    Mala beef shank dry noodles

    I went here with a friend and we had our littles with us. It's awesome that they offer high chairs! As far as seating goes, there's a lot of booths and a few tables to sit at. I ordered the mala beef shank dry noodles (3 stars spicy) with tomato and egg. It was deliciously packed with flavor and spices! The noodles were perfectly chewy and the beef was so tender! It was slightly oily but that was expected. I would honestly eat here once a week if I could and try everything on their menu.

    Our first visit to Fang's and I can see some of the themes others have mentioned. The quality of the noodles and the ample fillings in the Xiaolongbao are the standout stars of this establishment, 5+. However, I can only assume that most patrons are assumed to be regulars so the basics of welcoming you in and explaining menu and ordering protocols require getting the attention of the server. As it was our first time visiting, the menu off of the QR code was confusing as noodle options show at the top "let's meet our noodles" with $0, followed by menu items with prices. All can be selected and added to your cart however we found out later that they are only there to show you noodle options for the dishes below. There is ample seating, however the bathroom is gender neutral and could do with a deep cleaning and a sign that asks people to put the seat down after use. Perhaps take-out next time. Including photos of just a couple of the dishes we ordered...

    Updating my previous review. Fang's has a remodeled interior that is sleeker, colder, less friendly, less funky, and less playful than it was when it opened. The colorful wall murals are gone. The bowls used to serve noodle dishes are now HUGE and DEEP, leading some to say portion sizes are not generous. That is not correct. They are plentiful. You're just getting your noodles in a gargantuan bowl. Service is acceptable, but just barely. It's often negligent. I ended up getting up to get my own new set of chopsticks when I had an issue with mine and some extra napkins because the server was too focused on playing with the TV stations (which they were two or three times while we were there). You order from a QR code and pay in advance--including tip--now. The food is still very good. Noodles are great. They've also gotten creative and gone a bit overboard there with the addition of colored noodles, which I did not try. Dumplings have gone creative too. The flavors are very good, and the dumplings are well made. The colors for the dumplings make a bit more sense than for the noodles, but I still find the whole idea a little much. Still solid noodle dishes. Maybe a tiny bit less balanced and authentic than when they opened, but the noodles are well made. Flavors are good. Will definitely return, but I just hope they don't eventually lose their way by trying to be different and trendy instead of reliable and fun.

    We wandered upon the place while searching for restaurants in the area. The hand pulled noodles were delicious and the texture was perfect. The Xiao long bao were just alright and the cucumbers were refreshing. We'll be back to try more items on their menu.

    Spicy Stir-Fried Green Bean

    Decided to make the drive over from Seattle after having this restaurant on our list for a while, and it was worth it! We ordered the mala beef rib dry noodle, pork xiao long bao, and spicy stir fried green bean. The dry noodle was super flavorful and coated with a mala oil. The beef was tender and the noodles were chewy. We loved this dish! The XLB were also surprisingly delicious, definitely comparable to Ding Tai Fung or Supreme Dumpling, with a juicy filling and thin chewy wrapper. The green beans provided a nice contrast, but we prefer them in garlic. Service was quick. We would drive 30 minutes for this place!

    Located in a very unassuming strip mall, the exterior had us a bit worried but once we stepped inside we were pleased to see a fairly clean and updated interior. We tried the katsu curry noodles, Orange chicken noodle, cold noodle, pan fried pork dumpling (like a pan fried XLB) and green beans. The beans have a the numbing spice kick to them, which I liked but the third person in our group could only eat a few before it became unbearable. The curry noodles is interesting. It has peas and carrots, which isn't what we're used to seeing unless we're in Hawaii ordering Hamburger Curry. Orange chicken noodle was great. The cold noodle is what I came here for and it did not disappoint. Our server was so happy and friendly, it made us all smile while we ate our food. Worth the drive and google map adventure for sure.

    Wonderful service, nice staff all around. We went around 4:30p, a super early dinner, so it wasn't busy but still had a couple filled tables! My friend and I tried the spicy XLB, the chili oil spill dumplings, the mala beef shank dry noodle, and the beef rib noodle soup. Everything was wonderful and exceptionally flavored (especially the two dumplings), except... the beef rib noodle soup that fell pretty short. The rib was much less meat than the shank bowl, and was much smaller/shorter of a rib than shown in the advertised photos which is always a disappointment. It was cooked really nicely tender though, so again sad because it was only a few small bites (and the rib costs $8 more than the shank). The soup was also really lacking in flavor - we both thought it was super bland/watery tasting. Wouldn't rec (unless it's a one off)- just surprising that the other dishes were so flavorful except this one. Also highly rec the fruit sodas (i.e. green grape, passion) because they were delish! They were the perfect amount of sweetness (aka not too sweet).

    I've had Fang's on my list for quite some time. Not sure how to feel, but I do want to come back. For a noodle house, I wasn't super impressed with the noodles, but would like to try another dish. Their dessert options (mainly dessert XLB) are amazing though, so I honestly wouldn't mind coming here after a meal either. Service isn't nothing to write home about, order via QR at the table and they'll bring food. Not much interaction. Ample parking in the plaza. There's a decent amount of seating but it can get full, so budget time for a wait just in case. Noodles - I love biang biang noodles so may be judgy but these were slightly too hard rather than QQ or chewy. Not bad, but would prefer a bouncier texture than firm. Meat and sauce was tasty, but the beef was a bit inconsistent. Some pieces were tender while others a bit rough. Would've loved a little more protein, but interested in the beef rib option in the future. Pan Fried Dumplings - these were just worse xiaolongbao. They're barely pan fried and then they just stick to the paper in the basket. This also means they run pretty easily. Would stick to ordering XLB. They also don't provide spoons which would be nice for all XLB soup. Taro XLB - star of the show! Definitely snag one of the dessert XLB if not more. They also have red bean and chocolate. Fully filled with a sweet, smooth, and nutty taro paste. These are plentiful and delicious.

    I had the dry mala noodles with the beef rib it was good and the meat was incredibly tender. You scan a plack on the wall to order and they bring the food to your table. The service was ok but the food came out quick.

    Really good, authentic-tasting food! We were seated right away at 630 on a weekday. There's a large parking lot but I'm sure it gets packed during peak hours. You order everything up front through their app and then they bring it out to you. The beef shank noodle soup is definitely rainy day comfort food and the biang biang noodles are perfectly chewy. I also got the blistered green beans and they were pretty good. Condiments interestingly are not on the table; you have to request them and they're a little stingy on it. We were given one small sauce to go cup for the whole table. I do wish they would switch away from the single use containers but overall I think this establishment is a great place to get your soup and dumpling fix

    Came here for dinner on a weekend, and there was plenty of seating available and not much of a line. I ordered the Mala Spicy Beef Rib Dry Mix Noodle, which didn't have much flavor other than salt. My husband ordered a pork(?) noodle which was much more flavorful, so if I come back I might try that instead. Surprisingly, their soup dumplings are actually what stood out to me here: great soup flavor, reasonably sized filling, and good dumpling skin. I would order it again if I came back. We also ordered the scallion pancakes, which were nice and crispy but otherwise didn't stand out. Service was super fast, so it's a great spot if you need to just scarf down your food and go.

    Presentation - good Clean - good Taste - good Service - poor Value - poor Ordering is done via QR code, but you're required to pay and tip upfront, which is odd. Ordered the Signature Mala Beef Shank Dry Noodle and Spicy Wontons. Signature Dish - Good flavor and spicy even at 2 stars, but portion was shockingly small. Only one piece of beef, a couple pieces of noodle, a tiny bit of lettuce at the bottom, and a large bowl that's misleading. I even added a fried egg for extra $ and it still felt skimpy. The wontons were forgettable. Dumpling World in Everett and Din Tai Fung both do it better. No service at all--no water refills, no check-ins--yet you're expected to tip in advance. Overall, overpriced for the portions and not worth it.

    On Instagram it shows noodles with big ribs but on your menu it shows no big ribs? It's the beef rib dry mix noodles. i see just small cut meats?

    That is the right dish - I ordered it last week and it came with the large beef rib included.

Their sushi was really good and the cut of the fish was just the right thickness. This is a family business and the girls serving us we're really nice and checked on us often. I like supporting small family businesses so I definitely will be coming back and recommending this to my friends!
