I want to highly compliment the ambiance, it's not overpacked with stuff on the walls just a simple and light decor with a great lunch place vibe to meet friends or take a work call and have lunch. We got the patty sandwich and wings. The buffalo wing sauce tasted tomato based which I didn't like too much but it wasn't bad. The patty melt was delicious.

My wife and I had a blast at Evolution Bistro & Bar! The vibe was warm and welcoming, and the service? On point. Our server nailed it--friendly, fast, and always a step ahead. The drinks? Top-notch. Every cocktail we tried was a hit--balanced, flavorful, and just what we needed. The food? Insanely good! Big portions, bold flavors, and beautifully plated. Bonus points to the owners--they swung by to check in and made sure we were loving life. That kind of hospitality is rare and awesome. Highly recommend Evolution Bistro & Bar! My chef husband and I wanted a nice date night out, and I'm actually the much fussier eater, so I was all preparing for a full eval of this place. From the moment we walked in, I was in love. Such a lovely atmosphere, gorgeous décor and lighting, high coffered ceilings, dark wood. Our server was lovely and attentive and answered questions about the menu, and she was not at all miffed when I didn't love the wine sample I tried, and was happy to swap it out for another (that was fantastic!). On to the food! We scarfed up the pork belly rangoon before I could get a picture, but they were perfection. The ahi tuna tartare doesn't look like the picture currently on their website, and it arrived looking like the typical tuna/avocado/mango stack that we've all had before. But, whoa! The pineapple salsa took it to a new acidic level, and there was something else going on that I can't name, but it was perfect. The bone marrow toast. I can't even... Initially, tasting each component, I was underwhelmed, but once you stack the cheese toast, the marrow, the fruit compote, and the arugula? Total heaven. What a genius dish. And who doesn't love a smashburger? They do theirs flawlessly. Juicy, not overcooked, perfectly seasoned. Usually after a full meal I don't order dessert, but I just had to sample their nightly specials because they'd proved themselves, lol. I also never order a crème brûlée as I find my husband's to be the best I've had, but... I got their vanilla version, and my husband got their peanut butter and chocolate pops. Both were damn divine! The brûlée was maybe more of a pudding with a sugared top, but who cares? It was topped with beautiful fresh fruit, perfect little meringue bites, and a side of whipped cream, and it was heavenly. Perfect service, perfect ambiance, perfect food. We cannot wait to go back!

We decided to try the small plates and started with the 3: Rangoon, pierogi, and meatballs. The rice cakes were the star of the meatball plate. The pierogis were good not great. The rangoons had a nice crisp and flavor probably my favorite of the three plates. We were still hungry so we split the smash burger and fries and in retrospect due to the prices and quantities of the small plates and how good the burger was I would probably just get that in the future. We also tried the carrots and they were underwhelming, I had high hopes for their flavor and they were good not great. I'd come back again and I'm glad we finally made it here. I had thought about getting "the s'more one" an espresso dessert martini but I was full- maybe next time.
