Horrible horrible horrible service. We were in town for a work seminar and since this was the only place open near where we wanted to be. We made the mistake of going twice. Both times the service was horrible, the server never came back to refill drinks. The server was asked for condiments and she never brought them. The sushi took longer than a burger. You don't even cook sushi! The food was cold. Basically just don't waste your time.. unless you want to pay for over priced 7-11 food. read more

I like this bar... But mostly cuz I have to. I live and work in the area and there are simply NO decent places to get a happy hour beer after work in this part of town except maybe for Faultline. This is one of the best bar and grills in the area. The atmosphere is buzzing with business people and local workers who come here to eat, drink and catch up. The Bar staff is superb. What's more the management is personable and engaging. From Paul who supervises the Bar and all of the restaurants to Arlen, who manages Tusca, the hotel restaurant. During lunch, James, the long time bartender who hails from Kingston, serves up warm smiles and some of the best mixed drinks this side of Jamaica. Ask for his Sidecar; you can't go wrong with that one. Ally is often here in the afternoon and she is also a wonderful bartender, too, who is lovely and beams with a great personality. Afternoons and evenings, you can find Andrew tending bar. Andrew has that All-American look with quick smile and excellent service and he makes interesting conversation about his travels and vacations. Also joining Andrew is Anthony. When Anthony is not practicing his skills as a great mixologist, he twilights as a world-traveled photographer. Ask him about his photos over a martini. The food at Evolution is also some of the best I have had at a bar and grill. They recently released their new speciality hamburger menu which compliments any drink. I highly recommend you try two things: 1) the Cobb Salad which, for me, is even more fresh and robust than many restaurants and 2) the English Club Sandwich. The uniqueness of this sandwich is the fried egg which is a delightful compliment to this traditional meal. Lastly, the bar has about 5 TVs surrounding the bar and dining area, so in times of a great soccer match or other game, you can catch it here and drink and merriment to boot. read more

This place is the place to be when staying at the Hyatt or when attending a conference at the convention center. It is located in the lobby of the hotel. The lobby space is pretty open and has high ceilings. The Evolution Bar and Cafe is steps away from check-in desk, so you can literally check-in and eat/drink. I was here during a convention and the place was pretty crowded every single day and night. Everyone is here until the late hours of the night/early hour of the next morning. With plenty of bar stools and tables it is completely acceptable to come here alone or in groups. They also provide service outside by the pool which is gorgeous and the outside does have heat lamps in case you get cold. The only appetizer I tried was their sliders which were pretty good. Definitely a happening place for Silicon Valley business travelers. read more

Came here with my team during a convention we were attending nearby (which many take place at nearby hotels!). We needed a quick lunch that was not too far way from it, so we could quick circle back to the convention. Noticed this place had sushi, which worked for the team. The sushi was alright, nothing eventful. A bit overpriced, and the service was a bit slower than we would have liked. All in all, if you are in the area, or attending a conference, this place is not bad for a quick (or somewhat) food fix. read more

The Evolution Bar & Cafe is awesome! The bartenders and staff are super friendly and the food is pretty good too. The staff is SUPER personable. Let me start off with some of the drinks. James, the bartender from Jamaica who has been there for 25 years makes an AMAZING sidecar. He is also very sweet and always greets you with a handshake, hello or "your usual" drink! When our lunch was taking unusually long to come out, James went to the kitchen himself to get our meal. Andrew, is the blonde (dirty blonde) guy who slicks his hair back, and is SUPER cool too. He's really friendly and can start up a convo with just about anyone and talks shop about his travels to Tahoe! Ben, is a super personable guy too; shaved head and remembers his customers. He's become THE bartender for the SMC students taking classes at the Techmart. Ally, is a very pretty young lady who bartends in the afternoons and is super sweet, and talks shop with us about our day and her travels with her friends. Anthony usually bartends in the afternoons and evenings and super nice as well. I learned that he's a photographer on the side too! Kelly is a really friendly manager too, and thanks the customers for coming. Hector is a popular server. He got moved from the night shift to the day shift and is often requested by parties to serve because he's such a sweetheart. He watched my classmates and my belongings one day, and my drink (making sure no one slipped anything into it) while we rushed over to the Techmart to submit our midterm. He is very sweet and remembers customers. Eddie is the guy with long hair, and he is very sweet. Offered to make my coffee twice (because the first just wasn't as great - very nice). Very enthusiastic! Paul, the banquet manager, manages Tusca and fills in to help manage the bar from time to time. He remembers customers and ALWAYS drops by to say HELLO! He's super friendly and makes sure that people are well taken care of. What I like about the bar is that you can order (from the bar, Tusca or the Sushi bar) from all three restaurants wherever you sit. I've ordered the Vita Burger and Social Burger (BOTH VERY GOOD - NEW MENU), the goat cheese artichoke dip YUM) and the Duck Confit dip (it was good, but was not as pleasant for me as the goat cheese dip - personal preference). I've also ordered the Chicken Tortilla Soup, and the Veggie soup (both VERY good and prices pretty reasonable), the quesadilla, the garlic fries, and #88 Spicy Tuna Sushi Roll. I wasn't too fond of the lobster (?) ravioli but really liked the breads and dips that you're offered at Tusca. The House Wine is pretty good too. All the prices are pretty affordable. All in all, the experience at the Evolution Bar and the Tusca Resto is pretty awesome! The sushi is pretty fresh too! Just grabbed a quick bite here. Not terribly impressed. The burger was soggy and fell apart as soon as the toothpick was pulled. They'd hold together better if you toasted the bun. Flavor was okay. You get the quality of an $8 burger for $18 quite frankly. The fries were crisp and pretty good. Service was incredibly slow and inattentive. Took quite some time to place an order but once the order went in the food was delivered (by a runner, not the waiter) quickly. Never saw the waiter again. I would have liked another drink but simply gave up. After finishing my burger (using a fork) and waiting for 20 minutes with the plate pushed away I finally got someone's attention who found my waiter to get me the check. Might be okay to grab a drink before heading out to eat somewhere else with a group but won't suffer through eating here again. read more

We came here after the Snowbomb.com Ski and Snowboard Festival for a drink with friends. We picked it because there was a big sign outside the hotel advertising their DAILY happy hour. When we sat down we were told that this was not the case-- happy hour was only m-th. Prices were really high and for 4 watered down drinks, the bill was almost $50. Drinks were weak and we were disappointed already due to the false advertising about happy hour. Will not be back. read more

I can not speak to the food or drink here because we never were able to order. Just left the place after speaking to the Hotels front desk manager. Worry not I told him to look at yelp later today so he could read my review. I do have to say he seemed genuinely concerned with our complaint, So that is good and the only reason I am giving a 2 star rating. OK here is the scene. This was the weekend of the big Pinball/video game convention. And I think there was some other convention going on as well. I heard it was Jehovah's Witnesses, but I saw no clock towers so I can't say for sure. Anyway, yes it was busy there but not any busier then any other time I have been at a convention here. The Bar was buzzing for sure but seemed to be well staffed, as it should be. They are attached to the convention center so this isn't their first rodeo. We came in and sat at a communal table next to the bar. We sat for 10 minutes watching servers running all over the place. The first thing I noticed was that not one server was scanning the room or their tables. Every one of them was just focused on what ever they were doing at that moment. As if they were in the weeds but like I said it looked competently staffed for the crowd. I would wave and try to catch their attention but not one noticed the 300Lb 6'4" dude with the blue mohawk trying to get their attention. That seems like a failure in training to me. So now 15 minutes into our wait a waitress came to other side of the table but took orders from the two people that just sat down. That's when our friend got up when to the bar to ask if maybe they could send someone over. 5 minutes later that same woman finally came to us in a huff is if we interrupted her doing her job. I said "thanks for taking 20 minutes to finally try to serve us, and for serving those people over there that just sat down. Thank you but we have decided to not order anything from you" WIth no apologies given we moved to another section. We were still hungry and thirsty after all. We grabbed an un-bussed table in hopes that they might at least clear it and ask if we wanted something. 10 to 15 later after sitting there trying to wave down wait staff, and looking at someone's dirty plate and empty drink we stood up and went to the front desk to tell our tail to the manager. I've been here a few times while attending conventions and the service has been universally warm and friendly. Drinks and food are pricey, but this bar has the best food options in the hotel, by a mile. The chicken quesedilla was tasty and the bartender nodded with approval at my drink order. They have a multitude of fancy, froofy, colorful Cosmopolitan-type drink options, as well as a pretty extensive selection of non-alcoholic options that seemed even better. Evolution isn't exactly the greatest bar in the world. It's pricey, the service is slow, and the wait staff can be pretty spotty about remembering the contents of the menu. The only thing that holds this bar up above one star is the food, which is really quite good. In fact, on a really slow day and with a particularly keen server, I'm sure it's possible to have a fantastic dining experience here. That, however, was not the case either of the times I drank and dined at Evolution. For want of a better way to express my experience at this bar in the lobby of the Hyatt (which, by the way, has terrible parking on a busy weekend), here are some bullet points. - Food: Excellent goat cheese dip and chicken quesadillas. Very good duck confit salad. - Service: Our waitress took our order and did not enter it. Another waitress arrived about 30 minutes later and asked us if we were the table whose order was forgotten. Bewildered by the presumptive question, we had to place our order again with this new waitress. (The order, along with the drinks, was comped, but that never should have happened in the first place.) - Service: The drink menu contains an item called "Dark 'n Stormy", and the waitress didn't know about it. - Drinks: The "Dark 'n Stormy" is supposed to be rum and ginger beer. It was more like rum with a tiny bit of ginger-colored syrup. - Price: This bar is in a hotel, so the prices are automatically at least 20% above anywhere else for the same items. Even for a hotel, though, I think $9 for a lowball gin and tonic with a generous amount of ice is too much. All that said, if you're staying at the hotel or attending a convention next door, Evolution is certainly a convenient place to meet friends or colleagues for a drink and a snack. I certainly wouldn't go out of my way to dine there again, though. read more

This place is not a sports bar, but it does have a bar with games usually playing on the monitors. The bartenders are great. The food is good, and they always have seasonal plates and desserts. Friendly service. You can get coffee, Italian food, appetizers, burgers, pizzas, cocktails, great draft beer, sake, wine, and sushi all in one place. I honestly haven't paid that much for such an awful drink ever. Would not recommend their cocktails, even their patron margaritas were sour to the point where I asked if they could add more mix. I'm a fan! I was at the hotel for a convention and it was amazing. Evolution customized two drink names to apply to the people attending the our convention and gave it a very nice price of $6.00. I have to say though, if you are in the mood for pizza, order the Margarita pizza! It's so flavorful and delicious with a nice crispy crust. I think it was $15-$18 for a whole pizza with 8 slices (I think). I had their cheese cake one evening over the three days I was there, and it was good, but if you order it, ask for extra raspberry sauce. read more

I had burgers, tacos and pizza here, during my stay in Hyatt hotel. All foods are tribble, specially pizza. It's unbelievable how they can make those foods so badly. Sometimes i feel if they randomly put some ingredients together and add some spice, the result would be better. For pizza it seems they used bread that already baked probably a few days before. Burger's meat was also not fresh. Tacos was ok compared to pizza. foods from the Cafeteria of the company i worked were way better. I know hotels in US are famous for their bad food, but I thought there should be a limit for it. I still believe it's a kind of art to make a pizza that bad. Someone in the kitchen should be proud of himself--besides please note that people can recognize moldy bread. Mixing it with some tomato and veggie doesn't really work. Also they charged $9 for a yellowish water which they called blue moon! I will definitely come back here to be thankful of the all other time that i stayed here and got my food from the company! read more

This is the bar in the Hyatt. It's a nice place if you like open spaces. Dont come to hide in a dark booth, they dont exist at this bar. Curteous staff. Unique and well made drinks. Clear high definition televisions. Definately enjoyable. Very clean as well. read more
