While I waited for my food, not very long, I got a chance to watch the short order cook work the griddle, and what turned out to be one of the owners work four pans on the cooktop making eggs. There's a certain raw beauty to watching a short order cook on a griddle. It was clear watching people come and go, that most are locals. Over half the customers I saw come in greeted by name and their drink order put on the table without them, even having to say anything.
