shape, I'm thinking these might be hand cranked and/or cut rather than hand pulled. Either way, they are really good. The real highlight was the mala beef shank dry noodles. Everything else, from the beef noodle soup to the xiaolongbao to the pan fried buns were fine, but nothing stood out as much as the dry noodles did. Maaan i got tiktok catfished. Came here to order the XL beef dry noodle and the pork belly dry noodle. Ended up with a bowl of oil soup. I even ordered extra pork and that poor meat was diced into minuscule pieces. Green beans were super lame as well, my favorite part was the diet coke from the can, since i knew they cant f that up at least. I got the beef shank noodles (beef was very tender) and my husband got the pork belly - both yummy options. I also feel like the spice level was pretty accurate, I chose 2 pepper signs which was less spicy than my husband, who got 3 pepper signs. However, I feel like 2-3 peppers were spicy, but very manageable. I didn't feel like I had to drink a bunch of water, but did make my nose run a little (a good thing!) Updating my previous review. Fang's has a remodeled interior that is sleeker, colder, less friendly, less funky, and less playful than it was when it opened. The colorful wall murals are gone. The bowls used to serve noodle dishes are now HUGE and DEEP, leading some to say portion sizes are not generous. That is not correct. They are plentiful. You're just getting your noodles in a gargantuan bowl. Service is acceptable, but just barely. It's often negligent. I ended up getting up to get my own new set of chopsticks when I had an issue with mine and some extra napkins because the server was too focused on playing with the TV stations (which they were two or three times while we were there). You order from a QR code and pay in advance--including tip--now. The food is still very good. Noodles are great. They've also gotten creative and gone a bit overboard there with the addition of colored noodles, which I did not try. Dumplings have gone creative too. The flavors are very good, and the dumplings are well made. The colors for the dumplings make a bit more sense than for the noodles, but I still find the whole idea a little much. Still solid noodle dishes. Maybe a tiny bit less balanced and authentic than when they opened, but the noodles are well made. Flavors are good. Visited Fang's again when I was craving Chinese noodles and there were still a decent amount of tables left at 6:40 PM on a Wednesday. Parking is easy with a large shared lot and unlike some previous visits, it doesn't seem to have a wait even during peak dinner hours at least on weekdays. Overall, just a solid neighborhood spot for this genre of biang biang style noodles. Mala Beef Rib Dry Noodle is exactly how I remember it; the noodles are fantastic, thin but have an amazing chew to them still. The beef rib is very tender and the cabbage adds a nice bite to the dish overall. I got the beef shank noodle soup, and the stewed beef was super tender. Broth was yummy too! My partner got the mala beef shank dry noodle and loved it. Even at level four spicy it wasn't too bad and not crazy on the mala flavor (which I prefer since I don't love mala). We also got the beef shank side, pork xiao long bao, and chili oil spill dumplings. xiao long bao were pretty good though the skin could be slightly thinner and the dumplings were good but nothing special. Wonderful service, nice staff all around. We went around 4:30p, a super early dinner, so it wasn't busy but still had a couple filled tables! My friend and I tried the spicy XLB, the chili oil spill dumplings, the mala beef shank dry noodle, and the beef rib noodle soup. Everything was wonderful and exceptionally flavored (especially the two dumplings), except... the beef rib noodle soup that fell pretty short. The rib was much less meat than the shank bowl, and was much smaller/shorter of a rib than shown in the advertised photos which is always a disappointment. It was cooked really nicely tender though, so again sad because it was only a few small bites (and the rib costs $8 more than the shank). The soup was also really lacking in flavor - we both thought it was super bland/watery tasting. We tried the katsu curry noodles, Orange chicken noodle, cold noodle, pan fried pork dumpling (like a pan fried XLB) and green beans. The beans have a the numbing spice kick to them, which I liked but the third person in our group could only eat a few before it became unbearable. The curry noodles is interesting. It has peas and carrots, which isn't what we're used to seeing unless we're in Hawaii ordering Hamburger Curry. Orange chicken noodle was great. Really good, authentic-tasting food! We were seated right away at 630 on a weekday. There's a large parking lot but I'm sure it gets packed during peak hours. You order everything up front through their app and then they bring it out to you. The beef shank noodle soup is definitely rainy day comfort food and the biang biang noodles are perfectly chewy. I also got the blistered green beans and they were pretty good. Condiments interestingly are not on the table; you have to request them and they're a little stingy on it. My husband ordered a pork(?) noodle which was much more flavorful, so if I come back I might try that instead. Surprisingly, their soup dumplings are actually what stood out to me here: great soup flavor, reasonably sized filling, and good dumpling skin. I would order it again if I came back. 4.3 Stars. Really good. Finally, was able to dine in instead of multiple take outs here. As expected, even better to eat as it is fresh because the noodles just aren't as good when packed to go and sits for a bit. The noodles were perfect, 3 star spicy just enough spicy for me. I capitalized so hard that I added cost by adding noodles and fried egg. Final cost with tip was $33. That is quite a bit high honestly, to my own doing admittedly, but still, with the extras it is a bit high. Also, there is a bit of sweetness that I'm not that fond of that comes from the mala that I'm not a fan of. These 2 things are the main reasons why it is not a 5 Star for me, but easily good for return visits but would be even more if not for these 2 things. However, I felt the portion size you get for the price you pay for was kind of steep. I ordered the Orange Chicken with Mixed Dry Noodles and it was definitely good. But at $19.99, I expected a bit more than I received. Upon arriving on a Saturday at 7 p.m., I was pointed to take a seat at a table. Taking my seat, I wasn't told anything and just happened to find a QR code off to the side of the table to see and order from a menu. You order and the waitress brings your food to you. Other than that, the service here isn't the greatest. I didn't even get a greeting or any direction on how to order. That said, you don't come here for great service, you come for good food. And it did deliver there! At 7 p.m. on a Saturday evening, there were about 3 or 4 tables available and most of the people eating here were groups of friends in their 20s and low 30s. A handful of tables appeared to have their parents with them so overall, this seems to be a younger-person establishment. It also seemed kind of dark inside and I don't mean the romantic kind. Overall, this is not a fancy place. It's a hole-in-the-wall-like place with good food. I knocked off a star for their high prices for the small portion sizes you get and the dim lighting. As it was our first time visiting, the menu off of the QR code was confusing as noodle options show at the top "let's meet our noodles" with $0, followed by menu items with prices. All can be selected and added to your cart however we found out later that they are only there to show you noodle options for the dishes below. There is ample seating, however the bathroom is gender neutral and could do with a deep cleaning and a sign that asks people to put the seat down after use. Perhaps take-out next time. I've been seeing this place on social media and decided to try as we were coming up from Bellevue. The beef rib was what had interested us, after seeing many videos of the large bone in the noodle dish. The bone was a bit smaller than some of the ones that were posted online, but it wasn't too small either. The meat was soft but did not fall off of the bone immediately. The sauce on the noodles was not very spicy (I could've gotten it more spicer). I didn't get as much mala spice flavor as I was wanting but I thought the sauce was enjoyable. The noodles are chewy and the sauce covered the noodles graciously. It was kind of heavy to eat by the end, so I wish I had gotten some of the cucumber to balance it out. The bowls here are deep and look very big, but I found in actuality that there is not as many noodles as other biang biang noodle places in Washington. I thought the soup dumplings were the sleeper hit. The broth in the pork dumplings was rich and flavorful. Different than other broths I've had in xiao long bao, but in a good way. Good amount of soup in them too! Everything is done via scanning the QR code at the table, so very minimal interaction with the staff. You also pay as soon as you order. Had to try this place from TikTok. The dry hand pulled noodles with the beef ribs is amazing! the meat does fall off the bone. I literally pulled it off with chop sticks! The dumplings in chili oil were so delicious! And eat the cucumbers in between the chili oil dumplings and the dry noodles to cut through the spices is perfect We didn't really enjoy the green beans. For some reason the seasonings tasted like dish-soap. Not sure why but we couldn't eat them. Besides that the food was good. Located in a strip mall there's plenty of parking. The downside is there's rod work in the area so getting in and out can be slow. I'd give this a try for the noodles and dumplings! if you're looking for a foodie spot. read more
